SPAGHETTI SAUCE
The longer you let it cook the more the flavor stands out. After I've cooked it for an hour, I usually add meatballs or sausage, and let them cook right into the sauce. My Grandmother used to make it in the morning for dinner that night.

Steps:
- In a large stock pot stir together crushed tomatoes, tomato puree, and tomato sauce.
- Set on medium-low heat and cover.
- Meanwhile, in sauté pan heat olive oil over medium heat. When warm, add peppers, onions, and mushrooms.
- Sprinkle with a dash of salt and pepper to taste.
- Sauté until onions are clear but not browned.
- Add sautéed vegetables to stock pot, folding them into the sauce with the oregano and parsley.
- Cover, and bring to a slow simmer, stirring occasionally from the bottom up.
- Once simmering add the tomato paste, fresh garlic, garlic powder, and onion powder, being sure to mix in throughly.
- Turn to low heat and simmer, covered at least 1 hour.
- Taste; if too acidy, add sugar 1/2 teaspoon at a time, checking every 10 minutes.

PHYLLIS DILLER'S TOMATO SPAGHETTI SAUCE
I actually learned this recipe from watching a video interview between Madame Diller and comedian Roseanne Barr, in which Roseanne joined Diller for lunch at the latter's home. In the video, Phyllis put together this delicious recipe, which I've found incredibly simple to replicate with delicious results. As a note, I cannot completely replicate Ms. Diller's recipe, as she guesstimates most of her spice measurements. While this works for some, I know this site often prefers specific measurements rather than estimations. Either way, it's pretty close. Except for, Phyllis uses a lot more olive oil than I specify. To each their own.

Steps:
- Heat up the 2 tablespoons of olive oil in a large sauce pan. Add the ground beef and cook it until browned.
- Open and add the contents of the canned tomatoes, tomato paste, and mushrooms (with the mushroom liquid intact). Add the chopped onions, garlic, oregano, basil, cayenne pepper and wine as well, and stir well.
- Bring the mixture back to a boil, and reduce heat to low, simmering for about 1 hour.
- Remove from heat and serve over spaghetti or another pasta of your choice. Garnish with parmesan if desired.

- In large saucepan over medium heat, saute onion and garlic in olive oil until soft. Stir in tomatoes, tomato paste, water, Italian seasoning, basil, sugar, wine, and crushed red pepper. Reduce heat to low and simmer 3 hours, stirring occasionally. Serve.

I saw this recipe in a Saveur Magazine and I didn't bother to copy it down and put it in my "to make" things. So when I saw it again, I pounced!! It is a very nice dish! Simple and fast! Pretty, too! - Heat olive oil in a skillet over medium heat.
- Add garlic, scallions, and white wine.
- Cook until soft, 2-3 minutes; then add stock and butter.

- Place ground beef in a non-stick wok, or large deep skillet. Cook over medium heat until evenly brown. Drain excess fat. Add onion, and cook until soft and translucent. Season with salt and pepper. - Put a large saucepan of salted water on to boil and cook the spaghetti following pack instructions. Heat the oil in a deep pan, add the garlic and chilli, and fry for 1-2 mins over a medium heat. Pour in the wine (if using) and simmer for 3-5 mins until it reduces by a third. Tip in the tomatoes, burst them with a wooden spoon and bring to a gentle simmer. Season well.
- Discard any broken or open clams and mussels, then add to the tomato sauce and cover with a lid. Cook for about 3 mins until the shells open. Remove any mussels or clams with their shells still shut using a slotted spoon. Stir through the lobster meat.
- Drain the spaghetti, reserving a little cooking water and add to the pan. Toss the spaghetti with tongs to coat in the sauce. Serve in big bowls with a drizzle of chilli or olive oil, a scattering of parsley and a good grinding of black pepper.
