Steps:

  • Heat a large skillet. Add oil.
  • Sauté garlic 1 minute.
  • Add all the spinach
  • Lower heat to med and cover.
  • Cook just long enough to wilt spinach (about 3 minutes).
  • Add beans & stock and heat through.
  • Serve.

1 small yellow onion, diced (about 1 cup)
1 tablespoon minced garlic (2 cloves)
2 fifteen-and-a-half-ounce cans white beans, drained and rinsed
6 cups (about 8 ounces) spinach, stems trimmed
4 teaspoons white-wine vinegar
2 teaspoons fresh thyme leaves, plus sprigs for garnish
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat a large saute pan over medium heat, and add olive oil. Add diced onion, and cook until translucent, about 2 minutes.
  • Add garlic, and cook 1 minute. Add beans, and cook until hot and slightly softened, about 3 minutes. Add the spinach and vinegar, stirring frequently until spinach is wilted, about 3 minutes. Add the thyme, and season with the salt and pepper. Serve.

1 Spanish chorizo sausage (about 1/2 pound)
4 to 5 tablespoons extra-virgin Spanish olive oil
2 (15-ounce) cans white beans (drained)
Salt to taste

Steps:

  • Chop the onion and the bell pepper. Peel and chop the garlic, but not too finely. Cut the chorizo into slices about 1/4-inch thick.
  • Pour the olive oil into a large frying pan and heat over medium heat. When hot, sauté onion and bell pepper, stirring often. Take care not to burn the vegetables-if necessary, lower the heat. When the onion becomes translucent, add the garlic and chorizo slices. Continue to cook until chorizo slices are browned. Add more olive oil if mixture begins to stick. Reduce heat to low.
  • Quickly rinse the beans under cold water and drain. Add to the frying pan and stir, heating the mixture on low heat. Add salt to taste. Once the beans are hot, serve in bowls with slices of fresh baguette.

The first time I had this was at Houlihans. They have since discontinued the dinner, so I was in search of a great recipe. I found this on epicurious.com by doing a google search. I love this recipe and would recommend to anyone who loves an elegant tilapia dish. It's easy and impressive. This recipe can be easily doubled for a dinner party. I like to serve with crusty Italian bread and sometimes I'll serve it with rice on the side, too.

4 tilapia fillets
4 garlic cloves, sliced
1/4 cup unsalted butter (I use smart balance)
1/4 cup white wine
1/2 cup chicken broth
2 lemons, juiced (more for plating)
1 (15 ounce) can white beans
10 ounces spinach (I like to use baby spinach)
salt and pepper
flour for dusting fish

Steps:

  • Preheat oven to 425 degrees F.
  • Pat fish dry, season with salt and pepper, then dust with flour. Saute fillets in olive oil for one minute on each side. Set aside in baking dish.
  • Add butter to pan and melt, then saute garlic. Add chicken stock and wine, and bring to a boil. Once boiling, add lemon juice and white beans. Stir.
  • Top fish with white bean mixture and bake for 10-12 minutes.
  • While fish and beans are baking, saute spinach in same pan until wilted.
  • Plate fish on spinach and serve with lemon slices.

2 cans/jars of large white beans (alubias extras)
1 can diced tomatoes (or a freshly diced medium tomato)
1 spoonful of tomato paste
3 cups chicken stock
1 carrot (thick dice)
3 cloves of garlic (diced)
1 tablespoon butter
2 tablespoons extra virgin olive oil
1/4 cup white wine
1 yellow onion (diced)
4 links of fresh chorizo (or other Spanish sausage, cut into chunks)
1 piece about 2 inches of semi-cured chorizo
4-6 cups of washed fresh spinach
1 teaspoon ground cayenne pepper
1 teaspoon thyme
1 teaspoon oregano

Steps:

  • Rinse and drain the beans and set aside.
  • Warm the butter and oil over a medium heat and add the onions.
  • Sauté the onion for about 10 minutes, until just browning.
  • Add the diced garlic and sauté another minute.
  • Add the fresh chorizo and let the chunks brown on each side.
  • Add the carrot, herbs, semi cured chorizo, and cayenne pepper and mix.
  • Add the white wine and allow to reduce for one minute.
  • Add the tomato paste followed by the chopped tomatoes and simmer two minutes.
  • Add the 3 cups of chicken stock and bring to a simmer.
  • Allow to simmer 15 minutes uncovered.
  • Add in the fresh spinach and beans and cover for 10 minutes.

