SPANISH BEANS WITH TOMATOES AND ONIONS

Steps:
- Finely dice 1/2 of a green bell pepper, thinly slice 4 cloves of garlic, finely dice 1 onion and reserve 2 cups of cooked lima beans
- Heat a non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, after 2 minutes add the sliced garlic and diced onions and mix with the oil, after 3 minutes add the diced green bell pepper and mix with the garlic and onions, after 4 minutes add the 2 cups of cooked lima beans, season with a 1/4 teaspoon of hot smoked paprika, a 1/4 teaspoon of sweet smoked paprika, a 1/2 teaspoon of cumin powder, a pinch of sea salt and some freshly cracked black pepper, mix everything together until well combined
- Next add 1 can of diced tomatoes, season again with sea salt and freshly cracked black pepper, lower the fire to a LOW heat and mix together, let it simmer for 4 to 5 minutes, then remove from the heat and garnish with freshly chopped chives, enjoy!

- Bring water, rice, and olive oil to a boil in a saucepan over high heat. Mix in onion, sazon seasoning, adobo seasoning, garlic, and black pepper. Reduce heat to medium-low; cover and cook for 10 minutes. Add beans and olives and cook until liquid has been absorbed, about 10 minutes. Mix before serving.

Steps:
- Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
- Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

Steps:
- In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
- In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
- Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
- Season with salt and pepper. Serve warm.

- Cook green beans (you can steam the fresh ones about 15-18 minutes; or fix frozen according to pkg directions, or heat canned).
- Saute onion in bacon fat or butter/margarine until tender and starting to turn brown.
- Mix cornstarch, salt, mustard, brown sugar, and vinegar together with 1/2 cup of the water from the green beans.
- Add this to the onions in the pan and cook, stirring, until slightly thickened.
- Drain the cooked green beans and mix into the thickened onions; adjust salt and pepper and stir, coating green beans and cooking until reheated if necessary.
- Top with crumbled bacon and serve.

Steps:
- Use a Teflon coated 8" frying pan. Spray cooking spray in the pan and put on medium heat on stove.
- While pan heats up, cut up the raw bacon in ½" pieces and put it in the pan.
- Turn the bacon in the pan or stir until its crispy. Lower heat if the pans starts to smoke or it appears that the bacon is cooking too fast and burns. Do not drain fat.
- Add onions and fresh garlic and stir until they appear translucent (transparente). This should only take about 2-3 minutes. Do not let garlic burn it will taste AWFUL! If you use garlic powder add it together with the tomatoes.
- Add the tomatoes and stir altogether until all is heated.
- Add green beans from both cans with liquid from one can only. Stir altogether.
- When it starts to bubble or heat up, cover pan and turn heat to low to simmer for about 10 minutes.
- ENJOY!

- For OAMC (Once A Month Cooking preparation), combine everything in bowl, then place in freezer bag.
- Place optional cheese in a smaller bag and insert in freezer bag.
- Squeeze out as much air as possible before sealing.
- Freeze until needed.
- When ready to serve, heat skillet to medium-high and saute with 2 T water for about 8-10 min until beans are are brightly colored and tender.
- Transfer to platter, sprinkle with cheese if desired.

- Roast on baking sheet 475F until browned, about 10 minutes; add cheese if desired.

SPANISH STYLE SEASONED GREEN BEANS

- In a saucepan over medium-low heat, combine tomatoes, onion, green pepper, salt, Worcestershire sauce, sugar, chili powder, pepper, and bay leaf. Bring to a boil Reduce heat to a simmer. Simmer for 15 minutes. Remove bay leaf. In a small saucepan over medium-low heat, melt butter; stir in flour until smooth and bubbly. Gradually stir in tomato mixture. Add cooked green beans. Heat through.
SOUTHERN STYLE SEASONED GREEN BEANS (FROM CANNED)
A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

- Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
- Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
- Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
- Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
- Serve and enjoy.
- NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.
PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

- Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
- Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
- Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.
