1 can (11 ounces) whole kernel sweet corn
1 can (16 ounces) pinto beans
1 can (2¼ ounces) olives
1 cup bell pepper
1 cup Hidden Valley® Original Ranch® Spicy Ranch Dressing
1 cup (about 2 medium) tomatoes
2 cups chicken
6 cornbread muffins

Steps:

  • In large, clear salad bowl or trifle dish, layer half of the cornbread, followed by next three ingredients. Top with ½ cup of the dressing. Layer next four ingredients, remaining cornbread, and remaining dressing. Sprinkle with cheese.
  • Cover and refrigerate several hours or overnight.

1 tablespoon olive oil
1 tablespoon fajita seasoning mix or 1 tablespoon taco seasoning
4 1/2 cups lettuce, assorted, torn
2 tomatoes, cut in wedges
1/2 cucumber, peeled and slices
4 green onions, chopped
1 avocado, diced
1 cup corn, thawed
1 cup black beans
1/4 cup cilantro, chopped
cilantro salad dressing (purchased or use recipe 30146 "Cilantro Dressing for Salads" by Bergy)

Steps:

  • Rub chicken with olive oil and fajita seasoning. Grill over lot heat until done. Set aside and keep warm.
  • While the chicken is grilling, prepare and combine the remaining salad ingredients, except the dressing.
  • Slice chicken 1/4" thick, against the grain, and add to salad. Toss with dressing to taste.
  • Serve immediately.

1 (16 ounce) can pinto beans, rinsed and drained
½ cup canned corn

½ cup diced bell pepper
2 cups shredded cooked chicken
2 tablespoons crumbled cooked bacon

  • Mix ranch dressing and salsa together in a small bowl.

3/4 cup olive oil
4 green onions, sliced
3 tablespoons fresh lime juice
1 tablespoon minced canned chipotle chilies*
1 tablespoon ground cumin
3/4 cup chopped fresh cilantro
4 skinless boneless chicken breast halves
4 ears fresh corn, shucked
2 poblano chilies,** quartered lengthwise, seeded
2 red bell peppers, quartered lengthwise, seeded
3 1/2 cups water
1 teaspoon salt
2 cups long-grain white rice

Steps:

  • Whisk first 5 ingredients and 1/2 cup cilantro in small bowl. Season dressing to taste with salt and pepper. Place chicken, corn, chilies and bell peppers on rimmed baking sheet. Brush 1/2 cup dressing over both sides of chicken and vegetables. Let stand 30 minutes.
  • Bring 3 1/2 cups water and 1 teaspoon salt to boil in heavy large saucepan. Mix in rice. Cover, reduce heat to low and cook until rice is tender and water is absorbed, about 15 minutes. Remove from heat. Keep pan covered and let rice stand 5 minutes. Transfer rice to large bowl; fluff with fork. Pour 1/2 cup dressing over hot rice and toss; let cool.
  • Prepare barbecue (medium heat). Grill chicken and vegetables until chicken is cooked through and vegetables are tender and slightly charred, about 6 minutes per side. Cut chicken, peppers and chilies into strips. Cut corn off cobs. Toss chicken and vegetables in medium bowl with enough dressing to coat; add to rice and toss again. Season to taste with salt and pepper. Divide salad among 6 plates. Sprinkle with remaining 1/4 cup cilantro and serve.

2 large eggs, beaten
2/3 cup 2% milk
1 can (4 ounces) chopped green chiles
2 cans (15 ounces each) black beans, rinsed and drained
2 cups frozen corn, thawed
1 can (14-1/2 ounces) diced tomatoes, drained
1 medium green pepper, chopped
1/2 cup chopped red onion
3 cups shredded sharp cheddar cheese, divided
1/3 cup water
1/3 cup cider vinegar
1/3 cup canola oil
1 envelope taco seasoning

Steps:

  • In a large bowl, combine the cornbread mix, eggs, milk and chiles until blended. Pour into a greased 13x9-in. baking pan. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a large bowl, combine the beans, corn, tomatoes, green pepper, onion and 2 cups cheese. In a small bowl, whisk the water, vinegar, oil and taco seasoning. Pour over bean mixture; toss to coat. Cover and refrigerate for at least 2 hours., Cut cornbread into 1-in. cubes. In a large serving bowl, layer the cornbread, bean mixture and remaining cheese. 1 pkg. (6 oz.) STOVE TOP Cornbread Stuffing Mix

Steps:

  • In a large skillet, heat canola oil over medium heat. Add chicken and onion and cook until onion is translucent. Stir with a large spatula breaking up the ground chicken.
  • Add bell pepper, corn, black beans and tomato and stir, cooking for 8 minutes. Remove from heat and set aside.
  • In a separate large saucepan, boil 1 ½ cups water and butter. Stir in stuffing mix and cover.
  • Remove from heat. Let stand 5 minutes and add to the chicken mixture. Stir to combine ingredients and serve.

1 (1 ounce) package ranch dressing mix
1 cup mayonnaise
1 cup sour cream
1 (8 ounce) package cornbread, prepared
2 (15 ounce) cans whole kernel corn, drained
2 (15 ounce) cans red kidney beans, rinsed and drained
4 roma tomatoes, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small red onion, chopped
4 green onions, sliced
8 ounces cheddar cheese, shredded
6 slices bacon, cooked and crumbled

Steps:

  • Prepare 8" pan of cornbread according to package directions. When cooled, cut into large cubes and toast in 375 degree oven for about 10 minutes. Remove from oven to cool. Set aside and prepare dressing using first three ingredients.
  • Using 1/2 of cornbread, break into smaller chunks and place in glass serving dish.
