This is one of my favorite cookies to make. They are the only peanut butter cookies my family will eat! Sprinkle a pinch of sugar on cookies before baking, if desired.

1 cup peanut butter
1 cup white sugar
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix peanut butter, sugar, and egg together in a bowl using an electric mixer until smooth and creamy. Roll mixture into small balls and arrange on a baking sheet; flatten each with a fork, making a criss-cross pattern.
  • Bake in the preheated oven for 10 minutes. Cool cookies on the baking sheet for 2 minutes before moving to a plate.

They're thick (almost 1/2") and dense, crisp around the outside edge, a firm "chew" as you get away from the edge, "lip smacking" rich, peanutty, and not too salty. They not only taste great, they look great too...golden brown and slightly crinkled on top.--described perfectly by a poster on another board. YUMMY! is all I need to add.

1 cup dark brown sugar (8oz)
1 cup sugar (7 oz)
1 1/4 cups peanut butter (11 7/8 oz)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla
2 2/3 cups flour (11 1/4 oz)
1 1/4 cups chopped dry roasted salted peanuts (6 1/4 oz)
1 1/3 cups peanut butter chips (8 oz) or 1 1/3 cups chocolate chips (8 oz)

Steps:

  • Preheat oven to 350°. Line baking sheets with parchment.
  • Cream butter, sugars, peanut butter, baking powder, baking soda and salt. Add eggs one at a time. Stir in the flour, nuts, and chips.
  • Drop by tablespoon onto prepared sheets. Bake for 14 minutes, until set and brown around the edges. Remove from oven and cool on pan 5 minutes before transferring to wire racks to cool.

5 1/3 ounces salted butter, softened (a generous 2/3 cup)
5 1/3 ounces shortening (a generous 2/3 cup)
4 ounces cream cheese
5 1/2 ounces sugar
2 tablespoons vanilla
1 1/3 cups flour
1 cup oat flour
1 pinch nutmeg
1/3 cup ground walnuts
2 cups finely chopped walnuts
1/4 cup currants (optional)
turbinado sugar, for rolling
32 walnut halves
maple syrup, for brushing

Steps:

  • In a large bowl, cream together the butter, shortening, cream cheese and sugar until fluffy.
  • Add vanilla, beat in well.
  • Add flours, nutmeg and ground walnuts, beating inches
  • Fold in the chopped walnuts and currants (if using). [Photo24688]
  • Scoop 1/2 the batter (it will be very soft and sticky) onto a sheet of wax paper set on a double layer of foil.
  • Using damp hands, roll dough into a log about 2" in diameter.
  • Wrap in the waxed paper / foil layers and freeze until very firm, at the least 3-4 hours and up to 6 months.
  • When ready to bake, preheat the oven to 350F and line 2 baking sheets with parchment.
  • Unwrap one log and roll it in the coarse sugar to coat the sides completely.
  • Use a sharp serrated knife to cut the log into 1/4" thick rounds and place them 1" apart on sheets.
  • Lightly press a walnut half onto the tacky surface of each cookie (dough will have defrosted somewhat) and using a pastry brush lightly glaze the top of each round.
  • Bake, one sheet at a time, for 16-17 minutes. They will not look overly browned but this is OK.
  • Cool completely on the sheets.

1 teaspoon vanilla

1 (12 ounce) bag semisweet chocolate
1 cup almond brickle chips
0.5 (6 1/2 ounce) jar powdered peanut butter (PB2)
3 tablespoons water
1 cup chocolate chips
3 eggs

Steps:

  • Preheat oven to 375.
  • Lightly grease baking sheets.
  • Cream butter, shortening at medium speed until creamy.
  • Gradually add sugars, PB2, water, vanilla, salt, soda., then add dry ingredients.
  • Once well mixed, then stir in chocolate chips and toffee chips.
  • Drop by teaspoonfuls about a few inches apart on a greased cookie sheet. Bake for 8-11 minutes or until lightly browned. Let cool and then remove to wire racks.

½ cup unsalted butter, softened
1 ½ cups dark brown sugar
½ cup white sugar
½ teaspoon salt
⅔ cup peanut butter
2 eggs
1 ½ teaspoons vanilla extract
2 ½ cups all-purpose flour
2 teaspoons baking soda
2 cups semisweet chocolate chips
2 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar, white sugar, salt and peanut butter. Beat in the eggs and vanilla. Combine the flour and baking soda; stir into the batter to form a dough. Mix in the chocolate chips and walnuts. Scoop mounds of dough as large as two tablespoons onto the prepared cookie sheets. Cookies should be at least 2 inches apart. If batter is crumbly, roll portions of dough into rough spheres between the palms of your hands. Flatten cookies down by 1/3 using the bottom of a glass.
  • Bake for 10 to 12 minutes in the preheated oven, until well risen and brown. Do not overbake they will firm up a little as they cool. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

22 peanut butter sandwich cookies, finely crushed (about 2 cups)
1/4 cup butter, melted
2 pkg. (4 oz. each) BAKER'S White Chocolate
1/4 cup creamy peanut butter
3 cups JET-PUFFED Miniature Marshmallows
4 cups crisp rice cereal
1 cups cocktail peanuts

Steps:

  • Heat oven to 350ºF.
  • Mix cookie crumbs and butter until blended; press onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 8 to 10 min. or until golden brown.
  • Microwave white chocolate and peanut butter in microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is completely melted and mixture is well blended, stirring every 30 sec. Spread 1/2 cup chocolate mixture onto crust; cover with marshmallows. Bake 2 min. or until marshmallows start to puff.
  • Add cereal and nuts to remaining chocolate mixture; mix well. Spoon over marshmallow layer; press firmly into marshmallow layer to secure. Refrigerate 1 hour or until firm before cutting into bars.
