½ cup margarine
⅔ cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground allspice
2 teaspoons baking powder
½ teaspoon baking soda
1 cup applesauce

Steps:

  • Preheat oven to 350 degree F (175 degrees C). Line a mini muffin pan with paper liners.
  • In a large bowl, cream together the butter or margarine and sugar. Add eggs, and beat until smooth. Blend in cinnamon, allspice, baking powder, and baking soda. Alternately add in a half cup of applesauce, one cup of flour, remaining applesauce, and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3's of the way full.
  • Bake in preheated 350 degree F (175 degrees C) oven for 17 minutes.

1 ¾ cups white whole-wheat flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon baking soda

¼ teaspoon ground cloves
⅓ cup granulated sugar
8 tablespoons unsalted butter (1 stick), melted and at room temperature
½ cup crème fraîche, at room temperature
½ cup reduced-fat milk, at room temperature
2 large eggs
1 tablespoon vanilla extract
¾ cup dried cranberries or raisins, divided
3 ½ cups finely chopped peeled Granny Smith apples (2-3 large)
1 cup rolled oats
¾ cup rolled oats
½ cup white whole-wheat flour
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
4 tablespoons unsalted butter (1/2 stick), melted
3 tablespoons honey
2 teaspoons vanilla extract

Steps:

  • Position racks in upper and lower thirds of oven; preheat to 350 degrees F. Line 20 muffin cups with paper liners.
  • To prepare batter: Sift 1 3/4 cups flour, baking powder, 2 teaspoons cinnamon, ginger, baking soda, 1/2 teaspoon salt and cloves into a mixing bowl. Add sugar and 8 tablespoons butter and stir to combine. Add crème fraîche, milk, eggs and 1 tablespoon vanilla; beat on low speed for 10 to 15 seconds. Increase speed to medium-high and beat until light and fluffy, about 20 seconds.
  • Chop about half the cranberries (or raisins) into small pieces. Fold all the cranberries (or raisins), apples and 1 cup oats into the batter. Divide the batter among the prepared muffin cups.
  • To prepare topping: Mix oats, flour, cinnamon and salt in a medium bowl. Whisk butter, honey and vanilla in a small bowl; drizzle on top of the oat mixture and mix until well incorporated. Top each muffin with some of the crumb topping.
  • Bake on the upper and lower racks, rotating top to bottom halfway through, until lightly golden and firm to the touch, 30 to 35 minutes. Let cool in the tins on a wire rack for at least 30 minutes before serving.

1 to 2 tablespoons regular sugar

Steps:

  • Preheat the oven to 400 degrees. Line 12 muffin tins (2 1/2 inch round) with paper liners. Sift sugar, baking powder, baking soda, salt and cinnamon together. Add flour and sift again. In a bowl combine egg, melted butter and buttermilk. Stir the wet ingredients into dry ones and mix just to combine don't overbeat. Add apples and pecans. Spoon batter into muffin tins to the top. Sprinkle with granulated sugar and bake 25 minutes. Transfer to a rack to cool.

1 cup light brown sugar (can use more)
1/2 cup butter (butter is better!) or 1/2 cup margarine, melted (butter is better!)
1 1/4 cups unsweetened applesauce
1 1/4 cups chopped nuts
6 -7 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter 12 muffin tins or line with paper liners.
  • For muffins: in a small bowl mix together first 7 dry ingredients.
  • In another large bowl whisk together eggs and brown sugar until well combined.
  • Add in melted butter whisking continuously until mixture is creamy.
  • Stir in applesauce.
  • Fold in flour mixture until JUST combined.
  • Stir in nuts.
  • Divide the batter evenly between muffin tins.
  • To make the topping: stir together all ingredients then sprinkle over tops of muffin batter.

1 cup granola without raisins
2/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt

2/3 cup unsweetened apple juice
1/4 cup canola oil
1-1/2 cups grated peeled apples

Steps:

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk the eggs, apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples., Fill 12 greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in tightly sealed freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

100ml rapeseed oil
100ml natural yogurt
50ml runny honey
2 eggs
1 tsp vanilla extract
200g self-raising flour
1 tsp bicarbonate of soda
1½ tsp ground mixed spice
1 apple , grated
1 carrot , grated
50g sultanas , raisins, chopped nuts or seeds (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a muffin tin with nine cases (alternatively, use squares of baking parchment). Mix the oil, yogurt, honey, eggs and vanilla in a jug. In a bowl, combine the flour, bicarb, mixed spice and ¼ tsp salt. Pour the yogurt mixture into the flour mixture and add the apple and carrot, as well as any extra ingredients you're using. Mix with a spatula until well combined, then spoon the mixture into the muffin cases.
  • Bake for 20-22 mins, or until a skewer inserted into the middle of a muffin comes out clean. Leave to cool for at least 5 mins. Can be stored in a tin for three days or frozen for two months; defrost overnight before serving.

75 g butter
1 egg
1 cup apple, raw chopped or grated
3/4-1 cup milk

Steps:

  • Place all the dry ingredients into a large bowl and mix well with your fingers to make sure the rolled oats and brown sugar are evenly mixed through the other ingredients.
  • 75g butter 1 egg 1 cup raw chopped, or grated apple 3/4 - 1 cup milk Melt the butter until liquid than add the egg and 3/4 cup milk, and beat with a fork until mixed.
  • Next grate or chop the apple in a food processor.
  • Press into the cup, removing air bubbles, then stir into the liquids.
  • (Work quickly to prevent the apple from browning.) Add the apple and liquid mixture to the dry ingredients and mix lightly to dampen the ingredients, adding as much of the extra milk as you need.
  • Coat 12 medium-sized muffin pans with non-stick spray and divide the mixture between them.
  • Bake at 200 C for 12 - 15 minutes or until the muffins spring back when pressed.
  • Leave for 3 - 4 minutes before removing from the pans and cooling on a wire rack.

100g golden caster sugar

125ml semi-skimmed milk

  • Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.
