4 Large Fresh Tomatoes (or 6 Small)
2 Cloves Garlic
Olive Oil
Salt and Pepper
1 Diced Onion
1/3 Cup Minced Baby Bella Mushrooms
1/2 Cup Minced Red Bell Pepper
1 Pound Mild Italian Sausage
1/4 Cup Fresh Parsley (chopped (or 2 Tablespoons Dried))
1 Teaspoon Fresh Rosemary (chopped (or 1/2 Teaspoon Dried))
1 Tablespoon Fresh Basil (chopped (or 1 1/2 Teaspoons Dried))
1 Teaspoon Fresh Oregano ((or 1/2 Teaspoon Dried))
1 Can San Marzano Tomatoes (28 oz)
30 ounces Tomato Sauce * ((about 2 cans))
2 Tablespoons Tomato Paste
1 Teaspoon Kosher Salt (plus more to taste)
1 Bay Leaf
2 Teaspoons Balsamic Vinegar
1/2 of a Rind from a Parmesan Cheese Wedge

Steps:

  • Heat an oven to 400 degrees F and drizzle a little oil on a cookie sheet.
  • Slice the tomatoes in half and toss in the oil on the pan.
  • Add the garlic, in it's skins and toss in the oil.
  • Sprinkle with a little salt and pepper and bake for 20-30 minutes or until the tomatoes are wilted.
  • Press the garlic out of their papers, mince and set everything aside.
  • Heat a dutch oven over medium heat and add a drizzle of oil.
  • Add the onions, bell peppers, mushrooms and garlic and stir with a wooden spoon until the onions begin to turn translucent.
  • Add the Italian sausage and break it up a little.
  • As the meat browns, occasionally go back to the pan every minute or so and continue to break up the meat.
  • Add the herbs and stir again to combine, allowing to cook for 30 seconds.
  • Add the tomatoes, canned tomatoes, tomato sauce, and tomato paste.
  • Stir to combine and sprinkle with kosher salt evenly over the sauce.
  • Add the bay leaf, balsamic vinegar and parmesan rind.
  • Stir to combine and allow to simmer for 3 hours or all day.
  • Before serving, remove the bay leaf.
  • We let the parmesan stay in until we've eaten all of the sauce, even with the leftovers in the fridge.

10 ounces spaghetti or 10 ounces linguine
2 1/2 tablespoons extra virgin olive oil, divided use
4 garlic cloves, minced
4 ounces mixed mushrooms, finely chopped (optional)
2 (6 1/2 ounce) cans minced clams, including juice from 1 can
1/16 teaspoon red pepper flakes (optional)
3/4 teaspoon italian seasoning
2 teaspoons fresh oregano or 1 teaspoon dried oregano
2 tablespoons white wine
1/2 lemon, juice of
fresh ground black pepper
1 bunch fresh Italian parsley, coarsely chopped (or less, if you prefer)

Steps:

  • Start water to boil for pasta.
  • Heat 2 tablespoons oil over medium high heat in a small or medium saucepan.
  • Add garlic and saute until softened, a few minutes. Add mushrooms (if using), clams, and juice from one of the cans of clams. Turn heat to high.
  • Add red pepper flakes, Italian seasoning, oregano, wine, and lemon juice. Let simmer on high until at least three fourths of liquid has evaporated, about 10-15 minutes.
  • Meanwhile, cook pasta until it is al dente.
  • Drain pasta. Add pasta back to empty pot (off heat) and coat with 1/2 tablespoon of oil.
  • Take sauce off heat. Add black pepper to taste, and parsley.
  • Immediately add half of the sauce to the pasta and toss.
  • Plate pasta, top with other half of sauce, and serve.

5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

18 lbs fresh tomatoes (which should equal to 4 gallons washed, peeled and chopped tomatoes)
3 cups onions, chopped
4 -8 garlic cloves, roasted
1 -4 teaspoon olive oil
1/8-1/4 cup canning salt, start with less and add more to taste
6 -8 tablespoons sugar, start with less and add more to taste
2 tablespoons dried oregano leaves
1 tablespoon dried basil leaves
2 (6 ounce) cans tomato paste

Steps:

  • Prepare tomatoes, washed, peeled and chopped. Reserve 4 cups and set aside.
  • Prepare garlic. To roast garlic place garlic cloves on aluminum foil and drizzle with olive oil. wrap foil around garlic, sealing edges. Roast at 350 degrees for 30 minute or until tender. Cool and remove papery skins.
  • Saute 3 cups chopped onion until translucent. Reserve 1 cup and set aside.
  • Mix all ingredients except reserved tomatoes and onions. Cook tomato mixture over medium heat until heated through and then simmer for 30 minutes.
  • Using a food processor or immersion blender and puree tomato mixture until smooth.
  • Continue simmering for another hour to an hour and a half until tomato sauce thickens.
  • Add reserved tomatoes and onion.
  • Adjust seasonings to taste.
  • Heat thoroughly.
  • Ladle sauce into hot jars leaving a 1 inch headspace. Process pints 20 minutes and quarts 25 minutes at 10 lbs pressure in a steam-pressure canner.

