200g long-stem broccoli
1 tbsp olive oil
1 onion , finely sliced
2 garlic cloves , finely sliced

Steps:

  • Bring a large pan of water to the boil, add the broccoli and cook for 3-5 mins until just tender. Drain and set aside. Heat the oil in a large frying pan over a high heat, add the onion and fry for 2-3 mins until golden and starting to caramelise.
  • Stir in the garlic and fry for 1 min more, then throw in the broccoli and cook for 2 mins until the broccoli is warmed through and coated in the onion and garlic.

1 tablespoon olive oil
½ teaspoon crushed red pepper flakes
salt, to taste

Steps:

  • Rinse and pat dry the broccoli.
  • Heat the olive oil in a large skillet over medium heat, add the crushed red pepper and heat 1 minute. Cook and stir the broccoli in the skillet until it begins to get crispy, 5 to 7 minutes. Season with salt to serve.

Olives and thinly sliced garlic give it verve, contrasting nicely with the sweetness of the shallots. You can cook the broccoli and fry the shallots a day ahead. Store the broccoli in the refrigerator, bringing to room temperature before serving; keep the fried shallots in a paper towel-lined container or a jar with an airtight lid. If they wilt, you can crisp them back up by popping them briefly in the oven. Be sure to save the shallot-flavored oil to use for sautéeing the garlic and olives right before serving.

2 1/2 pounds broccoli (about 2 bunches), stems peeled and cut into 1/2-inch pieces, florets cut into bite-size pieces
1/2 cup extra-virgin olive oil, plus more for drizzling
4 shallots, sliced into rings
5 fat garlic cloves, thinly sliced
1/4 cup chopped pitted olives, such as Kalamata, Niçoise or Picholine (a combination of black and green is nice)
1 1/2 teaspoons kosher salt, or to taste
2 teaspoons sherry vinegar, or to taste (optional)

Steps:

  • Bring a large pot of salted water to a boil. Add broccoli and cook until just tender, 1 to 3 minutes. Drain well and transfer to a large bowl.
  • Heat oil in a small pot over medium heat. In batches, so they don't crowd the pot, fry shallots until light golden, 4 to 6 minutes, using a slotted spoon to transfer them to a paper towel-lined plate once they've cooked. Sprinkle the fried shallots with salt as you go. If the shallots start to brown too quickly, lower the heat.
  • Keep the oil in the pot, and carefully stir in garlic and olives. Cook until garlic starts to turn golden, about 3 minutes. Pour the hot oil, including garlic and olives, over the broccoli, then sprinkle with salt and taste. If you'd like it to be brighter, toss in the vinegar. Serve broccoli with fried shallots on top.

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

1 teaspoon cumin seed, lightly pan toasted then ground
1 1/2 tablespoons olive oil
1 medium red onion, thinly sliced
1 garlic clove, finely chopped
1 teaspoon cider vinegar
1/2 teaspoon salt (to taste)
1/8 teaspoon fresh ground pepper (to taste)
1 tablespoon unsalted butter

Steps:

  • Bring a large skillet or wide deep saucepan of water to a boil.
  • Add the broccoli and cook, uncovered, until crisp-tender and still bright green, 6 to 7 minutes.
  • While the broccoli is cooking, heat a skillet and toast cumin seeds for 1 to 2 minutes or until very fragrant. (don't burn it!). Remove from heat and crush or grind in a spice grinder.
  • Heat the oil in the same skillet over medium heat.
  • Add the onion and garlic, cook while stirring, until the onion is limp, about 4 minutes.
  • Add the remaining ingredients, including the cumin, and cook for 1 minute.
  • Drain broccoli well and transfer to a serving platter or shallow bowl.
  • Spoon onions on top. Serve hot.

1 lb round steak, thinly sliced
4 cloves garlic, chopped
2 teaspoons medium sherry (optional)
1 1/2 tablespoons cornstarch
1/4 cup lite olive oil (or other oil)
3/4 lb broccoli, cut into small flowerettes
1/4 cup chicken stock
4 green onions, cut into 1" lengths
1 1/2 cups small mushrooms, sliced
2 tablespoons soy sauce (or a bit more)
salt and pepper

Steps:

  • Slice the steak very thinly, the easiest way to do this is to have it half frozen when you slice it.
  • Put sliced steak in a bowl with the sherry, soy sauce and the cornstarch, and a little salt, let it rest for 20 minutes.
  • Put 2 tbsp oil in a skillet.
  • Add garlic, stir fry for 1-2 minutes.
  • add mushrooms stir fry 2 minutes.
  • Remove and keep warm.
  • put 2 tbsp of oil in the skillet and stir fry the beef until nicely browned, remove and keep warm.
  • Add 1 tbsp oil and stir fry the green onions for 1 min, remove and keep warm.
  • Pour in the chicken stock, heat to bubbling add Broccoli cover and steam for 3- 4 minutes.
  • remove lid and put all the ingredient together.
  • Heat through but do not over cook.
  • Serve over rice or noodles.

1/4 cup red-wine vinegar
3/4 teaspoon salt
3 bunches broccoli (about 3 pounds), lower 3 inches of stems discarded
1/4 cup vegetable oil

Steps:

  • In a small saucepan, bring onions, vinegar, and salt to a boil, covered, and remove pan from heat. Cool onion mixture, uncovered, and drain.
  • Bring a kettle of salted water to a boil for broccoli. Cut broccoli into 2 1/2-inch flowerets and cut remaining stems into 1/4-inch-thick slices. Blanch flowerets 3 minutes and drain well in a colander.
  • In a large skillet heat 2 tablespoons oil over moderately high heat until hot but not smoking and sauté half of flowerets and stems with salt to taste, stirring occasionally, until crisp-tender, 3 to 5 minutes, transferring to a bowl.
