3-1/3 cups uncooked bow tie pasta
1 medium sweet red pepper, chopped
8 green onions, chopped
1 tablespoon olive oil
1/4 cup all-purpose flour
1 teaspoon chili powder
1 teaspoon minced chipotle pepper in adobo sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
2-1/4 cups fat-free milk
1 cup shredded sharp cheddar cheese, divided
4 center-cut bacon strips, cooked and crumbled
2 tablespoons minced fresh cilantro

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, saute pepper and onions in oil until tender. Stir in the flour, chili powder, chipotle pepper, salt and cumin until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in 1/4 cup cheese until melted., Drain pasta; toss with sauce. Stir in bacon and cilantro. Transfer to a 2-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 400° for 20-25 minutes or until bubbly.

4 cups cooked rice
1 1/2 cups grated Jack
1 1/2 cups corn kernels, frozen or canned
2/3 cup milk
1/2 cup sour cream
1/2 cup thinly sliced scallion
1 (4-ounce) jar roasted red peppers, drained, patted dry and diced
1 jalapeno or serrano, seeds removed and minced, optional
Salt and cayenne pepper
Paprika, for sprinkling

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in a large bowl (reserving 3 tablespoons of cheese). Spoon into buttered souffle dish. Top with reserved cheese and sprinkle lightly with paprika. Bake until top is golden, 25 to 30 minutes.

1 pkg. (16 oz.) elbow macaroni, uncooked
1 lb. lean ground beef
1 each green and red bell pepper, finely chopped
1/2 cup KRAFT Tuscan House Italian Dressing
2/3 cup flour
1 qt. (4 cups) milk
2 pkg. (8 oz. each) KRAFT Shredded Sharp Cheddar Cheese
1 tsp. GREY POUPON Dijon Mustard
1/4 tsp. ground black pepper
2 cans (10 oz. each) RO*TEL Diced Tomatoes & Green Chilies, drained

Steps:

  • Heat oven to 350°F.
  • Cook macaroni as directed on package, omitting salt. Meanwhile, brown meat with bell peppers in large skillet; drain.
  • Heat dressing in large saucepan. Add flour; cook and stir 1 min. or until bubbly. Gradually whisk in milk; cook and stir 6 to 8 min. or until thickened. Add cheese, mustard and black pepper; cook and stir 2 min. or until cheese is melted and mixture is well blended.
  • Drain macaroni. Add to cheese sauce; mix well. Stir in meat mixture and tomatoes and green chilies. Spoon into casserole dish sprayed with cooking spray.
  • Bake 25 to 35 min. or until golden brown and sauce is bubbly. Let stand 2 min. before serving.

½ (16 ounce) package rotini pasta
⅓ cup vegetable oil
¼ cup fresh lime juice
2 tablespoons chili powder, or to taste
2 teaspoons ground cumin
½ teaspoon salt
2 cloves garlic, crushed
1 ½ cups whole kernel corn
1 (15 ounce) can black beans, drained and rinsed
½ cup diced green bell pepper
½ cup diced red bell pepper
½ cup fresh cilantro leaves
1 cup chopped roma (plum) tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic. Stir in pasta and set aside to cool to room temperature, stirring occasionally.
  • Stir in corn, beans, green pepper, red pepper and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with tomatoes and remaining cilantro. Serve chilled or at room temperature.

1 (15-ounce) can corn
1 (15-ounce) can reduced sodium black beans (drained and rinsed)
2 cups halved cherry tomatoes
2 large avocados (peeled, pitted, and diced)
3 whole green onions (thinly sliced)
1 large jalapeno (cored, seeded, and diced)
1/3 cup chopped cilantro
1/4 cup crumbled feta cheese
3/4 cup nonfat plain Greek yogurt
2 tablespoons extra-virgin olive oil
Zest of 2 limes (plus 2 tablespoons freshly squeezed lime juice)
1 teaspoon Tabasco (or similar hot sauce)
1/2 teaspoon kosher salt
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika

Steps:

