Steps:

  • Bring the salmon to room temperature 10 minutes before cooking.
  • Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more.
  • The skin can be served or removed easily with a knife or spoon.

Juice of 1/2 lemon, plus 1 teaspoon zest
6 tablespoons olive oil
1/2 cup flat-leaf parsley leaves
1/4 cup cilantro leaves
1/4 cup roughly chopped chives
1 garlic clove
1/2 small shallot, roughly chopped (about 1 ounce)
1 tablespoon drained capers
2 teaspoons granulated sugar
Pinch red pepper flakes
Four 6-ounce skin-on salmon fillets
Kosher salt and freshly ground black pepper

Steps:

  • Add the lime juice, lime zest, lemon juice, lemon zest, 3 tablespoons olive oil, parsley, cilantro, chives, garlic, shallot, capers, sugar and red pepper flakes into the jar of a blender. Pulse the ingredients until they are roughly chopped and begin to come together. Scrape down the sides with a spatula and continue to blend until smooth. Set aside until ready to use or transfer to an airtight container and refrigerate for up to a week.
  • Season the salmon fillets all over with 1 teaspoon kosher salt and a generous amount of freshly ground black pepper.
  • Heat the remaining 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the salmon, skin-side up, and cook untouched until the edges crisp and turn golden brown, about 4 minutes. Flip and continue to cook until firm when pressed, about 3 minutes. Transfer to a serving platter and spoon the salsa verde on top. Serve immediately.

1 ounce butter
milk, for mashing
2 shallots
1 cup white wine vinegar
4 teaspoons Dijon mustard

  • First finely chop the shallots and soak in white wine vinegar. Set aside.
  • For, the raita, sprinkle the cucumber lightly with salt and set aside to drain in a colander for 20 minutes.
  • Pat the cucumber dry and mix with the yoghurt and coriander. Season with salt and freshly ground pepper.
  • Cook the potatoes in a saucepan of boiling salted water until tender; drain and mash with butter and milk. Season with salt and freshly ground pepper. Drain the shallots and mix in with the mustard and parsley.
  • Meanwhile, heat 1 tablespoon of olive oil in a heavy-based frying pan. Season the salmon with salt and freshly ground pepper and score the skin, using a sharp knife.
  • Add the salmon skin side-down and fry for 3-4 minutes or until the skin is crispy.
  • Turn the salmon over and cook for a further 1-2 minutes on the other side.
  • Serve the salmon on a bed of shallot mustard mash with the cucumber raita. Drizzle the remaining olive oil over the salmon just before serving.

4 tablespoons butter, divided
2 shallots, thinly sliced
2 cloves garlic, minced
½ cup whole milk
1 ½ teaspoons white pepper
1 teaspoon salt
2 lb yellow potato, peeled, quartered, and boiled until tender
olive oil, to taste
1 cup porcini mushroom, trimmed and quartered
1 bunch asparagus, ends trimmed
salt, to taste
pepper, to taste
2 skin-on salmon fillets

fresh thyme, to taste

2 tablespoons butter, cubed
3 cloves garlic, crushed

Steps:

  • Make the creamy shallot potato puree: Melt 3 tablespoons of butter in a medium pan over medium-high heat. Add the shallots and cook for 3-4 minutes, until softened.
  • Add the garlic and another tablespoon of butter and continue to cook for another 3-4 minutes, stirring frequently, until the shallots are browned.
  • Add the milk, white pepper, and salt and stir to incorporate.
  • Transfer the shallot mixture to a food processor and process until smooth.
  • Mash potatoes in a large bowl. Add the shallot puree and continue to mash until fully incorporated. Set aside.
  • Make the sautéed vegetables: Heat a drizzle of olive oil in a large pan over medium heat. Add the mushrooms and cook for 5 minutes, stirring occasionally, until starting to soften.
  • Push the mushrooms to one side of the pan and add a bit more oil. Add the asparagus and season everything with salt and pepper. Cook for 5 minutes, until the vegetables are tender. Remove from the heat and set aside.
  • Make the salmon: On a cutting board, cut 4 slits in the salmon skin, roughly ¼-inch (6 mm) apart and ½-inch (12 mm) into the salmon flesh. Season with salt, pepper, and thyme leaves.
  • Heat a drizzle of olive oil in a medium pan over medium-high heat. Add the salmon, skin-side down. Cook for 3-4 minutes, or until a lighter pink color has reached ⅓-½ of the way up the side of the salmon.
  • Flip the salmon and immediately add the butter, garlic, and a few sprigs of thyme. Stir the garlic and thyme around the pan to infuse the flavors and spoon the butter over the salmon for 2 minutes more, until the salmon is cooked through. Remove the salmon from the pan.
  • Add the potato puree to plates and top with the sautéed vegetables and salmon.

75 g rocket
100 g baby spinach leaves, lightly rinsed
50 g watercress
16 cherry tomatoes, halved
4 salmon fillets, about 200 g each, trimmed and boned
1 tablespoon olive oil
4 garlic cloves, halved
balsamic vinegar, for drizzling
sea salt & freshly ground black pepper
400 g canned cannellini beans, drained and rinsed
1 garlic clove, crushed
1 1/2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme
2 teaspoons olive oil
sea salt & freshly ground black pepper

Steps:

  • Reserve a few rocket leaves for serving then put the remaining rocket, spinach and watercress in a salad bowl. Add the cherry tomatoes and set aside.
  • To make the cannellini bean purée, put the beans, garlic, lemon juice, thyme, oil and 2 tablespoons of water in a food processor or blender. Season with salt and pepper, to taste, then process to a smooth, soft purée. Add a little more water, if necessary. Transfer to a saucepan and heat gently for about 5 minutes, stirring frequently, until piping hot. Alternatively, put the purée in a microwaveable bowl, cover and cook on high for about 4 minutes, stirring halfway through, until piping hot. Let stand for 1 minute before serving.
  • Meanwhile, to cook the salmon fillets, heat the oil in a non-stick frying pan. Add the garlic and fry gently for 1 minute. Add the salmon and cook for 5-8 minutes, turning once halfway through.
  • Drizzle the salad with a little balsamic vinegar, season to taste with salt and pepper and toss well. Put a spoonful of cannellini bean purée on each of 4 warmed serving plates. Put the reserved rocket leaves on top, followed by the salmon. Drizzle with a little extra virgin olive oil. Serve immediately with the salad.
  • Variation: The bean purée would be delicious with most grilled foods. Try chicken, turkey, large prawns or tuna. Use other beans or a mixture of two or three types and keep the purée slightly chunky, if you prefer.

1/2 cup plain yogurt

1/2 cucumber, thinly sliced (plus a few thin slices for garnish)
1 1/2 cups plain nonfat yogurt
6 green onions, thinly sliced
1 -3 fresh green chili, seeded and finely chopped
2 tablespoons finely chopped fresh cilantro (to garnish)

Steps:

  • Place the cucumber into a sieve and sprinkle with salt and mix well, allow it to set over a sink or other place to drain for half an hour or so.
