OREO COOKIES AND CREAM CAKE WITH WHITE FROSTING
if you are a lover of white cake and vanilla frosting you will love this! this makes a wonderful cake for a kid's birthday party, stick whole mini Oreo cookies on top instead of the crushed :)

Steps:
- Set oven to 350°F.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking pan.
- In a mixing bowl combine cake mix with water, oil and egg whites.
- Using an electric mixer on medium speed beat until smooth and well combined (mixture will resemble thick marshmallow fluff).
- Fold in the crushed Oreo cookies.
- Spread into prepared pan.
- Bake for about 25-30 minutes or until cakes tests done,.
- Cool completely.
- For the frosting; in a bowl using an electric mixer beat all frosting ingredients until light and fluffy (you may need to adjust either the cream or sugar until desired consistency is achieved).
- Spread onto the top of the cooled cake.
- Sprinkle chopped Oreos onto top of the frosting (use as many as desired for the top).
- Refrigerate until ready to serve (store any leftover cake in the refrigerator).

Steps:
- In a mixer bowl combine cake mix, oil, 1-1/4 cup water and egg whites. Blend on low speed until moistened. Then beat two minutes at high speed.
- Gently fold in coarsely chopped cookies. Pour batter into two greased and floured 8-inch round cake pans.
- Bake at 350*F for 24-30 minutes or until toothpick inserted in center comes out clean.
- Cool for 15 minutes; then remove from pans. Let cool completely and frost.
- FROSTING: With mixer combine all ingredients. Beat together until creamy. Ice the first layer of cake and place second layer on top; ice top and sides. Sprinkle with extra crushed Oreo cookies on top, if desired.

- In a mixing bowl, beat sugar, shortening, milk, and vanilla until smooth.
- Frost cake.

- Preheat your oven to 350F (175C) and prepare three 8-inch round cake pans (see note 5 to make in two pans) by lining the bottom of each pan with a round of parchment paper and greasing the sides with baking spray.
- In the bowl of a stand mixer (or in a large bowl using an electric mixer) whisk together flour, sugar, baking powder, and salt.
- Turn mixer to low-speed and add butter, one tablespoon at a time, not adding the next tablespoon until the first is completely combined. When you’re finished, the mixture should resemble coarse sandy crumbs (see video above for visual).
- Add canola oil and stir until combined, then add sour cream and vanilla extract and stir on low-speed until completely combined. With mixer still on low-speed, add milk until combined.
