fresh tarragon and dill sprigs, as needed
1 whole salmon, 12 inches long
crushed garlic, as needed
1 lemon, sliced
juice of 2 lemons

Steps:

  • Marinate the salmon in lemon juice for one hour to remove smell. Don't marinate overnight since lemon cooks fish. Stuff the center of the fish with fresh dill, tarragon, crushed garlic and round lemon slices. Bake in clay or glass dish for 45 minutes at 350 degrees F.

My local farmer's market has a local man who makes the best chevre. This recipe was inspired by his garlic-dill goat cheese. Baking the salmon in a parchment paper packet makes the whole thing deliciously moist for an extra-mouthwatering treat! This recipe also gives you a whole lot of impressive bang for very little effort. So simple even the least skilled of beginner's will pull this off with ease. Perfect for tricking that new boy you're dating into thinking you're a total whiz in the kitchen, even if you decidedly are not. If you can't find a good chevre with this flavor combination, just mix some minced garlic and fresh dill into plain chevre!

2 salmon fillets, skin on
3 1/2 ounces garlic and dill flavored chevre cheese
2 tablespoons extra virgin olive oil
salt and pepper, to taste
fresh lemon juice, to taste

Steps:

  • Preheat oven to 375 degrees fahrenheit.
  • To form parchment paper packets: fold the parchment paper in half and cut out two heart shaped peices of parchment paper, using the fold as the center line as you would if making a valentine out of construction paper. Make sure you're hearts are each big enough to fit one of the filets easily within one half of the heart. Unfold hearts, place on baking sheet.
  • Rub your filets in the olive oil to coat, then season with salt and pepper and a few squirts of lemon juice, if desired.
  • Place each filet on one half of a heart, skin side down.
  • Spread the top of each filet with the chevre, using as much as you like. You may not need the entire 3.5 ounces.
  • Close the packets by folding over the other side of the heart, then rolling up and pressing the edges of the paper together starting at the top of the heart. Finish by twisting the pointed end to hold the packet together.
  • Bake for about 20 minutes or until desired doneness is reached. I like to cut open the parchment paper during the last five minutes of cook time to make the cheese topping turn out a little brown and bubbly.

2 pounds salmon fillets
2 cloves garlic, crushed
1 teaspoon dried dill weed
salt to taste
ground black pepper to taste
1 cup shredded Cheddar cheese
6 green onions, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.
  • Bake 20 minutes in the preheated oven. Top with Cheddar cheese and green onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.

3 lbs salmon fillets
2 tablespoons light mayonnaise or 2 tablespoons low-fat mayonnaise
2 teaspoons lemon pepper (I used Mrs. Dash because it doesn't contain salt)
2 ounces parmesan cheese or 2 ounces mozzarella cheese
2 -4 ounces imitation crabmeat (depending on how much you want.)

Steps:

  • Preheat the oven to 350°F.
  • Take a baking pan and line it with foil. Spray a thin layer of PAM.
  • Crumble crab meat.
  • Take your salmon and cut open so it opens up like one of those science project boards. Season with one teaspoon lemon pepper. Close flaps.
  • Spread mayonnaise on top of the fillet and sprinkle remaining lemon pepper onto salmon.
  • Top salmon with crab meat.
  • Sprinkle cheese onto the crab meat.
  • Bake about 25 to 30 minutes.
  • Then broil for 2 minutes or until the cheese turns brown.

1 lb salmon fillet
1 cup mayonnaise
5 garlic cloves
2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Place salmon filet on a sheet of aluminium foil, or baking tray, flesh-side up.
  • Season salmon filet with salt and pepper (to taste) and set aside.
  • Chop garlic finely and mix into the cup of mayonnaise, stirring if necessary.
  • Using a butter knife or a spoon, spread the garlic-mayo mixture evenly on top of the filet, the spread should be about a 1/2cm thick throughout.
  • Preheat the oven to 450 degrees, and place the filet on the top rack, for 8-10 minutes, taking care not to overcook.
  • Turn the oven setting to "Broil" and keep a close eye on the garlic mayo spread; turn off the oven once the garlic and mayo start to brown evenly.
  • Season further with salt to taste.
  • Serve with potatoes, or steamed rice.
