I love bacon-wrapped recipes, and these sweet-smoky snacks are easy to make and fun to eat, so be prepared with an extra batch. For a change, sprinkle them with a bit of blue cheese or toasted almonds. -Tammie Floyd, Plano, Texas

8 maple-flavored bacon strips
1 package (6 ounces) dried apricots
1/2 cup honey barbecue sauce
1 tablespoon honey
1-1/2 teaspoons prepared mustard

Steps:

  • Cut bacon strips widthwise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain. , Wrap a bacon piece around each apricot; secure with a toothpick. Place in an ungreased 15x10x1-in. baking pan., Bake at 350° until bacon is crisp, 18-22 minutes. Meanwhile, in a small bowl, combine the barbecue sauce, honey and mustard. Serve with warm apricot bites.

1/2 cup chopped pecans
4 cups shredded sharp cheddar cheese
2 cups mayonnaise
1 small onion, chopped
2 tablespoons finely chopped sweet red pepper
1/8 teaspoon cayenne pepper
Assorted crackers

Steps:

  • Cook bacon until crisp; drain. Meanwhile, in a large bowl, combine the next 6 ingredients. Stir in bacon. Serve with crackers.

In food processor or blender, process bean mixture with parsley until smooth. Season, if desired, with salt and freshly ground black pepper. 1 tablespoon butter
1/2 cup finely chopped onion
3 tablespoons apricot preserves
1 tube (8 ounces) refrigerated crescent rolls
1 package (2.1 ounces) ready-to-serve fully cooked bacon

Steps:

  • Preheat oven to 375°. In a small skillet, heat butter over medium heat. Add onion; cook and stir until tender, 3-5 minutes. Reduce heat to low; add preserves. Cook and stir until melted., Unroll crescent dough into one long rectangle. Roll into a 15x9-in. rectangle, sealing seams and perforations. Cut crosswise into fifteen 1-in. strips; top each with one piece of bacon. Roll up jelly-roll style, starting with a short side; pinch seam to seal. 2 lbs smoked bacon, diced
1 medium yellow onion, diced
1/4 cup balsamic vinegar
1 teaspoon fresh ground black pepper
1/2 teaspoon coarse sea salt

Steps:

  • Brown bacon in a large skillet over medium low heat.
  • Stirring often, render out 1 tbsp fat.
  • Set aside large skillet.
  • Place the 1 tbsp bacon fat into a medium skillet.
  • Add onions and saute over medium heat for 5 minutes.
  • Add cinegar, sugar pepper and salt.
  • Cook and stir for 10 minutes.
  • Place cooked onion mixture into the bacon in the large skillet.
  • Cook bacon over low heat for 3 hours, stirring occasionally, until most liquid is absorbed.
  • Remove from heat, puree, let cool
  • Keep refrigerated for up to 3 weeks.
  • Makes 2 cups.
