Montezuma Pie image

Easy make ahead Mexican dish with only 5 ingredients. Mild dish can be spiced up as desired by substituting hot salsa and/or pepper jack cheese. Prep time does not include refrigeration time.

Ingredients

6 cups boneless cooked chicken breasts, cut into 1-inch pieces
2 cups chunky salsa
2 cups sour cream
12 corn tortillas, cut into pieces
24 ounces monterey jack cheese, shredded

Steps:

Arrange half the chicken in greased 9x13 baking dish.
Dot with half the salsa, then half the sour cream.
Top with half the tortilla pieces and half the cheese. Repeat layers ending with cheese.
Cover and refrigerate overnight.
Bake covered at 375 for 40-50 minutes.
Uncover and bake additional 10 minutes or until bubbly.

Saute onion and garlic until onion is translucent. Add chiles, tomato sauce, tomatoes, broth, and jalapeno. Mix and simmer for 30 minutes. Allow to cool.
In a casserole dish, alternate layers of tortilla chips, chicken, tomato sauce mixture and cheese. Pour whipping cream over top. Refrigerate until time to cook.
