CHICKEN WITH SUN-DRIED TOMATOES, FETA AND SPINACH IN PHYLLO CUPS

1/2 stick butter, melted
3 sheets phyllo pastry dough, found in the freezer section
Coarse salt and black pepper
2 tablespoons extra-virgin olive oil
1 1/2 thin cut boneless skinless chicken breast, sliced into thin strips on an angle
3 cloves garlic, chopped
1 small yellow skinned onion, chopped
1/2 cup sun-dried tomatoes in oil, drained, 10 to 12 pieces, chopped
2 boxes chopped spinach, defrosted and squeezed dry
3/4 pound, 12 ounces, feta cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F.
  • Brush 6 or 12-cup muffin tins with butter using pastry brush. Brush a layer of phyllo dough with butter, top with a second sheet of pastry, butter, then season the phyllo with salt and pepper and then top with a third sheet. Cut into 6 or 12 squares and arrange the phyllo in cups, allowing the dough to crumple and spill out of the tops of the tins. Brush the inside of the pastry cups with remaining butter. Bake until golden, 5 to 8 minutes. Cool.
  • To a skillet preheated over medium high heat add chicken, garlic and onions and season with salt and pepper. Saute 5 minutes, add the sun-dried tomatoes and spinach and cook another 3 to 5 minutes. Add feta and taste to adjust seasonings.
  • To serve, place phyllo cups on a serving platter and fill with mounds of chicken, sun- dried tomatoes and spinach mixture. A hearty vegetable and olive salad makes a perfect starter or side to this delicious, quick cross between chicken pot pies and spanakopita.

4 small chicken breasts, or 2 large chicken breasts, halved
1 tablespoon butter
Italian Dressing mix (half the packet)
1 tablespoon vegetable oil
6 ounces fresh baby spinach
4 garlic cloves, minced
2/3 cup half and half
2/3 cup mozzarella cheese, shredded
1/8 teaspoon salt
1/4 cup sun-dried tomatoes, drained of oil, chopped into smaller bites
4 slices bacon, cooked
4 slices of pepper jack cheese (Monterey cheese with jalapenos)

Steps:

  • Preheat the oven to 375 F. Use 4 small chicken breasts or 2 large chicken breast, sliced horizontally in half. Butter the bottom of the baking dish. Season chicken breasts from both sides with the Italian salad dressing mix. Place the chicken breasts, flat side down, into the greased baking dish and bake for 15-20 minutes at 375 F. In the mean time, make the creamed spinach. Heat 1 tablespoon vegetable oil in a large skillet on medium heat. Add spinach and cook for only 1 or 2 minutes until it is heated through and starts to wilt. Remove from heat. Add minced garlic and half and half. Bring to boil. Add shredded mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt - about 30 seconds. Reduce heat to simmer and keep stirring until you have a nice, smooth creamed spinach - about 30 seconds or 1 more minutes. The creamed spinach should be pretty thick in texture, not watery. If watery, bring to boil again and cook off extra liquid, constantly stirring. Season with salt. Remove from heat. Remove the baking pan with chicken breasts from the oven (you baked them for 15-20 minutes). Top each chicken breast with creamed spinach, sun-dried tomatoes (drained from oil and chopped into smaller bites), chopped cooked bacon, and broken slices of pepper jack cheese. Bake in the oven, uncovered for 15-20 more minutes, until the chicken is completely cooked through, no longer pink in the center, and the juices run clear. Your chicken dinner is ready to serve!

This recipe came about because of my love for cheese. I am always searching out a new cheese and what it is best paired with. Fontina cheese can be nutty and fruity but it depends on where it is made.

2 medium sized chicken breasts
1/2 cup medium sliced Fontina cheese
1/4 cup roasted julienne cut sun-dried tomato
10 leaves Baby Spinach
2 tablespoons olive oil, separated
1 teaspoon garlic powder
1 teaspoon basil
1 teaspoon oregano
1 teaspoon ground sea salt
1 tablespoon grated parmesan cheese

Steps:

  • Rinse the chicken breast and pat dry with a paper towel.
  • Cut a slit along one side of the chicken breast with a sharp non-serrated knife being careful not to cut all the way through. Keep the cut as center as possible. Set chicken in the refrigerator.
  • Heat 1 tablespoons olive oil in a deep skillet over medium heat and saute the sun dried tomatoes for 2 minutes. Then add the spinach and saute for 1 minute stirring continuously so the spinach doesn't burn. Remove onto plate and let cool.
  • Using your fingers stuff the chicken with the Fontina cheese then the sun dried tomato and spinach saute.
  • Heat 1 tablespoons olive oil in the same deep skillet over medium heat.
  • Coat both sides of the chicken breasts with the herb blend and set breasts in skillet. Cover.
  • Cook on each side for 8-12 minutes, covering throughout. Adjust time according to thickens of chicken and type of cooking range.

