COLLEEN'S CHOCOLATE FUDGE

8 tablespoons (1 stick) butter
3 cups sugar
2/3 cup cocoa
1 teaspoon salt
1 1/2 cups milk
1/2 cup smooth peanut butter
1 cup chopped pecans
2 teaspoons vanilla extract

Steps:

  • Coat an 8-by-8-inch pan with 4 tablespoons of the butter. In a medium saucepan, stir together the sugar, cocoa and salt. Stir in the milk. Bring the mixture to a rolling boil and reduce the heat to medium-low. Attach a candy thermometer to the saucepan and simmer for 25 to 30 minutes, or until the mixture reaches 240 degrees F. Remove the pan from the heat, stir in the remaining 4 tablespoons butter, the peanut butter, the pecans and the vanilla. Pour the fudge out onto the buttered pan. Let the fudge cool for 20 minutes, then cut it into bite-size pieces.

1 (14-ounce) can sweetened condensed milk
2 cups semisweet chocolate chips
1 cup milk chocolate chips
Fine sea salt
1 1/2 teaspoons pure vanilla extract
1 cup chopped walnuts

Steps:

  • Add the condensed milk to a small saucepan. Pour the chips into the pan, give a stir, and make sure that the milk coats all the chips. Add a pinch of salt. Cook over low heat until it's melted and glossy and a looks like a thick, hot fudge.
  • Add the vanilla and walnuts, making sure to coat the nuts with the fudge. (I like to make double triple batches of this and freeze the extra.)
  • Line the bottom and sides of a 9-inch square baking pan with foil. You want to leave about 4 inches of overhang on the 2 opposite sides. These serve as your handles to remove the fudge from the pan in 1 piece, so make sure that there is enough of the overhang for you to have a solid grip.
  • Pour the fudge into the pan and smooth it out, getting it in all the corners. Let the fudge come to room temperature, then put in the fridge for 3 hours or so. This will make it easier to cut.
  • Pop out of the pan and cut into little pieces.

4 ounces unsweetened chocolate
3 tablespoons butter, plus more for greasing pan
1 cup half-and-half
1 tablespoon corn syrup
1 tablespoon vanilla extract
1 cup chopped, roasted nuts, optional

Steps:

  • Grease an 8 by 8-inch pan with butter. In a heavy-bottomed saucepan, combine the sugar, chocolate, 1 1/2 tablespoons of the butter, half-and-half, and corn syrup. Over medium heat, stir with a wooden spoon until sugar is dissolved and chocolate is melted. Increase heat and bring to a boil. Reduce heat to medium-low, cover, and boil for 3 minutes. Remove the cover and attach a candy thermometer to the pot. Cook until the thermometer reads 234 degrees F. Remove from the heat and add the remaining butter. Do not stir. Let the mixture cool for 10 minutes or until it drops to 130 degrees F. Add vanilla and nuts, if desired, and mix until well-blended and the shiny texture becomes matte. Pour into the prepared pan. Let sit in cool dry area until firm. Cut into 1-inch pieces and store in an airtight container for up to a week.

I clipped this recipe from a December 1983 issue of The Charlotte (NC) Observer, which was running a contest to see who made the best fudge. This recipe won in the "Plain Chocolate Fudge" category (no additives such as nuts). I made this for presents at the holidays and now my grown kids are making it for gifts themselves. I buy disposable aluminum pans approx 5x8-inch so I can just wrap them up and give them as gifts. This recipe makes three pans-full.... or two 8x8-inch pans of fudge.

4 cups sugar
1 cup whole milk
1 teaspoon vanilla
1 cup butter (no margarine)
25 large marshmallows, cut in quarters
2 ounces unsweetened chocolate squares, cut up
12 ounces semi-sweet chocolate chips
11 1/2 ounces milk chocolate chips

Steps:

  • Butter two 8x8-inch or three 5x8-inch pans.
  • In a large heavy pot (I use a dutch oven size pot), mix together sugar, milk, vanilla, and butter; stir to mix.
  • Bring to a boil, stirring constantly.
  • Then let boil for 2 minutes, not stirring.
  • NOTE: You need to move quickly during the next couple of steps so have the marshmallows and chocolate squares cut up and cut open the bags of chocolate chips.
  • Turn off heat but leave pot on the burner.
  • Add marshmallows, quickly stirring until melted.
  • Add each chocolate separately in the order listed in the recipe, quickly stirring until melted.
  • Pour into prepared pans.
  • Let cool.
  • Fudge tastes better each day --- if it lasts!

One of the first things my mother taught me how to cook. I remember the smell and hardly being able to wait for it to cool. Now days, everyone asks me for it on the holidays so it's stayed a holiday tradition. It takes almost 30 minutes exactly from start to finish and sets up every time. I have never made it where it doesn't get hard. Handed down from my aunt whom I was named after.

1 (12 ounce) can evaporated milk
1 cup butter
32 marshmallows
12 ounces semi-sweet chocolate chips
1 dash vanilla
chopped pecans

Steps:

  • Combine sugar, milk and butter in heavy saucepan. Cook over medium heat stirring constantly to soft ball stage.
  • Remove from heat.
  • Add vanilla, marshmellows and stir til almost melted.
  • Add chocolate chips and stir until everything is completely melted.
  • Toss in pecans if desired.
  • Pour on to large buttered platter or plate.
  • Allow to cool completely. I cut into squares using the pizza cutter. Store in tight container - though it won't last long at all!
  • This can be easily cut in half for smaller batch.

  • Cook milk, brown sugar, white sugar and chocolate over low heat, until mixture forms a ball in a glass of cold water. (239 degrees F. using a candy thermometer).
  • Take off stove and add marshmallow, margarine, vanilla, nuts and peanut butter.
  • Beat mixture together until thick.
  • Put in 9x13" pan, and refrigerate.
  • Store in air tight container. I like to keep it refrigerated.
