HEARTY SPANISH RICE BAKE

Hearty Spanish Rice Bake image

Ground beef, fresh onion, green bell pepper, garlic, tomatoes, and rice are simmered in a sweet-hot sauce then baked with Cheddar cheese and garnished with fresh cilantro. Spice it up with Ro-Tel® instead of regular canned tomatoes, cayenne, and jalapeno peppers. I have also added extra Cheddar cheese and you can substitute a Mexican blend or any other cheese if you like. Warning: this will spice up your life if you use the optional ingredients.

SPANISH BEEF AND RICE CASSEROLE

Spanish Beef and Rice Casserole image

I got this recipe out of an Uncle Ben's Rice cookbook about 17 years ago, and it's always been one of my kids' favorites. Very inexpensive and easy to make. I like this because it's got a lighter and tangier flavour than most Spanish rice recipes and the fresh tomatoes make it wonderful.

This will become a regular dish, when you taste this. (Note: as the recipe calls for peas to be added in at the end, but you can use any kind of veggie desired)