1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1 medium yellow onion, grated
3 garlic cloves, finely minced
2 carrots, finely grated (use a food processor or a grater)
28 oz canned crushed tomatoes
1/2 cup water (pasta cooking water, preferred)
Kosher salt and black pepper
1 tbsp dried oregano
1 tsp sweet Spanish paprika
Pinch red pepper flakes, optional
Handful fresh basil, about ½ cup packed, torn
Handful fresh parsley, about ½ cup packed, chopped
3/4 lb to 1 lb of cooked pasta of your choice

Steps:

  • In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
  • Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
  • Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
  • If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

Light and easy to make with fresh tomatoes, this simple Southern Italian tomato sauce takes just 20 minutes to make and is a terrific base for many Italian dishes.

1 pound DeLallo dried pasta such as spaghetti or penne
1 pound medium size fresh tomatoes, such as campari or cocktail tomatoes
6 tablespoons DeLallo extra virgin olive oil (divided)
6 large fresh garlic cloves (of the same size, divided)
12-15 basil leaves
1 1/2 tablespoons kosher salt

Steps:

  • Begin cooking the pasta noodles in boiling water seasoned with 1 tablespoon kosher salt for approximately 5 minutes. *NOTE: Reserve 2 cups of the pasta water to add to the sauce later. While the pasta is cooking, start the sauce.
  • For the sauce, cut the tomatoes in half, then quarter the halves, and set aside. Heat 3 tablespoons of extra virgin olive oil in a large sauté pan over medium high heat, and add three of the garlic cloves to the oil. Tilt the pan so the garlic is immersed in the oil to flavor it as the garlic cooks. Cook until the garlic becomes fragrant and begins to color, then to avoid splatters, carefully add the tomatoes along with their juice to the flavored oil. Cook for 1-2 minutes, stirring and breaking apart the tomatoes as they cook. Pull out the garlic cloves and discard. Continue cooking the sauce for 6-8 more minutes where it will thicken and become creamy as it cooks. Tear the fresh basil leaves into pieces and add to the sauce when cooking is nearly complete.
  • As the pasta is cooking, heat the remaining olive oil in a large sauté pan over medium high heat with the remaining garlic. Cook until lightly browned and remove the garlic and discard. Carefully ladle 1 to 1/2 cups of the pasta water 1/4 cup at a time into the garlic infused oil. Transfer the noodles to the pan and continue cooking the pasta for 1-2 more minutes or until the water and oil is absorbed. Divide the noodles among four plates, and top with the sauce. Garnish with more fresh basil and finish with a drizzle of extra virgin olive oil before serving. Or, toss the noodles with the sauce and serve family style

  • Run through food Processor. We don’t have a food processor so I use my Magic Bullet or Ninja found HERE & HERE, takes a few min longer but works great.
  • Put tomatoes through the Food Mill. A food mill separates the juice and pulp from the skin and seeds. I bought this ONE (found HERE) because it has grippy feet.
  • Put all ingredients in pot and cook & cook & cook. This sauce takes at least 2 hours on the stove, if you want a thicker sauce you need to cook it longer.
  • Prep Canning Supplies. While your sauce is cooking use this time to wash all of your Jars, Rings, & Lids in hot soapy water, set out to dry (found HERE, HERE, & HERE)
  • When your sauce is ready – Prep your Jars & Lids… AGAIN. A little different this time though. You want your jars to be warm when you put the sauce in so that the jars don’t crack and break.
  • Fill Jars with Hot Sauce. This is a multi step process. Use the funnel to help fill the jar and then use the bubble remover/head space tool to remove any air pockets.
  • Add Lid & Ring. Wipe the lip of the jar clean with a rag or towel making sure here is no food on the edge. Use the magnetic wand to remove the lid from the hot water and place on the jar and then add the ring and hand tighten down.
  • Transfer to Canning Pot & Process. Make sure to have at least 1″ of water above the jars. Your recipe will tell you how long to process in the hot water bath.
  • Remove from Water Bath. Once your jars have processed turn heat off, remove the lid from the canner. Wait at least 5 min before removing the jars.