4 large boneless skinless chicken breasts
1 (250 g) package light cream cheese
1 (105 ml) jar sun-dried tomatoes packed in oil
1 bunch green onion
2 (16 ounce) packages reduced-sodium bacon

Steps:

  • Wash the chicken without drying and pound flat.
  • Chop the sun dried tomatoes (removed from oil) and green onions, then mix by hand with cream cheese in a bowl.
  • Put enough of the cheese mixture inside the chicken so that it is full but can still be rolled closed.
  • Roll the chicken, and then wrap slices of bacon around the chicken making sure the stuffed chicken is completely covered. Secure the bacon with toothpicks.
  • Place on wire rack in baking pan.
  • Bake at 350 until bacon is crisp, approximately 30-40 minutes.

1/4 cup sun-dried tomato
2 tablespoons pine nuts, slightly toasted
1 cup frozen spinach, chopped
1/2 cup Fontina cheese, shredded
2 cups breadcrumbs
1 tablespoon butter, melted
1 tablespoon flat leaf parsley, chopped
4 boneless chicken breasts, with skin-on
salt, to taste
ground black pepper, to taste

Steps:

  • Pre-heat oven to 400°F.
  • COMBINE stuffing ingredients together in a bowl. Set aside.
  • PLACE chicken breasts on a cutting board and cover with plastic wrap. With a mallet or the palm of your hand, slightly flatten out breasts.
  • SHAPE handful of stuffing into a ball and place in center of each chicken breast.
  • WRAP breast around the stuffing, starting with one side. Roll the breast, tucking the opposite side underneath. Season top of chicken breast (skin side) with salt and pepper.
  • ROAST in oven for 30-40 minutes or until chicken is fully cooked and juices run clear. Serve immediately.

2 lbs boneless chicken breasts
6 garlic cloves, minced
2 tablespoons olive oil
1 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
1/2 cup pecorino romano cheese
8 ounces sliced mushrooms
1 cup sun-dried tomato packed in oil
1 (6 ounce) bag of fresh Baby Spinach (or 10 ounce frozen spinach)
4 slices , extra crispy bacon crumbled up

Steps:

  • Preheat oven to 350.
  • Cook spinach on stove top with olive oil and minced garlic.
  • Add sun dried to spinach and saute together about 2 minutes.
  • Add mushrooms and bacon to sun dried tomatoes and spinach mixture and mix together.
  • Roll out chicken cutlets and spread mixture on and roll up and put toothpick in to hold together.
  • Mix breadcrumbs with grated cheese and roll chicken in breadcrumb mixture.

4 boneless skinless chicken breast halves (1 1/2 lb total)
1 tablespoon olive oil
4 garlic cloves, minced
1/4 cup drained sun-dried tomato packed in oil, patted dry and coarsely chopped (1/2 oz)
3/4 teaspoon hot red pepper flakes
1/4 cup dry white wine
3/4 cup chicken broth
1/4 cup heavy cream
1/4 cup thinly sliced fresh basil

Steps:

  • Pat chicken dry and season with salt and black pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, turning once, about 6 minutes total.
  • (Chicken will not be cooked through.) Transfer with tongs to a plate.
  • Add garlic, tomatoes, and red pepper flakes to skillet and sauté, stirring, until garlic is pale golden, about 1 minute.

2 tablespoons oil
1 onion, finely chopped
1 garlic clove
400 g bacon, diced
1/2 cup white wine
1 cup cream (I use light)
1 (300 g) box frozen spinach, thawed
cracked black pepper
1/2 cup sun-dried tomato, drained and chopped
1/2 cup grated parmesan cheese
2 tablespoons toasted pine nuts (shake them in a dry pan over high heat until golden-remove to a plate to cool)

Steps:

  • Heat the oil in a large frypan and fry the onion, garlic and bacon over medium heat for about 10 minutes.
  • Add the white wine, cream, spinach and black pepper and bring to a gentle boil; reduce the heat and cook for a couple of minutes.
  • Add the sundried tomatoes and parmesan cheese, stir through and serve with the cooked pasta of your choice, with the toasted pinenuts over the top.
  • Serve with extra parmesan if you wish.

3/4 cup chicken stock
3/4 cup white wine
3/4 cup sun-dried tomato (not packed in oil)
1/2-3/4 cup mayonnaise
2 shallots, peeled & finely chopped
1/2 cup asiago cheese, shredded
1/3 cup pine nuts
salt & pepper
6 -8 ounces fresh spinach leaves

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken in shallow baking dish, add chicken stock & white wine.
  • Bake uncovered in preheated oven for 10 minutes.
  • Add sun dried tomatoes to dish (sprinkle them around the chicken so they are soaking in the wine & broth.
  • Return to oven & bake uncovered for an additional 10-20 minutes or until juices run clear.
  • When chicken is fully cooked, remove to plate or cutting board & shred using two forks.
  • Set chicken aside & chop softened tomatoes into 1/2 inch pieces.
  • In medium bowl stir together mayonnaise, chopped tomatoes, salt & pepper, pine nuts, shallots & asiago cheese.
  • Serve on a bed of fresh spinach leaves or sandwich chicken salad mixture & spinach between two slices of fresh bread.
