1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

This creamy pasta dish is made with a ground beef and tomato based sauce with milk. Use penne pasta or ziti in this easy, delicious dish.

1 tablespoon extra virgin olive oil
1/2 cup chopped onion
1 small carrot (peeled and finely shredded)
1 rib celery (finely chopped)
1/4 cup water
8 ounces lean ground beef (or more for a meatier sauce)
1 small clove garlic (crushed and minced)
1/4 cup dry white wine
1 tablespoon all-purpose flour
1/3 cup tomato paste
1 1/2 cups milk, divided
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf basil
12 ounces penne pasta (or ziti)
3 tablespoons grated Parmesan cheese (plus more for serving)

Steps:

  • In a large skillet or saute pan, heat oil over medium heat. Add the onion and cook, frequently stirring, until softened. Stir in shredded carrot, chopped celery, and 1/4 cup water; cook until vegetables are tender and liquid has evaporated, about 5 minutes longer.
  • Add the ground beef to the vegetables and cook ​ until it has browned and is no longer pink, or about 4 minutes. Add garlic and cook for 1 minute longer, stirring constantly.
  • Add the wine and cook until the liquid has evaporated about 5 minutes.
  • Stir in the flour and cook, stirring, for 2 minutes. Add the tomato paste, 1/2 cup of milk, salt, pepper, and oregano. Reduce heat and simmer, frequently stirring, until the milk has been absorbed.
  • Continue cooking until the sauce has thickened, gradually adding the remaining 1 cup of milk. Cook over low heat for about 15 to 20 minutes longer.
  • Meanwhile, cook penne pasta in a large pot of boiling salted water following the package directions until just tender; drain well.
  • Transfer sauce to a large serving bowl. Add the penne pasta and Parmesan cheese; toss penne pasta gently. Sprinkle some extra Parmesan cheese over the bowl of pasta and serve more at the table.

One-Pot Spaghetti with Fresh Tomato Sauce image

This one-pot meal is perfect for the beginner cook: Everything but the cheese goes into one skillet, and it all magically comes together. The tomato paste is here for a little flavor insurance, just in case your tomatoes aren't at their best. Feel free to add an extra tablespoon when they're out of season.

12 ounces spaghetti, broken in half
3 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
4 cloves garlic, thinly sliced
2 medium tomatoes, roughly chopped
Handful fresh basil leaves, plus more for garnish
Large pinch crushed red pepper
Kosher salt
1/2 cup grated Parmesan, plus more for serving

Steps:

  • Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, crushed red pepper and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water, and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes.
  • Stir in the Parmesan (the sauce will thicken more), and season with salt if needed. Divide the spaghetti among 4 bowls, and garnish with more Parmesan and torn basil leaves.

MEAT AND TOMATO SAUCE

1/4 cup extra-virgin olive oil
1/4 teaspoon red pepper flakes
1 large onion, diced
6 cloves garlic, minced
1/4 cup Italian tomato paste
Four 28-ounce cans whole peeled tomatoes, with liquid
2 teaspoons Kosher salt plus to taste
Freshly ground black pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
1 tablespoon dried savory or rosemary, crumbled into small pieces
1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon fennel seeds, cracked
2 bay leaves
Rind of Parmesan, about 2- to 4-inches long (optional)
1/2 to 1 cup grated Parmesan

Steps:

  • In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the pepper flakes and cook for 15 seconds. Add the onion and cook, stirring occasionally, until golden brown, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Add the tomatoes one at a time, crushing them by hand as you go. Season with 1 teaspoon salt and pepper to taste. Simmer the sauce over low heat, covered. Heat a large skillet over medium-high heat. Add the beef, pork, veal, savory, thyme, oregano, and fennel seeds. Season with 1 teaspoon salt and pepper. Break up the meat with a wooden spoon, and cook until it loses its raw color, about 7 minutes. Add the meat to the sauce, holding back any excess fat. Add the rind of the Parmesan, if using. Simmer the sauce, covered, over low heat, for 1 1/2 hours. (If the sauce gets too thick adjust the consistency with water.) Taste and season with salt and pepper to taste. Just before serving, remove the Parmesan rind and add the grated cheese. Cook's Note: 3 to 4 cups of this sauce will dress 1 pound of pasta, like spaghetti or rigatoni. It is also perfect for lasagna. This sauce freezes very well.

  • Stir in cream and heat through.

1 lb mixture of ground chuck and ground pork (if you do not)
like this get 1 pound chuck
1 sweet onion
1 lb pasta (we use Rotini)
1 (28 ounce) can crushed tomatoes
14 ounces tomato sauce (no salt added)
1 teaspoon olive oil
4 -5 garlic cloves
grated parmesan cheese
basil
salt
pepper

Steps:

  • 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
  • 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
  • 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
  • 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
  • 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
  • 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.

1 1/2 lbs 95% lean ground beef
16 ounces tomato sauce
8 ounces crushed tomatoes
1 white onion
3 carrots
4 celery ribs
1 tablespoon extra virgin olive oil (EVOO)
1 teaspoon red pepper flakes
1 tablespoon dried oregano
1 tablespoon basil
1/2 cup fresh parsley
1/2 teaspoon salt

Steps:

  • Crumbled ground beef, and pre-cook in dutch oven (DO NOT brown, just render the fat/water).
  • Drain pre-cooked beef (I do this in a strainer lined with paper towels). Wipe extra grease/water from bottom of pan with a paper towel.
  • Chop onion and celery; finely dice carrot.
  • Sauté onion and EVOO in dutch oven on low heat, until onion is translucent (be careful not to let onion get brown; this makes it bitter, which makes the sauce bitter. If it gets brown, throw it out & start again!).
  • Add carrot, celery, and salt, continuing to sauté until all veggies soften, stirring often.
  • Add beef, tomato, herb/spice. Stir. Cover and raise heat until sauce is simmering.
  • Turn heat down to lowest possible. Continue to simmer, covered, for at least an hour, stirring every 15 minutes.
  • If heat is too high, or pot not well-insulated, water may need to be added.
  • Add chopped parsley when you turn off the heat -- FINISHED!
  • Note: Flat-edged wooden spatulas are best for lifting sugar-laden ingredients (i.e. veggies & tomato sauce) from the bottom of a pot.
  • Alt: If you're not picky about fat, skip the 'pre-cook beef' step, and add beef directly to cooked veggies.

1 1/2 cups onions, chopped
1 teaspoon garlic, chopped
4 cups tomatoes, peeled and seeded
8 ounces crabmeat
1 lb spaghetti
1 tablespoon butter

Steps:

  • Heat the oil in a large casserole, and saute the onions and garlic for about 10 minutes, or until wilted but not browned.
  • Stir in the tomatoes, lower the heat, and simmer until they reduce slightly and form a sauce, about 15 minutes.
  • Stir the sauce occasionally.
  • Add the crab meat and cook for only a moment to heat through.
  • Meanwhile, cook the pasta according to the package directions until it is cooked throughh but still firm.
  • Drain thoroughly, toss with the butter, then top with the sauce.
  • Serve immediately.
