SOUTHWESTERN LENTIL AND BROWN RICE BAKE
Southwestern Lentil and Brown Rice Bake is cheesy, delicious meatless comfort food even a carnivore will love and is super easy to prepare! Simply combine everything in a baking dish, pop it in the oven and let it bake away while you do other things.

Steps:
- Preheat oven to 375 degrees.
- Combine all ingredients, except the cheese, in a deep 2-3 quart glass or ceramic baking dish and mix well. Cover with aluminum foil and bake 1 1/2 hours, stirring once while the mixture is baking.
- Remove the foil, stir in half the cheese and place the remaining cheese over the top.
- Return to oven (uncovered) and bake until cheese has melted, approximately 20 minutes.
- Allow to stand 10 minutes before serving.
- Garnish with chopped fresh cilantro.

Steps:
- Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

- Mix together all ingredients except green chiles and cheese.
- Divide mix in half.
- Place half in greased 8 inch square baking dish.
- Mix together green chiles and cheese; lay on top of corn mixture in pan.
- Cover with remaining mixture.
- Bake in a 350 degree oven for 35 minutes.

This is an easy, yet very tasty spaghetti casserole, which reminds me of the spaghetti they used to serve us in elementary school. I loved their spaghetti! I normally only brought my lunch, but not on spaghetti day!

Steps:
- Cook spaghetti per package direcions.
- Combine milk and egg, mix well.
- Combine drained spaghetti, milk and egg; mix well.
- Pour spaghetti mixture into a buttered 9X13 inch casserole dish.
- Brown ground beef with onion, bell pepper and garlic in a large skillet; drain.
- Return drained meat back into the skillet and add seasonings; Cook for 2 minutes.
- Stir in tomato sauce and cook for 2 more minutes.
- Spread meat mixture over spaghetti.
- Sprinkle with cheese.
- Bake at 425°F for 10 minutes or until cheese melts and is bubbly.
- Remove from oven and let stand for 10 minutes.

- Preheat the broiler to high and position the rack 8 inches from the heat.
- Bring a large pot of water to boil; salt the boiling water and cook the pasta until slightly undercooked-a little chewy at the center.
- While the water is coming to a boil, preheat a large skillet over med-high heat with the vegetable oil.
- Season the chicken with cumin, coriander, chili powder, salt, and pepper; add the seasoned chicken to the hot skillet and cook 4-5 minutes or until lightly browned.
- Add in the onions, garlic, and jalapeno peppers; continue to cook 5 minutes.
- While the chicken is cooking with the onions, make the cheddar sauce.
- In a medium saucepan, melt the butter and add the flour to it.
- Cook 1-2 minutes over medium heat, then whisk in the milk.
- When the milk comes to a bubble, stir in the cheese, cilantro, and parsley with a wooden spoon.
- Season with a little salt and pepper; remove cheese sauce from heat.
- Once the pasta is cooked, drain it and add back into the large pot.
- Add in the contents of the chicken skillet and all the cheddar sauce; stir to combine.
- Transfer mixture to a baking dish and place under the broiler to lightly brown.
