2-1/2 pounds ground beef
2 envelopes taco seasoning
2/3 cup water
1 can (16 ounces) kidney beans, rinsed and drained
1 cup shredded Monterey Jack or pepper jack cheese
2 large eggs, lightly beaten
1 cup 2% milk
1-1/2 cups biscuit/baking mix
1 cup sour cream
1 cup shredded cheddar cheese
2 cups shredded lettuce
1 medium tomato, diced
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat and simmer for 5 minutes. Stir in beans., Spoon meat mixture into a greased 8-in. square baking dish. Sprinkle with Monterey Jack cheese. In a large bowl, combine the eggs, milk and biscuit mix until moistened. Pour over cheese. , Bake, uncovered, at 400° for 20-25 minutes or until lightly browned and a knife inserted in the center comes out clean. Spread with sour cream. Top with cheddar cheese, lettuce, tomato and olives.

1 cup shredded reduced-fat cheddar cheese
1 cup salsa
1 cup reduced-fat sour cream
1/4 teaspoon pepper
1/2 cup chopped red onion
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded reduced-fat Mexican cheese blend

Steps:

  • In a small saucepan, bring rice and water to a boil. Reduce heat; simmer, covered, until rice is tender, 35-40 minutes., Preheat oven to 350°. Place beans, corn, tomatoes, cheddar cheese and rice in a large bowl; stir in salsa, sour cream and pepper. Transfer to a shallow 2-1/2-qt. baking dish coated with cooking spray. Sprinkle with onion and olives. , Bake, uncovered, 30 minutes. Sprinkle with Mexican cheese; bake, uncovered, until heated through and cheese is melted, 5-10 minutes. Let stand 10 minutes before serving.

A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

1 pound lean ground beef
2 cloves garlic, minced
1 onion, chopped
2 teaspoons chili powder
2 (15 ounce) cans black beans, rinsed and drained
2 (8.75 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups fresh salsa
5 cups crushed plain tortilla chips
3 cups shredded Cheddar cheese
1 large fresh tomato, finely chopped
3 green onions, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
  • In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
  • Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
  • Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

I came up with this recipe using other recipes on this site. It was awsome! Even my picky boyfriend loved it. You don't have to use ground beef and turkey. I just usually pre portion my meat that way.

1/4 lb lean ground beef
1/3 lb ground turkey breast
1 cup Mexican-style corn
1 cup diced tomatoes with sweet onions, canned
1 (2 1/4 ounce) can diced black olives, diced, drained
1 (4 ounce) can green chilies, diced
1 1/4 cups enchilada sauce, medium
1 1/2 tablespoons Worcestershire sauce
2/3 cup refried beans
2 cups reduced-fat sharp cheddar cheese, shredded, divided
1 cup Fritos corn chips, crushed
1 package pillsbury frozen 9-inch deep dish pie shell, do not pre-cook

Steps:

  • Pre-heat oven to 400 degrese. Brown turkey and beef together in a large skillet. Drain out liquid and fat. Add worchestershire sauce, corn blend, and diced tomatoes (no need to drain). Cook for 1 minute. Add black olives, green chilis, and enchilada sauce. Let simmer for 3 minutes. While the meat mixture is simmering sprinkle 1 cup of cheese on the bottom of one pie crust. Spread refried beans over the cheese. Sprinkle corn chips over beans, top with beef mixture, and remaining cheese. Remove the second crust (frozen) from pie pan using a knife. Center the shell on top of the filled pie crust. Let thaw for 5-10 minutes. Crimp edges together. Cut 2-3 slits on the top of the pie. Bake 45-50 minutes. After 25 minutes cover edges of pie with foil. Bake until golden brown.

This is an easy, yet very tasty spaghetti casserole, which reminds me of the spaghetti they used to serve us in elementary school. I loved their spaghetti! I normally only brought my lunch, but not on spaghetti day!

