3/4 cup unsalted butter, softened
1 1/2 cups white sugar
100 grams caramel pudding powder (approximately one 4-serving box, don't use low fat or low sugar variety)
4 eggs
1 1/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 3/4 cup all purpose flour
3 tablespoons cornstarch
4 teaspoons baking powder
1/2 teaspoon sea salt
butter and flour for greasing the cake pan
1/2 cup unsalted butter
1 cup brown sugar, packed
2/3 cup heavy cream (whipping cream)
1 cup powdered sugar, sifted
1/2 teaspoon sea salt
sea salt flakes for garnish

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Prepare a 9-inch bundt pan by greasing it with butter and coating the inside of the pan evenly with a thin dusting of flour. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and sugar until light and fluffy (about 4 minutes).
  • Add the pudding powder and whip on high speed until incorporated.
  • Add the eggs one at a time, mixing well after each addition.
  • Combine the milk, vegetable oil, and vanilla extract in a separate bowl or pyrex measuring cup and whisk with a fork to combine.
  • Add the milk mixture to the butter mixture slowly, mixing well until combined.
  • Add the flour, cornstarch, baking powder and salt, and mix on low speed just until the batter forms and no streaks of flour appear.
  • Finish mixing by hand with a rubber spatula to be sure the batter is well combined (mixing with the electric mixer at this stage can cause over-mixing, so it's best to finish it gently by hand).
  • Pour the batter into the prepared bundt pan and bake at 350 degrees Fahrenheit for about 60 minutes (sometimes it requires 65 or even 70 minutes), or until a toothpick inserted into the middle of the cake comes out clean.
  • Cool in the pan for about 15 minutes and then invert onto a cooling rack before removing the pan to let the cake cool completely. If the pan feels a little difficult to remove, let it cool inverted on a cooling rack for another 10 minutes before trying again to remove the pan. Greasing and flouring the pan well before baking will ensure the cake is easy to remove, and using a non-stick bundt pan is a great choice.
  • Let the cake cool completely on a cooling rack before adding the frosting.
  • While the cake is baking or cooling, add the butter, brown sugar, and heavy cream to a medium saucepan over medium heat.
  • When the mixture has heated and begins to bubble, whisk gently but constantly for about 5-6 minutes or until the mixture turns dark in colour and thickens slightly.
  • Remove the mixture to a shallow bowl to cool for about 20-40 minutes.
  • When the caramel has cooled to room temperature, divide it in half reserving half for topping the cake at the end.
  • To the other half of the caramel sauce, add the powdered sugar and the salt, and whip them together on high speed until a thick, barely pourable glaze forms. You might have to add 1-3 teaspoons of heavy cream to the mixture (depending upon the texture of the powdered sugar you're using) to create this texture.
  • Pour and spread the frosting over the top of the cake and let it drip down the sides ever so slightly.
  • Drizzle the extra caramel sauce you set aside over top of the frosting (you might not need all of it) and top with sea salt flakes before serving.

1/3 cup water
225 ml heavy cream (room temperature)
3/4 cup unsalted butter (room temperature)
1/2 tsp sea salt (optional, to taste, for salted caramel)
2 1/4 cups all-purpose flour
2 1/4 tsp baking powder
3/4 tsp salt
3/4 cup unsalted butter (room temperature)
1 cup granulated sugar
3 large eggs (room temperature)
1 1/2 tsp vanilla
1/2 cup caramel (room temperature)
1 cup milk (room temperature)
5 large egg whites
1 2/3 cups dark brown sugar (packed)
2 cups unsalted butter (room temperature, cubed)
1/2 cup caramel (room temperature)
salt (optional, to taste, for salted caramel)

Steps:

