½ cup low-sodium soy sauce
⅓ cup white sugar
¼ cup water
2 tablespoons white wine vinegar
2 tablespoons rice vinegar
½ teaspoon ground ginger

Steps:

  • Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan; bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, about 30 minutes.
  • Let glaze cool to thicken, at least 1 hour.

8 medium Idaho Potatoes
1/4 cup milk
3 tablespoons butter
2 tablespoons wasabi
2 pounds carrots, cleaned, coarse chop
1/4 cup shallots, chopped
1/4 cup ginger, chopped
1/4 cup mirin (sweet sake)
1/4 cup sake
Four 6-ounce tuna steaks
1/2 cup low-sodium soy sauce
1/2 cup sugar

Steps:

  • For the mashed potatoes: Boil potatoes until fork tender. Drain and whip with remaining ingredients.
  • For the sauce: Place all ingredients is a saucepan. Bring to a simmer and cook until carrots are tender. Puree in a food processor, and push through a chinois.
  • For the glaze: Heat soy sauce and sugar in a saucepan until sugar is dissolved.
  • Assembly: Sear tuna in a hot pan or grill. Place on a plate and glaze. Surround with carrot ginger sauce and serve with mashed potatoes.

1/2 cup sake
1/4 cup soy sauce
2/3 cup mayonnaise
2 tablespoons finely grated ginger, with juices
1 tablespoon wasabi paste
1 teaspoon wasabi paste
1/4 cup prepared japanese sesame dressing
1/4 cup prepared ponzu sauce (citrus-soy sauce)
6 cups Baby Spinach
1 tablespoon mirin
1 tablespoon sake
1 tablespoon soy sauce
3 tablespoons miso
2 1/2 lbs ground chuck
1/3 cup sliced green onion
2 teaspoons finely grated ginger, with juices
2 tablespoons minced garlic
2 teaspoons fresh coarse ground black pepper
1 teaspoon sea salt
vegetable oil, for brushing on the grill rack
6 hamburger buns with sesame seeds, split

Steps:

  • Prepare a medium fire in a charcoal grill with a cover, or preheat a gas grill to medium.
  • For the glaze:.
  • Mix the mirin, sake, and soy sauce in a small, heavy fire-proof saucepan. Place the pan on the grill rack, bring the mixture to a simmer, and cook until reduced to a slightly thicker consistency, 15 to 20 minutes. Set the glaze aside (it will thicken slightly as it cools).
  • For the mayonnaise:.
  • To make the mayonnaise, mix all of the ingredients in a small bowl. Cover and refrigerate until serving.
  • For the spinach:.
  • Mix the sesame dressing and ponzu sauce in a small bowl. Place the spinach in a large bowl and toss lightly with the dressing. Cover and refrigerate until serving.
  • For the patties:.
  • Mix the mirin, sake, and soy sauce in a small bowl. Stir in the miso and blend evenly. Spread the chuck out in a large, shallow pan. Distribute the miso mixture over the meat and sprinkle evenly with the green onion, ginger, garlic, pepper, and salt. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and, with cupped hands, toss 1 portion of the meat back and forth from hand to hand to form a loose ball. Pat the meat portion lightly on a flat surface to form a patty to fit the buns. Press the center of the patty down with your fingertips to create a slight indention in the center of the patty. Repeat with the remaining meat portions.
  • When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack and baste each patty with the glaze. Cover and cook until browned on the bottom, 3 to 4 minutes, basting each patty again with the glaze. Turn the patties and brush the cooked side with the glaze. Cook, brushing frequently with the glaze, until done to preference, 4 to 5 minutes longer for medium. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, place an equal portion of the spinach on each bun bottom and top with a patty. Spread the mayonnaise over the cut sides of the bun tops. Add the bun tops and serve.

This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

2 tablespoons granulated sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 1/2 teaspoons wasabi paste, plus more to taste

Steps:

  • In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.

3 tablespoons packed brown sugar
2 1/2 tablespoons soy sauce
3 tablespoons fresh lemon juice
4 (6 ounce) skinless mahi mahi fillets
1/2 teaspoon salt
1 1/2 tablespoons vegetable oil

Steps:

  • Preheat oven to 200°F.
  • Cut white and pale green parts of scallions crosswise into 2-inch pieces, then thinly slice enough scallion greens to measure 3 tablespoons.
  • Stir together brown sugar, soy sauce, and lemon juice in a small bowl until sugar is dissolved.
  • Pat fish dry and sprinkle with salt. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then cook fish on 1 side until browned, 3 to 4 minutes. Turn fish over and brown 1 minute. Add soy sauce mixture and simmer, covered, until fish is almost cooked through, about 3 minutes. Transfer fish with a slotted spatula to a heatproof platter and keep warm in oven. (Fish will cook through from residual heat.).
