Buttery Herbed Dinner Rolls image

Even if you use an electric mixer to make the dough, you'll have to shape the dough by hand-but it's one of the most fun jobs I can imagine, and it's easy too. Put one piece of dough on the work surface, cup your hand over it, and move it in a circular motion. Relax and enjoy-shaping a tender dough is one of life's natural stress relievers.

Number Of Ingredients 13

1 cup milk, warmed to about 110 degrees F
1 tablespoon active dry yeast
5 tablespoons unsalted butter, melted and cooled slightly, plus more for the bowl and pan

1 tablespoon sugar
1 1/2 teaspoons coarse salt
1 large egg, lightly beaten
3 cups all-purpose flour
2 tablespoons finely chopped fresh parsley
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
4 tablespoons unsalted butter, melted
Flaky sea salt, for sprinkling

Steps:

  • Make the dough: In the bowl of a stand mixer fitted with the dough hook, combine the milk and yeast and let stand until foamy, about 10 minutes. With a fork, stir in the butter, sugar, salt and egg. With the mixer on low, add the flour and then the herbs. Increase the speed to medium and knead the dough until it is smooth and elastic, about 5 minutes.
  • Lightly butter a large bowl. Transfer the dough to the bowl, then cover and set in a warm place until doubled in size, 1 to 4 hours, depending on the temperature of your house.
  • Butter a 13-by-9-inch baking pan. Transfer the dough to a work surface and cut into 18 equal pieces. Roll each piece into a tight ball. Transfer the dough balls to the prepared pan, spacing them evenly (rolls will touch once they have risen). Cover and set in a warm place until doubled in size, about 1 hour.
  • Finish the rolls: Preheat the oven to 400 degrees F. Very gently brush the rolls with some melted butter and sprinkle with some flaky sea salt. Bake until golden, 15 to 18 minutes. Brush with more melted butter and serve warm.

I have used this recipe for over 30+ years. I first saw it in a cookbook put together by factory workers. I received this cookbook as a gift and have since made it my main and favorite cookbook. It is so ragged and well used. I hope you enjoy them as much as I have making them.

2 packages dry yeast
1/3 cup warm water
1/4 cup sugar
1/4 cup butter
2 teaspoons salt
1 cup scalded milk
2 eggs
4 1/2-5 cups flour

Steps:

  • Soften yeast in warm water.
  • In large mixing bowl combine sugar, butter, salt and milk.
  • Cool to luke warm.
  • Stir in eggs and yeast.
  • Gradually add flour to form a stiff dough, beating well after each addition.
  • Knead methold: Knead on floured surface until smooth and satiny (about 5 minutes).
  • Cover; let rise in warm place until doubled, about 1 hour.
  • Work done, cover, let rise again until about double, put into rolls and let rise again for another hour.
  • Bake for 12 to 15 minutes at 350 degrees.

I was looking for an easy glaze to dress up store bought dinner rolls. I made this for a wedding recently and they were a big hit. My husband claims he will not eat plain rolls again. This really dresses up plain Costco rolls and makes a great substitution for garlic bread if you are serving a lot of people. Enjoy!

Steps:

  • Mix together and brush over rolls. Heat rolls at 400 degrees for about 5 minutes. The rolls come out crispy on outside and soft on inside. Covers about 2 dozen rolls.

  • Heat butter in a saucepan over medium heat until golden brown, about 10 minutes. Carefully pour butter into a bowl, leaving sediment behind.
  • Add sugar, vanilla, and 2 tablespoons milk to butter, and stir until smooth. If glaze is too thick, add more milk. Use immediately.

  • Pour the milk, vegetable oil and sugar into a medium saucepan and stir to combine with a wooden spoon. Heat the mixture over medium heat. Do not allow the mixture to boil.
  • When the mixture is the right temperature, stir in 2 1/2 cups of flour and the yeast. After the yeast and flour are incorporated, add the remaining 2 cups of flour and stir to combine.
  • Once the dough has risen, add the baking powder, baking soda and salt and mix until thoroughly combined. The dough will be pretty thick and sticky so you can use your hands to mix in the dry ingredients.
  • Pinch off pieces of the dough and roll them into 2"-inch balls (about 24) or 4"-inch balls (about 12) . Nestle the rolls into a 12"-inch cast iron skillet (you can also make in a 10"-inch cast iron), cover with a kitchen towel and set aside until the rolls double in size, about 1 hour.
  • Preheat the oven to 400°F and place the skillet into the oven. Bake your rolls until they’re golden brown on top and cooked through, 17 to 20 minutes.