  • Place sugar and water into a medium pot, stir to combine, but to not stir from this point forward. Cook over high heat, washing down the sides of the pot with a pastry brush dipped in water as needed to prevent crystals.
  • Cook until desired color of caramel is reached (amber) and immediately remove from heat. Very slowly pour in (room temperature) heavy cream while whisking quickly. The mixture will bubble up (a lot) and boil. Add (room temperature) butter, return to heat, and bring back to a boil. Simmer for 2 minutes whisking constantly.
  • If you want to make this a salted caramel, add your salt at this point. Whisk it in (start with less than you think you'll need), dip a spoon into the caramel, let it cool, taste it, add more salt as needed.
  • Remove from heat and let cool to room temperature (about 2 hours). Transfer to a container and place in fridge to thicken.*
  • Preheat oven to 350F. Grease and flour three 6" cake rounds, line with parchment.
  • In a medium bowl, combine flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer combine butter and sugar. Beat on med-high until pale and fluffy (2-3 mins). Add eggs one at a time, fully incorporating after each addition. Add vanilla and caramel and mix until incorporated.
  • Alternate adding flour mixture and milk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition.
  • Spread batter evenly into prepared pans and bake for 35-40 mins or until a toothpick inserted into the center comes out mostly clean.
  • Place cakes on wire rack to cool for 10mins then turn out onto wire rack to cool completely.
  • Place egg whites and sugar into the bowl of a stand mixer, whisk until combined.**
  • Place bowl over a pot with 1-2" of simmering water and whisk constantly until the mixture is hot and no longer grainy to the touch or reads 160F on a candy thermometer (about 3mins)
  • Place bowl on your stand mixer and whip on med-high until the meringue is stiff and cooled (the bowl is no longer warm to the touch (approx. 5-10mins)).
  • Switch to paddle attachment. Slowly add cubed butter and mix until smooth.
  • Add cooled caramel and whip until smooth.*** Add additional salt if desired if making a salted caramel buttercream.
  • Trim cake layers slightly. Place one layer of cake on a cake stand or serving plate. Top with 1-2 Tbsp cooled caramel. Spread evenly pressing into the cake layers so the cake absorbs the sauce. Top with 2/3 cup of frosting, spread evenly. Repeat with remaining layers.
  • Frost and smooth the outside with a thin crumb coat. Chill for 20mins.
  • Frost and smooth the outside of the cake, generously frosting the sides specifically. Smooth with an icing smoother. Use a cake comb on the sides of the cake. Repeat, scraping off more frosting each time, until smooth.
  • Using a small spoon, place dollops of caramel around the top edges of the cooled cake, allowing some to drip down.****
  • Fill in the top of the cake with more caramel and spread evenly with an offset spatula. Pipe rosette dollops using a 1M tip with remainder of frosting.

2 stick butter, soft
3 c granulated sugar
6 eggs
2 2/3 c all purpose flour
1 tsp salt
1/4 tsp baking soda
1 c sour cream
1 Tbsp pure vanilla extract
CARAMEL ICING
2 c packed dark brown sugar
2 stick butter, softened
1/2 c evaporated milk
1/2 tsp pure vanilla extract
4 c confectioners sugar

Steps:

  • 1. Preheat oven to 350. Spray your 13x9 dish and set aside. Cake-cream the butter and granulated sugar until fluffy. Add the eggs, one at a time, mixing well after each addition. In a medium bowl sift the flour, salt, and baking soda together.
  • 2. Alternately add flour mixture and sour cream to the batter and blend. Stir in vanilla. Pour the batter into the prepared 13x9 and bake 45 minutes or until cake tests done in center. Remove from oven and let cool.
  • 3. Make the icing-In a large saucepan, combine the butter, brown sugar and milk. Cook over low heat until butter melts. Increase the heat to medium and cook 2 minutes longer. Remove from heat and stir in vanilla. Slowly add your powdered sugar mix well and frost the cooled cake.

1-12 oz. jar of Caramel Sauce/Topping
1-16oz. container of White Frosting
1/2 cup of Sour Cream

Steps:

  • Mix the batter according to the box instructions, and then stir in the Sour Cream. In a parchment lined pan, pour the batter and bake the cake according to the box directions. Let it cool and gently poke some holes in it with a fork. Pour half the jar of Caramel Sauce over the poked cake. Spread it around and let it sit for 5 minutes. While it's soaking up that goodness, grab a medium bowl and make the Frosting. Mix the rest of the Caramel Sauce with the While frosting. Now frost that cake, and frost it good. Don't forget the Salt finish, that's what makes this cake POP! Now serve up a nice little piece.

225g softened salted butter, plus extra for the tins
125g golden caster sugar
100g light brown soft sugar
1 tsp vanilla extract
4 large eggs
225g self raising flour
2 tbsp milk
toffee, chocolate or caramel pieces, to decorate
200g softened salted butter
400g icing sugar (golden icing sugar if you can find it - it adds a golden colour and caramel flavour)
70g caramel sauce, dulce de leche or caramel spread, plus 3 tbsp to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter two 20cm springform tins and line the bases with baking parchment.
  • Beat the butter and both sugars in a bowl with an electric whisk for a few mins until lighter in colour and fluffy. Add the vanilla and the eggs, one at a time, adding a spoonful of flour and beating in between each egg. Add the remaining flour and milk. Divide between the cake tins and bake for 25-30 mins until they're golden, spring back when pressed, and a skewer comes out clean when inserted into the middle. Cool in the tins for a few mins, then tip out and leave to cool completely on a wire rack.
  • Meanwhile, for the icing, put the butter and icing sugar in a bowl and whisk for a few mins until light and airy. Whisk in the caramel briefly, adding 1 tbsp of boiling water to loosen, if needed. Set aside until the sponges are completely cool before assembling, or the icing will melt.
  • Use half the icing to sandwich the cakes together, then spread the remainder over the top, smoothing it out with a knife or the back of a spoon. Leave in a cool place until ready to serve. Drizzle with the 3 tbsp extra sauce (warm briefly in the microwave if it's a little stiff), allowing some to drip down the sides if you like, and scatter over the toffee, chocolate or caramel pieces to serve. Edible glitter, birthday candles or sparklers, optional.

