GRAPE JELLY

Grape jelly image

This slightly tart, vibrant red jelly makes a lovely change from the usual jams

Provided by Emma Lewis

Time 30m

Yield Makes 600ml

Number Of Ingredients 3

1kg red grapes, preferable with seeds (stripped from the stalks)
450g jam sugar (with added pectin)
juice 1 lemon

Steps:

  • Tip the grapes into a large saucepan set over a low heat, then cover and leave to gently cook for 5 mins until the juices start to run. Take a potato masher or fork and mash up the grapes. Leave to cook for about 10 mins more, mashing every now and again until the grapes are falling apart. Place a clean tea towel or kitchen cloth in a sieve set over a bowl, then pour the grape mixture into this. Let the mixture drip through for at least 1 hr or preferably overnight.
  • Measure out the juice (you should have about 600ml) and pour it into a pan along with the sugar and lemon juice. Set the pan over a high heat and bring to the boil. Skimming any scum as it boils, let the mixture bubble until the temperature reaches 105C on a sugar thermometer. If you don't have one, put a small plate in the freezer for 5 mins, then pour a little of the juice onto the cold saucer. After 1 min, run your finger through; if the jam wrinkles slightly, it's ready. Pour the hot jam into a sterilised jar. Will keep unopened for up to 3 months.

CONCORD GRAPE JAM

Concord Grape Jam image

Categories     Condiment/Spread     Breakfast     Brunch     Dessert     Chill     Vegan     Grape     Gourmet     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 or 7 (1/2-pint) jars

Number Of Ingredients 5

5 lb Concord grapes, stemmed
5 cups sugar
3 tablespoons fresh lemon juice
Special Equipment
7 (1/2-pt) canning jars with lids and screw bands; a boiling-water canner or an 8- to 10-qt deep pot; an instant-read thermometer; a food mill fitted with fine disk

Steps:

  • Sterilize jars:
  • Wash jars, lids, and screw bands in hot, soapy water, then rinse well. Dry screw bands. Put jars on a rack in canner or deep pot and add enough water to cover by 2 inches. Bring to a boil, covered, then boil for 10 minutes. Remove from heat, leaving jars in water. Heat lids in water to cover by 2 inches in a small saucepan until thermometer registers 180°F (do not let boil). Remove from heat, leaving lids in water. Keep the jars and lids submerged in hot water, covered, until ready to use.
  • Cook jam:
  • Chill 2 small plates (for testing jam).
  • Slip skins from grapes and purée skins with 1 cup sugar in a food processor, then transfer to a 4- to 6-quart wide heavy pot. Stir in lemon juice, peeled grapes, and remaining 4 cups sugar and boil over moderate heat, stirring frequently and skimming foam, until pulp is broken down, about 20 minutes. Force jam through food mill set over a large bowl. Discard remaining solids. Return jam to pot and cook at a slow boil, skimming foam occasionally and stirring frequently as mixture thickens to prevent scorching, 35 minutes, then test for doneness.
  • To test jam, remove from heat, then drop a teaspoonful on a chilled plate and chill 1 minute. Tilt plate: Jam should remain in a mound and not run. If jam runs, continue cooking at a slow boil, testing every 5 minutes, until done, up to 25 minutes more.
  • Seal, process, and store jars:
  • Drain jars upside down on a clean kitchen towel 1 minute, then invert. Ladle jam into jars, leaving 1/4 inch of space at top. Wipe off rims of filled jars with a clean damp kitchen towel, then top with lids and firmly screw on screw bands. Put sealed jars on rack in canner or pot and add enough water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. With tongs, transfer jars to a towel-lined surface to cool.
  • Jars will seal; if you hear a ping, it signals that vacuum formed at the top of cooling preserves has made lid concave. Remember that you may or may not be around to hear that ping (some jars make the sound after you remove them from water, and others in same batch may take a few hours); the important thing is for jars to eventually have concave lids. Preserves will thicken as they cool.
  • After jars have cooled 12 to 24 hours, press center of each lid to check that it's concave, then remove screw band and try to lift off lid with your fingertips. If you can't, lid has a good seal. Replace screw band. Put any jars that haven't sealed properly in the refrigerator and use them first.

WINTER SPICE JELLY

Winter spice jelly image

This spiced jam can be stored to eat with meat or cheese or presented as a homemade gift

Provided by Good Food team

Categories     Condiment

Time 2h5m

Yield Makes 2 jars

Number Of Ingredients 11

1kg cooking apple
2 cinnamon sticks
4 star anise
15 cloves
half nutmeg , grated
4 allspice berries
1 blade mace , or ¼ tsp ground mace
4 long pieces orange peel
8 bay leaves
450g jam sugar
100ml cider vinegar

Steps:

  • Wash and cut up the apples into small chunks, leaving the peel and cores in. Tip the apple into a large pan with the spices, orange peel and bay leaves, reserving 2 star anise, 4 cloves and 2 bay leaves for the jars. Cover with 600ml water. Bring to the boil, then turn down the heat and simmer with a lid on for 1 1⁄2 hrs.
  • Pour the apple mixture into a jelly bag or a sieve lined with muslin or a J-cloth, suspended over a large bowl. Leave to drip for 2 hrs (until it stops dripping) or overnight. Do not be tempted to push the liquid though the sieve or your jelly will become cloudy.
  • Measure the juice - you should have about 600ml. Pour the liquid into a large pan along with the jam sugar and vinegar.
  • Set over a low heat to dissolve the sugar, stirring constantly. Once dissolved, turn up the heat and bring to the boil. Boil rapidly for 15 mins, or until setting point is reached, skimming away any scum that rises to the surface.
  • Pour jelly into hot sterilised jars and place a star anise, bay leaf and 2 cloves into each jar. Chill for 3-4 hrs or overnight until set.

SPICED MUSCADINE JAM

Spiced Muscadine Jam image

Apples don't grow well in the south but Spiced Muscadine Jam brings to mind the apple butter I made every fall when I lived in New England. In addition to spreading it on bread try it as a glaze for baked ham or as a condiment with a fried ham slice. Feel free to vary the amounts of the spices to suit your personal tastes. Prep time includes cooking the pulp and hulls. Cooking time does not include processing the jars in the boiling water bath.

Provided by 3KillerBs

Categories     Grapes

Time 3h

Yield 10-12 1/2 pint jars

Number Of Ingredients 6

5 lbs Muscadine grapes
3 lbs sugar
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon clove
1/2-1 cup water

Steps:

  • Prepare grapes by cutting partway through the skin and popping the pulp/seed capsule out of the hull. Put pulp into one pot and the hulls into another.
  • Simmer the pulp, covered, on low-medium until soft enough to press through sieve or food mill ~ 10 minutes. Add just a little water if necessary to prevent sticking.
  • Meanwhile, chop hulls very finely in the food processor and return to their pot. Add just enough water to make it possible to simmer without sticking. Cook slowly, covered, about 10 minutes or until hulls are softened.
  • Press pulp through a sieve or food mill to remove seeds. Stir sieved pulp into cooked hulls.
  • Place grape puree into a large pot and stir in the spices. Bring to a boil.
  • Stir in sugar and return to a boil.
  • Simmer, stirring frequently, until the jellying point is reached, 2-3 hours. Timing is approximate and will vary depending on conditions and the amount of natural pectin in the fruit. Check frequently after the first hour.
  • Pack into hot, sterilized jars and process for 10 minutes in boiling water bath.