A Spanish style espinacas con garbanzos recipe (spinach and chickpea stew) that will have you craving another bite!

1 jar garbanzo beans (chickpeas)
10 ounces fresh spinach (washed. (One large bag or around 300 grams/10 ounces).)
2 thick slices of day old bread (sourdough works well with crusts removed and cut into cubes)
15 blanched unsalted Marcona almonds
1/4 cup tomato sauce ((60ml))
3 garlic cloves (chopped)
Extra virgin olive oil
2 tbsp Sherry vinegar (or red wine vinegar if sherry vinegar is hard to come by)
1 tsp ground cumin
Ground cayenne pepper (to taste)
1 tsp Salt ((more to taste))
Black pepper (to taste)
1 tsp Smoked Spanish paprika (I use pimentón dulce, but you could also use pimentón picante)

Steps:

  • Coat a large saucepan with extra virgin olive oil (approx. 2 tbsp) and heat to medium high
  • Before the oil gets too hot, add the spinach (in batches if necessary)
  • Sauté the spinach until just wilted and remove to strain in a colander
  • Re-coat the pan with olive oil and add in the bread cubes and raw almonds. Fry until the bread and almonds are browned and crispy on each side
  • Add the chopped garlic, cumin, cayenne and black pepper and sauté for a couple of minutes, until the garlic is fragrant and turning brown
  • Transfer the ingredients to a blender/food processor and add the sherry vinegar
  • Blend the ingredients together until you have a thick paste (you can add a few tablespoons of water if needed to blend easier, but don't over blend and make it gooey)
  • Return the paste to the saucepan and add your garbanzo beans and tomato sauce
  • Stir gently until the chickpeas are fully coated by the sauce and add a bit of water to thin things out
  • Add the spinach and stir gently until it is evenly incorporated and hot
  • Season with salt and pepper
  • Once plated, drizzle a swirl of extra virgin olive oil on top of each dish, then sprinkle a small amount of smoked Spanish paprika on top
  • Enjoy!

-2 tbsp extra virgin Spanish olive oil
-4 cloves of garlic
-1/2 onion
-1/4 tsp smoked paprika
-1/4 tsp dried cumin
-1/2 cup tomato puree
-2 cups tightly packed bagged spinach
-1 cup jarred chickpeas
-sea salt
-black pepper

Steps:

  • Rinse 1 cup of jarred chickpeas under cold running water, shake off any excess water and set aside, reserve 2 cups of tightly packed bagged spinach, reserve 1/2 cup of canned tomato puree, thinly slice 4 cloves of garlic and finely dice 1/2 of an onion
  • Heat a medium sized non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, 2 minutes after adding the oil add the sliced garlic and diced onions and mix with the oil, about 4 minutes later and the onions and garlic have developed a light golden color season with a generous 1/4 teapsoon of cumin, a generous 1/4 teaspoon of smoked paprika and mix everything together, then add the 1/2 cup of tomato puree, season with sea salt, freshly cracked black pepper and a pinch of white sugar and mix everything together, about 2 minutes later add the 2 cups of tightly packed bagged spinach, place a lid on the pan and lower the fire to a LOW heat
  • Two minutes after adding the lid to the pan remove it, then add the 1 cup of chickpeas, season again with sea salt and freshly cracked black pepper and mix everything together until well combined, cook for about 4 minutes and then transfer the mixture into a shallow bowl
  • Enjoy!
