4 cups water
1 teaspoon salt
1 cup uncooked quick-cooking grits
1 cup shredded Cheddar cheese
½ cup shredded Parmesan cheese
2 tablespoons butter
ground black pepper to taste

Steps:

  • Bring water and salt to a boil in a saucepan. Whisk in grits, reduce heat to medium-low, and cook until thickened, 5 to 6 minutes. Remove from heat.
  • Stir in Cheddar cheese, Parmesan cheese, and butter until fully combined and cheeses have melted. Season with pepper and serve immediately.

This tasty dish is a great alternative to potatoes or mac and cheese. It is very easy to make and easily doubles. See note below for another variation with chaddar cheese. Give it a try- grits are not just for breakfast anymore! Adapted from Southern Living.

1 (14 ounce) can chicken broth
1 1/2 cups milk
3/4 cup uncooked quick-cooking grits
1/2 teaspoon salt
1 cup freshly grated parmesan cheese
1/2 teaspoon fresh ground pepper

Steps:

  • Bring chicken broth and 1 1/2 cups milk just to a boil in a medium saucepan with a lid. Slowly stir in grits and 1/2 teaspoons salt. Cover, reduce heat to medium-low, and cook, stirring occasionally, 6 to 7 minutes or until mixture is thickened. Add Parmesan cheese and pepper, stirring until cheese is melted.
  • Cheddar Cheese Grits: Cook grits as directed, reducing salt to 1/4 teaspoons and substituting 2 cups (8 oz.) shredded extra-sharp Cheddar cheese for Parmesan cheese.
  • Note: I always use 2 bouillon cubes and 2 Celsius of water for the canned chicken broth.

Whisk butter, whole milk and sharp cheddar together with ground cornmeal for Alton Brown's creamy Cheese Grits recipe from Good Eats on Food Network.

2 cups whole milk
2 cups water
1 1/2 teaspoons kosher salt
1 cup coarse ground cornmeal
1/2 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
4 ounces sharp Cheddar, shredded

Steps:

  • Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the cornmeal while continually whisking. Once all of the cornmeal has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy.
  • Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time. Serve immediately.

CREAMY PARMESAN GRITS

Every Southerner needs a pot of creamy, cheesy grits hidden up the sleeve for every breakfast need. Look for Parmigiano-Reggiano cheese, which adds nutty flavor and an earthy depth to the grits. If not, substitute your favorite cheese like Gouda or Cheddar.

1 cup stone-ground grits
1/4 cup freshly grated Parmesan cheese
2 1/2 tablespoons butter
2 tablespoons heavy cream

Steps:

  • Bring salt and 1 qt. water to a boil in a medium saucepan over high heat. Whisk in grits, and cook, whisking constantly, 45 seconds. Return mixture to a boil. Cover, reduce heat to medium-low, and cook 20 minutes or until grits are tender and liquid is absorbed. Stir in cheese and butter. Stir in cream, and serve immediately.

1 teaspoon kosher salt
1/2 cup quick-cooking grits
1 cup gruyere cheese, shredded
1/4 cup parmesan cheese, freshly grated (about 1 oz. grated)
3 tablespoons unsalted butter
3 eggs
1/4 teaspoon dry mustard
1/8-1/4 teaspoon garlic, finely minced
1/8 teaspoon ground red pepper
white pepper (optional)

Steps:

  • Bring water and salt to boil in a medium saucepan over high heat; slowly whisk in grits.
  • Reduce heat to low and cook 5 minutes, stirring occasionally.
  • Remove from heat, add cheeses and butter and stir until blended.
  • Cool 30 minutes.
  • Preheat oven to 350 degrees.
  • Generously grease a 1-quart baking dish.
  • Beat eggs, mustard,garlic and red pepper in large bowl to blend; stir in cooled grits until smooth.
  • Taste and season with white pepper if desired.
  • Transfer grits to prepared pan,place in a large pan and add enough hot water to come halfway up side of baking dish.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and continue baking until center is slightly soft to the touch, about 15 to 20 minutes.

2 eggs, lightly beaten
1 teaspoon salt
