SPICED BLACK BEANS
Really good and spicy bean dish that goes well with grilled beef and pork. Add a few splashes of hot sauce towards the end of cooking time.( Without the bacon, this is very good as a vegetarian dish; OR, an ounce or two of chorizo sausage can be used instead of bacon)

Steps:
- Sauté the bacon until almost crispy, don't drain.
- Add vegetables, spice blend, garlic and bay leaf. Stir and simmer until veggies are tender.
- Add the beans, coffee, rum, curry, lime juice.
- Simmer until hot.
- Add salt and pepper to taste.

- In a medium saucepan, heat olive oil over medium heat. Add minced garlic and red-pepper flakes; cook until fragrant, about 1 minute. Add black beans and 1 cup water.
- Bring to a simmer; cook, covered, stirring occasionally, 15 minutes. Add more water for a thinner consistency, if necessary. Season with coarse salt, and garnish with cilantro leaves, if desired. Serve immediately.

Easy, spicy, and healthy. This will fill you up, and warm you up as well. Serve it with fresh lime wedges for a citrus kick. You could also serve it over brown rice.

- In a 3 quart sauce pan, heat oil over medium heat. Add onion and saute, stirring occasionally until tender. This takes about 5-7 minutes.
- Stir in garlic and spices, cook for about a minute.
- Stir in beans, broth, and can of tomatoes (including liquid from tomatoes). Add a pinch of salt, if you'd like.
- Heat to high heat until soup is boiling. Reduce heat and simmer, uncovered, for about 15 minutes.
- Spoon about 1/3 of mixture into a blender or food processor and pulse until smooth. You can do more or less, depending on how thick you want the soup or how many whole beans you want in it. Combine pureed mixture with rest of soup and serve with lime wedges.

SPICY BLACK BEAN TACOS
These vegetarian bean tacos, lightly spiced with cumin and smoked paprika, are topped with fresh guacamole and a pomegranate salsa.

- In a large frying pan, heat the oil and add the garlic. Fry until golden, then add the beans. Pour in the cider vinegar, honey and spices along with 1 tsp or more of salt, to taste. Cook until warmed through, crushing gently with the back of your wooden spoon, then set aside.
- The best way to make the guacamole is with a large stone pestle and mortar, but you can use a medium bowl and a flat-ended rolling pin instead. Crush the garlic, coriander and chilli into a rough paste. Scoop in the avocado with a little salt and crush roughly - you want it chunky, not smooth. Squeeze in the lime juice and set aside.
- Mix the salsa ingredients in a small bowl. Heat a griddle pan or steamer and quickly griddle the tortillas or steam a stack of them to warm up. Reheat the bean mixture.
- To serve, put 1-2 heaped tbsp of beans on a tortilla. Top with a big spoonful of guacamole and some salsa, hot sauce and a dollop of soured cream or yogurt.

- Heat olive oil over medium heat in a skillet; add onions and cook and stir until they begin to brown, about 5 minutes. Raise the heat to medium-high and add bell pepper, serrano pepper, garlic, ground cumin, ground turmeric, and cayenne pepper to onion, cook and stir until fragrant, about 1 minute.
- Mix diced tomatoes, black beans, tomato sauce, green onion, lime juice, salt, and brown sugar into onion mixture; bring to a boil, reduce heat to low and simmer until flavors combine, about 30 minutes.

- Heat the oil in a medium saucepan over medium heat. Add the garlic, onions, jalapenos and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 6 minutes. Add the cumin and coriander and cook, stirring, until fragrant, about 1 minute. Add the chicken broth and black beans with their liquid. Increase the heat to medium high and bring to a boil. Reduce the heat to low and simmer, covered, for 10 minutes. Transfer about three-quarters of the soup to a blender and blend until smooth (be careful when blending hot liquids). Return the soup to the saucepan and season with salt. Serve topped with cilantro and sour cream.
