CREAM CHEESE BARS I
This cookie has a chewy bottom crust with a sweet cream cheese layer on top. I like this best with a yellow or lemon cake mix.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15 x 10 inch sheet pan.
- Mix together cake mix, butter or margarine, and 1 egg. Press mixture into pan.
- In a small bowl, mix together cream cheese, 2 eggs, and confectioners' sugar. Pour mixture on top of cake mixture.
- Bake for 15 minutes. Reduce temperature to 300 degrees F (150 degrees C), and bake for 30 to 35 minutes. Cool, and cut into squares.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
- In a small saucepan over medium heat, combine sugar, 1/2 cup butter, water and dates. Cook, stirring frequently until dates have softened and the mixture is well blended. Remove from heat. Combine the flour, baking soda and salt; stir into the date mixture, then mix in the 1/4 cup orange juice, milk, eggs and 1 tablespoon orange zest. Spread the batter evenly into the prepared pan.
- Bake for 15 to 20 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. To make the frosting, combine the confectioners' sugar, 1/3 cup butter, cream cheese and orange zest. Beat until smooth. Gradually mix in the remaining orange juice a tablespoon at a time until the icing is spreadable. Spread over the bars when cool. Cut into squares.

- In a large bowl, combine the wafer crumbs and butter. Press into a greased 13x9-in. baking pan. , In a large bowl, beat cream cheese until smooth. Add the milk, eggs and vanilla; beat just until combined. CHARLESTON CHEWY CHEESECAKE WITH ORANGE MARMALADE GLAZE
This is the ultimate mash-up of two of my favorite desserts: traditional Charleston Chewies (a blondie-style bar) and rich New York cheesecake. For a pretty presentation, I've added a sunny-hued marmalade glaze to the top. I can assure you that your dinner guests will be impressed!

- For the Charleston chewy crust: Preheat the oven to 350 degrees F. Grease and flour a deep 10-inch springform pan. Line the bottom of the pan with a parchment paper circle.
- Stir together the butter, brown sugar, baking powder, vanilla extract, eggs and flour in a medium bowl. Spread the batter in the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Let cool to room temperature.
- Make the filling: Reduce the oven temperature to 325 degrees F.
- Beat the cream cheese and granulated sugar with an electric mixer at medium speed until creamy. Add the eggs, one at a time, and beat just until the yellow disappears. Beat in the sour cream and vanilla. Pour the filling over the cooled crust.
- Double-wrap the bottom of the springform pan with foil, sealing it tightly to prevent water from getting into the pan. Place the springform pan into a larger pan and pour very hot water into the outer pan until it covers the bottom, being careful to make sure the water level doesn't come up higher than the foil.
- Bake until the center is almost set, 60 to 70 minutes. (The center will still jiggle, while the edges will be set.) Turn off the oven, then crack the oven door and allow the cake to cool in the oven for 1 to 2 hours. Transfer the cake to the refrigerator to chill for at least 4 hours and preferably overnight.
- Make the glaze: Heat the marmalade and liqueur in a small saucepan over medium heat until the marmalade is melted. Unmold the cheesecake and place on a stand or serving plate. Cut into slices and garnish each slice with the glaze and orange segments.

- Stir together flour, granulated sugar and salt in a large bowl.

QUICK AND EASY NUTTY CHEESE BARS
This is a delicious butter pecan cheesecake in a bar. A friend of my mom's gave me this recipe when I was 12 years old. Very easy to make and everyone I've made them for over the years has raved. Note: This recipe is not supposed to taste like regular cheesecake, it is technically a butter pecan flavored cream cheese dessert bar.

- Preheat oven to 350 degrees.
- Grease and flour 9 x 13 inch baking pan.
- Stir together and mix well dry cake mix, 3/4 cup melted butter and 3/4 cup pecans. Press mixture evenly into prepared pan.
- Stir together until well mixed 1 cup brown sugar and 2 packages of cream cheese. Spread this over cake mixture.
- Sprinkle with remaining 3/4 cup pecans.

- Combine butter and brown sugar in a large bowl; beat with an electric mixer until smooth and creamy. Stir in flour and walnuts until crumbly. Press mixture into the bottom of a 9-inch square baking dish.