8 ounces uncooked spaghetti
1/2 cup milk
1 egg
1 lb ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans tomato sauce
1/2 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese

Steps:

  • Cook spaghetti per package direcions.
  • Combine milk and egg, mix well.
  • Combine drained spaghetti, milk and egg; mix well.
  • Pour spaghetti mixture into a buttered 9X13 inch casserole dish.
  • Brown ground beef with onion, bell pepper and garlic in a large skillet; drain.
  • Return drained meat back into the skillet and add seasonings; Cook for 2 minutes.
  • Stir in tomato sauce and cook for 2 more minutes.
  • Spread meat mixture over spaghetti.
  • Sprinkle with cheese.
  • Bake at 425°F for 10 minutes or until cheese melts and is bubbly.
  • Remove from oven and let stand for 10 minutes.

EASY MEXI BAKE (LOW FAT)

This is a super-easy low fat vegetarian dish that takes only minutes to throw together, it makes a great light weeknight meal served with a small side salad, you can use stewed tomatoes in place diced and use black beans in place of kidney beans. Top this with low-fat sour cream and salsa.

8 corn tortillas
1 1/2 cups reduced-fat cheddar cheese (or use full-fat cheese)

Steps:

  • Set oven to 400 degrees.
  • Combine first 7 ingredients in a mixing bowl and mix thoroughly.
  • Grease a 2-quart casserole and layer as follows, 4 tortillas (overlapping each other to cover the bottom of the dish, then half of the bean mixture, then half of the cheese.
  • Repeat the layers.
  • Bake for 12-15 minutes or until the cheese melts (do not over bake or the tortillas will become too soft).

2 cups (8 ounces) uncooked elbow macaroni
2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, drained
1-1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded Monterey Jack cheese
2 jalapeno peppers, seeded and chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

I have been making this recipe for years, it is a modified version of a recipe the cook at the childcare centre i work at used to make. I have also had it published in Australia's super foods mag. It is great to make for family functions- everyone loves it.

1 tablespoon oil
1 onion, finely chopped
1 red capsicum, seeded and diced
1 (440 g) can corn kernels
1 (430 g) can 3 bean mix
1 (180 g) jar mushroom pieces
1 (500 g) jar pasta sauce
1 (35 g) packet taco seasoning mix
500 g rice, cooked and drained
1 (2 ml) container sour cream
2 cups grated tasty cheese
500 g beef mince

Steps:

  • Heat oil in a large frying pan.
  • Saute onion and capsicum for 3 minutes.
  • Drain remaining vegetables, then stir through capsicum mixture.
  • Saute for 2 minutes.
  • Remove from pan.
  • Brown mince in same pan breaking up with a spoon as it cooks.
  • Stir in Vegetables.
  • Add sauce and seasoning mix.
  • Simmer for 20 minutes.
  • Spoon rice into a greased baking dish.
  • Top with mince, sour cream and cheese.
  • Bake in a moderate oven (180C) for 15 to 20 minutes.

  • In a bowl, combine olives, chili powder, cumin and salt; set aside 2 tablespoons.   • Bake, uncovered at 350 degrees.
  • Remove from oven, sprinkle with remaining cup of cheese and continue baking for another 10 minutes.
  • Let stand 10 minutes before serving.
  • Note: I didn't have the patience to wait for the rice to cook so I increased the water by 1/2 cup and the rice cooked in the oven.

1 tablespoon oil
1 large onion, chopped
1 garlic clove, minced
1 lb ground beef or 1 lb ground turkey
1 1/2 cups canned diced tomatoes
1 1/2 teaspoons dried basil
1 teaspoon dried oregano
1 -2 tablespoon chili powder
salt and pepper, to taste
2 cups cooked white rice or 2 cups brown rice
1 cup cooked black beans
1/2 cup corn
1 2/3 cups sharp cheddar cheese, shredded and divided
4 -6 green bell peppers, halved lengthwise and seeded

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a large skillet, add onion and cook over medium heat until soft.
  • Add garlic and beef, cook beef until no longer pink, breaking up meat with a spoon.
  • Add tomatoes, basil, oregano, chili powder, salt and pepper, reduce heat and simmer 10 minutes.
  • In a large bowl, combine rice, beans and corn.
  • Add turkey mixture and 1 cup of cheese, mix to combine.
  • Spoon stuffing into pepper halves and place in a baking dish.
  • Add 1/4 cup water to the bottom of the dish, cover with foil and bake 30-40 minutes or until peppers are tender.
  • Remove foil, top with remaining cheese and bake until cheese is melted.
