SPICE-RUBBED STEAK WITH QUICK GARLIC FRIES

About 3 cups vegetable oil
2 (1 1/4-inch-thick) boneless top loin (New York strip) steaks (about 1 lb each)
3 1/8 teaspoons spice rub for beef
1 (1-lb) package frozen french fries
2 large garlic cloves, thinly sliced lengthwise
Special Equipment
a deep-fat thermometer

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Heat 1 inch oil in a 4- to 5-quart heavy pot over high heat until it registers 375°F on thermometer.
  • While oil heats, pat steaks dry, then rub all over with spice rub (and salt if necessary). Heat 1 tablespoon oil in a 12-inch ovenproof heavy skillet over moderately high heat until hot but not smoking, then sear steaks, turning over once with tongs, until well browned, about 5 minutes total. Transfer skillet to oven and roast 10 minutes for medium-rare.
  • Check oil while searing steaks, and when it registers 375°F, begin frying french fries in 2 batches (add fries carefully; they may have ice crystals, which could cause spattering), stirring occasionally, until golden and crisp, 4 to 5 minutes per batch. Transfer fries with a slotted spoon to paper towels to drain and season with salt and pepper while hot. Return oil to 375°F between batches.
  • Turn off heat under pot, then add garlic and fry until pale golden, 30 seconds to 1 minute, and transfer with slotted spoon to paper towels. Toss fries with garlic in a large bowl.
  • Transfer steak to a cutting board and let stand 5 minutes. Slice steak and serve with fries.

CHARRED GARLIC RUBBED RIB STEAK

Coarse salt taste
4 tablespoons coarsely ground black pepper
4 tablespoons dry thyme
4 tablespoons chopped garlic
4 (10 to 12-ounce) rib steaks on the bone

Steps:

  • Combine the oil, salt, pepper, dry thyme and garlic in a small bowl. Using this dry rub to season the beef, brush or rub the steaks with this seasoning mix and let marinate at room temperature for 20 minutes.
  • Over a hot barbecue grill, or under an oven broiler that has been preheated for at least 20 minutes, cook the steaks on both sides to the desired doneness. Generally, a steak of this size, cooked over a barbecue grill, will be mediumrare within about 8 to 10 minutes (4 minutes on each side) with a blackened exterior and a warm pink interior. Check for doneness by pressing gently with a cautious finger.

1 (2 pound) flat iron steak
¼ cup vegetable oil

Steps:

  • Mix the brown sugar, garlic powder, onion powder, chili powder, ancho chile powder, chipotle chile powder, salt-free seasoning blend, salt, and pepper together in a bowl until thoroughly blended. Sprinkle over both sides of the steak, and rub into the meat. Cover, and refrigerate at least 30 minutes, or up to 2 days.
  • Before cooking, drizzle steak with vegetable oil, and rub the oil into the meat. Cook as desired.

1 lb flank steak
salt, to taste
pepper, to taste
1 teaspoon garlic powder, to taste
onion powder, to taste
cayenne pepper, to taste
oil, your preference
5 cups mixed greens
1 cup cherry tomatoes
2 avocados, diced
1 cup carrot, shredded
½ red onion, sliced
2 tablespoons mustard
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • Season both sides of the flank steak generously with salt, pepper, garlic powder, onion powder, and cayenne. Massage the spices into the steak well.
  • In an oiled skillet, cook steak for 2-3 minutes on both sides (depending on desired doneness), flipping once.
  • Remove steak from skillet and allow to rest on a cutting board for 10 minutes. Allowing the steak to rest before cutting it allows the juices to resettle.
  • While the steak rests, combine the mustard, honey, lemon juice, olive oil, salt, and pepper in a small bowl. Whisk to combine. Set aside.
  • Cut the steak against the grain.
  • Assemble the salad with mixed greens, cherry tomatoes, avocados, shredded carrots, and red onion. Top with cut steak.
  • Serve with dressing.

Steps:

  • Mince garlic and mash to a paste with kosher salt. Stir together spices in a bowl, then stir in garlic and oil until a paste forms. Pat steak dry, then rub all over with paste. Marinate steak in a sealed large plastic bag, chilled, at least 6 hours.
  • Bring steak to room temperature, about 30 minutes.
  • While steak comes to room temperature, prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Steps:

  • To prepare steak, trim fat from steak. Place bourbon and soy sauce in a large zip-top plastic bag. Add steak; seal and marinate in refrigerator 24 hours, turning occasionally.
  • To prepare horseradish cream, combine yogurt, horseradish, mustard, and garlic in a small bowl. Cover and chill.
  • To prepare rub, combine sugar and next 5 ingredients (sugar through salt). Remove the steak from bag; discard marinade. Rub sugar mixture over steak and chill for 30 minutes.
