SPANISH BEEF STEW
Spanish Beef Stew is a hearty one pot dinner with chuck roast slow cooked in a tomato sauce flavored with bell peppers, green olives, and Spanish paprika.

Steps:
- Preheat oven to 325 degrees and toss beef cubes with flour salt and pepper.
- Heat oil in large dutch oven on high heat and cook the beef on all sides until well browned then remove from the pan.
- Lower heat to medium, add in the onions and cook until translucent, about 5-6 minutes.
- Add in the carrots, bell pepper and garlic and stir well.
- Add in the paprika, oregano, bay leaves, died tomatoes, crushed tomato, tomato paste and the beef and stir well.
- Cook, covered in the oven, 2 to 2 1/2 hours.
- Remove from the oven, add peas and olives and stir well.
- Place back in the oven for 15 minutes.
- Remove from oven. Stir and serve.

Steps:
- Heat oil over medium-high heat in a large deep skillet or dutch oven. Add onion, garlic and green pepper. Cook for 5-6 minute, until vegetables start to soften. Add beef and salt. Allow meat to brown, breaking up clumps with the end of a spatula or wooden spoon, to achieve a crumbly texture.
- Add plum tomatoes, crushing them or tearing them into pieces with your hands as you drop them in. Pour in the plum tomato juice from the can too. Add tomato paste and stir through. Add vinegar, raisins, cumin, smoked paprika, bay leaves and olives. Bring to a simmer and cook for 15 minutes, stirring occasionally, until the stew is slightly thickened and the flavors are melded. Remove bay leaves. Correct seasoning with salt, if necessary.
- Serve with mashed potatoes, rice or black beans.

SPANISH BEEF STEW
Beef stew is seasoned with smoked paprika, onions, garlic, and green olives. Made without potatoes, this is a great recipe to serve with simple steamed rice or even mashed potatoes, if you like. It's a stovetop recipe, so heating the oven is not needed.

- Toss chuck roast pieces with flour, salt, and pepper in a large mixing bowl.
- Heat olive oil in a 6-quart Dutch oven over medium-high heat. Toss 1/2 of the coated beef pieces in the hot oil and brown on all sides, 4 to 5 minutes. Remove from the pot and repeat with the remaining beef.
- Return all the browned beef back to the pot and reduce heat to medium. Be sure to scrape up all the browned bits from the bottom of the pot or they will burn. Add diced tomatoes with juice, crushed tomatoes, onions, carrots, bell peppers, garlic, sweet and smoked paprika, oregano, and bay leaves. Stir to combine all ingredients, and bring to a boil.
- Cover and reduce heat to a simmer. Allow to simmer for 2 1/2 hours, stirring occasionally to make sure nothing is sticking to the bottom of the pot.
- Stir in frozen green peas and olives. Cover and simmer for 15 more minutes.
- Remove bay leaves and serve warm.

Steps:
- In a large soup pot over medium-high heat, warm 1 tablespoon oil.
- Add in the pork cubes and brown for about 5 minutes.
- Add in onion, garlic, bell pepper, and mushrooms; stir/saute for about 5 minutes.
- Add more oil if needed to prevent sticking.
- Add in tomatoes, stock, wine, oregano, thyme, salt, and pepper.
- Lower heat to med-low and simmer, covered, for about 30 minutes or until pork and vegetables are tender.
- Add in olives and green beans; simmer, covered, for about 8-10 minutes or until beans are tender.
- For a thicker stew--mix flour and water together and stir into stew for about 2-3 minutes or until thickened.

SPANISH STEW
Steps:
- Remove the meat from the bone and dice into 1-inch cubes. Mix the flour, chile powder, cumin and salt in a bowl. Toss the meat in the seasoned flour. Preheat a saucepot over high heat. Add olive oil, meat, bones and brown very well for 10 minutes. Drain some of the oil leaving approximately 1/4 cup left in the pan. Add 6 cloves garlic and cook until almost brown, about a minute. Stir in the onions and the peppers. Cover and steam for 5 minutes. Add the grape tomatoes, canned tomatoes and 2 cups wine. Bring to a simmer. Add the olives, capers, salt pepper and thyme. Cover and simmer for 45 minutes until meat is tender. Trim the outer leaves from the cauliflower. In a small pot just large enough to hold the vegetable add 1/4 cup olive oil and over medium heat add the cauliflower. Season with salt and add 1/2 cup wine. Cover and steam for 5 minutes. When wine is evaporated add butter, 1 tablespoon garlic and chile flakes. Turn every minute cover until tender. Boil the egg noodles in salted water. Toss with the scallions and drizzle with olive oil. Serve with stew.