  • Cook the pasta to al dente according to package instructions. Rinse with cool water, drain, and place in a large serving bowl. Add the corn, black beans, cherry tomatoes, avocados, green onions, jalapeno, and cilantro.
  • To make the dressing, in a small bowl or large measuring cup, stir together the Greek yogurt, olive oil, lime zest and juice, hot sauce, salt, chili powder, and smoked paprika. Taste and add additional salt or spices as desired. Pour over the pasta mixture. Toss to coat, then sprinkle the feta over the top. 2 tablespoons olive oil

1 dash cayenne pepper
1 1/2 cups diced tomatoes
3/4 cup corn kernel, fresh or frozen
2 jalapeno peppers, seeded and finely chopped
1 1/2 cups reduced-sodium fat-free chicken broth
12 ounces fettuccine, cooked as package directs
6 ounces goat cheese, crumbled
1/3 cup cilantro, chopped

Steps:

  • Peel sweet onions and cut into slices about 1/4-inch thick; separate slices into rings.
  • In a large deep skillet, heat olive oil over medium-low heat. Add onions, chicken, cumin, chili powder, salt and cayenne pepper and cook, stirring occasionally, until onions are soft and golden, about 25 minutes.
  • Stir in the tomatoes, corn and chiles and cook 2 minutes longer.

2 3/4 pounds plum tomatoes
For fresh tomato sauce:
1/3 cup olive oil
2 tablespoons plus 2 teaspoons minced garlic
2/3 cup chopped fresh cilantro
1/3 cup chopped red onion
2 tablespoons plus 2 teaspoons fresh lime juice
4 teaspoons minced serrano or jalapeño chilies
4 teaspoons tomato paste
2 3/4 teaspoons chili powder
For pasta:
12 ounces fusilli or other corkscrew pasta
1 1/3 cups (about 6 ounces) crumbled feta cheese
1/4 cup chopped fresh cilantro

Steps:

  • Prepare tomatoes:
  • Bring medium pot of water to boil. Fill medium bowl with cold water and place on work surface close to pot. Cut shallow X through skin at bottom of tomatoes. Working in batches, add tomatoes to boiling water and cook 30 seconds to blanch. Using slotted spoon, transfer each batch of tomatoes to cold water to cool quickly
  • Using small sharp knife as aid and starting at X on bottom, pull skin off tomatoes. Using same knife, make neat sone-shaped incision around core at stem end of each tomato; remove cores. Cut tomatoes in half crosswise; squeeze out seeds. Cut tomatoes into small dice and place in large bowl. Season with salt.
  • Make fresh tomato sauce:
  • Heat oil in heavy medium skillet over high heat. Add garlic and sauté just until fragrant, about 30 seconds. Pour garlic oil over tomatoes and toss to blend. Mix in cilantro, onion, lime juice, chilies, tomato paste and chili powder. (Can be prepared 2 hours ahead. Let stand at room temperature.)
  • Make pasta:
  • Cook fusilli in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain fusilli well. Add fusilli and half of cheese to tomato sauce; toss to blend. Season pasta to taste with salt and pepper. Transfer past to large shallow serving bowl. Sprinkle with remaining cheese. Garnish with chopped cilantro and serve.

Steps:

  • In a large skillet cook the onion in the oil over moderately low heat, stirring occasionally, until it is softened, add the garlic, the bell pepper, the chili powder, the cumin, and the cayenne, and cook the mixture, stirring, for 1 minute. Add the turkey and cook the mixture over moderately high heat, stirring and breaking up the turkey with a wooden spoon, for 3 to 4 minutes, or until the turkey is no longer pink. Stir in the tomatoes with the juice, breaking them up, the red pepper flakes, the chopped coriander, and salt and pepper to taste and simmer the sauce, stirring occasionally, for 10 minutes, or until it is thickened.
  • While the sauce is simmering, in a kettle of boiling salted water cook the rigatoni untul it is al dente, drain it well, and divide it between 2 bowls. Divide the sauce between the bowls, sprinkle it with the Monterey Jack, and garnish each serving with a coriander sprig.