75g plain flour
2 tbsp cocoa powder
85g slightly salted butter , chopped into small pieces
3 medium eggs , beaten
0.5 x 397g can caramel (we used Carnation)
0.5-1 tsp sea salt flakes
300ml pot double or whipping cream
100g white chocolate , finely chopped
50g dark chocolate , finely chopped
chocolate sprinkles or edible glitter (optional)

Steps:

  • Sieve the flour and cocoa into a bowl. Put the butter in a saucepan and add 225ml water. Bring to a fast boil, then simmer until the butter has melted. Tip in the flour mixture and quickly beat with a wooden spoon until the mixture comes together to a smooth, shiny dough, and pulls away from the sides of the pan. Tip the dough into a bowl and spread it up the sides with your spoon to help it to cool down quickly (but don't let it cool completely - it's easier to incorporate the eggs while it's still warm). Heat oven to 200C/180C fan/ gas 6 and line 2 baking sheets with baking parchment.
  • While the dough is still warm, add the eggs a little at a time, beating well with a wooden spoon between each addition. You're looking for a smooth consistency, that reluctantly falls off the spoon in a V shape (you may not need to use all the egg). If the mixture becomes too runny, you won't be able to pipe it; if it's too thick, it won't puff up in the oven. When you're happy with the consistency, spoon it into a disposable piping bag.
  • Snip off the end of the piping bag to give you a 1cm opening. Holding the bag at a 90-degree angle to the baking tray, pipe balls of the dough, about the size of a walnut, over the 2 sheets - you should make 18-20 in total. Dip your finger in a little water and gently pat down any peaks on the top of the balls of dough. Place the 2 sheets in the oven and bake for 25-30 mins, swapping the trays over after 20 mins. The choux buns should be puffed up and crisp when cooked. Leave to cool completely.
  • Spoon the caramel into a large bowl, add 1/2 tsp salt, mix well and taste - add a little more salt if you like. Add the cream and whisk until holding soft peaks (the cream can now be stored in the fridge for up to 1 day).
  • Split the choux buns in half, spoon a generous dollop of salted caramel cream into each and replace the lids. Melt the white and dark chocolates in 2 bowls suspended over pans of gently simmering water, or in the microwave. Transfer the dark chocolate to a piping bag and set aside to cool a little. Top each bun with a spoonful of white chocolate, stack the profiteroles on a plate or cake stand, then drizzle over the dark chocolate and sprinkle with chocolate sprinkles or edible glitter, if you like. Serve straight away.

110g unsalted butter, softened at room temperature
225g caster sugar
150g firm dark brown sugar
3 eggs
1 tsp vanilla extract
240g plain flour
1 tsp baking powder
240ml milk
200g granulated sugar
90g butter, cubed & softened at room temperature
120ml double cream, at room temperature
1 tbsp sea salt flakes, crushed
75g butter
250g icing sugar
225g cream cheese

Steps:

  • Heat the oven to 180C/160 fan/gas mark 4 and line 2 x 20cm sandwich cake tins. In a bowl or freestanding mixer, cream the butter and both sugars until light and fluffy. Add the eggs, one at a time, beating until the whole mixture is really aerated (if your mixture looks like it might be splitting, add a little of your flour). Add the vanilla, then mix in the flour and baking powder, alternating with the milk. Divide the mixture between the tins and cook for 25-30 minutes or until the top and edges are golden brown and a skewer comes out clean. Leave to cool in tins for 10 minutes before flipping onto a wire cooling rack and peeling off the baking parchment. Allow to cool.
  • Make the salted caramel sauce by heating the sugar in a medium saucepan over a low to medium heat. Resist the temptation to stir. Instead, when it starts to melt, gently swirl the pan. Cook until amber in colour - this will take 5-6 mins. Remove from the heat and add all the butter. The mixture will bubble up, but let it melt completely before stirring. Slowly pour in the cream and add the sea salt, put back on a gentle heat and warm until it's a smooth sauce. Pour into a jug and leave to cool to room temperature.
  • To make the cream cheese caramel icing: cream the butter with a freestanding mixer or in a bowl until light and creamy, slowly adding in half of the sifted icing sugar in parts until fully incorporated and fluffy. Add the cream cheese, 100g of the salted caramel sauce and the remaining icing sugar, then whisk until pale and smooth. Keep in the fridge until needed.
  • Once the cakes are cooled, move them to a flat surface and use a large skewer or thick straw to poke holes across the top of the cakes, being careful not to poke all the way through! Drizzle most of the remaining caramel sauce (reserving some for decoration) into the holes in the cake layers, topping up as they sink in, then spread any overspill across the cake layer. Leave to cool completely.
  • To assemble, carefully place one layer onto a serving plate and cover with half of the cream cheese frosting. Repeat with the next layer, then use the remaining caramel to create a marbled pattern on top of the cake.
