SOUTHWEST CHICKEN SKILLET DINNER
An easy Southwest chicken skillet dinner that comes together in just 15 minutes!

Steps:
- Heat a large saute pan over medium heat. Add olive oil then the onion and peppers. Saute for 4-5 minutes, until softened. (Prep your other ingredients while that's going in the pan.) Then add the garlic and saute for another 30 seconds or so, until fragrant.
- Add the black beans, corn and chicken to the pan. Add all of the seasonings (chili powder through black pepper). Stir to combine and let everything warm through for 2-3 minutes.
- Add the lime juice and turn off the heat. You're ready to serve with your favorite toppings!

- In a small bowl, combine the garlic powder, chili powder, salt and paprika. Rub over both sides of chicken. In a large skillet coated with cooking spray, brown chicken on both sides; drizzle with lime juice. Cover and cook for 5-7 minutes or until chicken juices run clear.

- Heat oven to 375°F.
- Fold wings of chicken across back with tips touching. Tie or skewer drumsticks to tail. Place chicken, breast side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of inside thigh muscle and does not touch bone.
- Roast uncovered 30 minutes. Mix remaining ingredients; brush generously over chicken. Roast uncovered about 1 hour longer, brushing 1 or 2 times with butter mixture, until thermometer reads 180°F and juice of chicken is no longer pink when center of thigh is cut. Let stand about 15 minutes for easier carving.

SOUTHWESTERN ROAST CHICKEN
Everytime I'm in the grocery store, I see rotisserie chicken, every flavor imaginable. This is my version of "Southwestern" flavor roast chicken.

- Combine the first four ingredients in a blender, or use a handheld immersion blender. Process until smooth, stopping to scrape down the sides.
- Remove the giblets, and rinse the chicken with cold water; pat dry. Place the sage leaf and 1 garlic clove in the cavity of the chicken. Tie the legs together with string. Lift the wingtips up and over back, and tuck under the bird to keep them from burning. Place the chicken on a lightly greased rack in a shallow roasting pan, breast side up. Insert a meat thermometer into the meaty portion of a thigh, making sure it doesn't touch bone.
- Brush the chicken with the oil mixture.Rub some of the oil mixture under the skin of the chicken so the flavor penetrates the meat. Bake uncovered, at 500 degrees for 10 minutes. Reduce the oven temperature to 350 degrees, and bake an additional 50 minutes or until the thermometer registers 180 degrees. Remove the sage and garlic from the chicken cavities; set aside. Remove the chickens to a serving platter and set aside. Keep them warm. Skim the fat from the drippings; reserve the pan drippings.
- Combine the dried sage flakes, 1 garlic clove, vinegar, and next 4 ingredients and blend with a handheld immersion blender (or use regular blender); process until smooth. Add the reserved pan drippings; process until smooth, stopping once to scrape down the sides. Serve the chicken with the sauce.

SOUTHWESTERN CHICKEN

- Flatten chicken breasts by placing them between plastic wrap and pounding with mallet or bottle. Rub garlic and juice of lime over flattened breasts. Place on grill or in cast iron pan and cook for 3 minutes on each side, or until cooked through. Top with cheese and cover to melt. Serve topped with salsa and sour cream.

I discovered this recipe one Sunday afternoon in the WW magazine when I was looking to find a different way to prepare chicken. This recipe is very easy and very tasty. I served it with rice and green beans. The chicken can be cooked immediately after using the rub, but for a more intense flavor, marinate for a couple of hours in the fridge or overnight.This chicken has a sweet and spicy flavor and can be served with a squeeze of fresh lime.

- Preheat oven to 375 degrees F. Or prepare grill for direct-and indirect-heat cooking.
- Combine first 8 ingredients;reserve. Line roasting pan with foil. Rub sugar mixture over all sides of chicken;place in pan. Coat chicken with cooking spray.

- Combine cumin, salt, dried chipotle pepper, and paprika in a large, resealable plastic bag. Seal bag and shake to mix. Measure 2 teaspoons of the seasoning into a large bowl; add diced tomatoes with green chile peppers, black beans, and corn to the bowl and stir.
- Put chicken in the bag with the remaining seasoning; shake to coat.
- Heat olive oil in a large skillet over high heat. Turn seasoned chicken out into the skillet, add red onion, and saute in the hot oil until the chicken is browned, about 5 minutes.
- Reduce heat to medium-high. Stir tomato mixture with the chicken; bring to a boil, add rice, and stir.
- Reduce heat to low. Sprinkle Cheddar cheese over the chicken mixture. Place a cover on the skillet and simmer until the rice is tender and the chicken no longer pink in the middle, about 5 minutes. Remove from heat to cool for 5 minutes before serving.

- Clean chicken and pat dry. Squeeze half the lime juice on the outside of the bird and the other half inside the cavity. Sprinkle all of the seasonings evenly over the entire bird. Season the back first then flip it over and season the breast side.
- Place chicken on a roasting tray in a tinfoil lined baking dish. Place the meat thermometer in the thickest part of the thigh, making sure not to touch bone. Roast uncovered for 3 1/2 - 4 hours or until the meat thermometer reads at least 165 degrees F, preferable between 170 to 180 degrees F. To baste: begin basting bird after 2 hours and repeat every 1/2 hour after. This will yield a sticky and slightly crispy skin. If you want a crispy skin, don't baste the last hour and turn the heat up to 350 degrees F for the last 5 minutes of cooking. If the skin gets too brown before the meat is up to temperature, cover with aluminum foil.
