GERMAN CUCUMBER SALAD RECIPE



German Cucumber Salad Recipe image

German Cucumber Salad is a refreshing summer salad made with simple ingredients that are a staple in most kitchens! This recipe is easy to make, budget-friendly, and perfect for a potluck, family dinner, or summer cookout.

2 English cucumbers ( or 4 medium cucumbers)
1/2 cup sour cream
1 tbsp white vinegar
1 tsp sugar
1 tbsp dill (fresh or frozen )
1/2 tsp salt
black pepper ( to taste)

Steps:

  • Peel the cucumbers if desired and thinly slice them with a mandoline slicer. The thinner the better! Put them in a large salad bowl.
  • In a medium bowl whisk together the sour cream, vinegar, sugar, and dill. Add salt and pepper to taste.
  • Pour dressing over cucumber slices and toss until combined. Cover and let chill in the fridge for at least 4 hours or overnight.
  • Serve with a slotted spoon.

Authentic German Potato Salad image

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

2 tomatoes, sliced
4 ounces mozzarella cheese, sliced
½ teaspoon dried Italian seasoning

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Arrange the tomato slices in a single layer in the bottom and up the sides of a deep dish pie pan. Arrange slices of mozzarella cheese in the center. Sprinkle with the Italian seasoning.
  • Bake for 5 minutes in the preheated oven, or until the cheese is melted. Serve hot or cold.

  • Cut your tomatoes into bite sized pieces. Whatever tomato juice is left you want to keep and add to the bowl. It will create a nice juice. Cube the cucumber, set aside.
  • Cut the ends off of the onion and cut it down the middle. Peel away the outside layer and prepare to slice. Slice it as thin as possible. The thinner you slice it, the more juice will come out when you squeeze it. Yep, squeeze it.
  • Very important! These next steps account for the secret ingredients. ;) You'll want to salt the slivered onions generously immediately after you cut them. The salt will account for the entire dish. I use coarse salt, but in a pinch you could use regular table salt. Pick up handfuls of onions at a time and squeeze them like crazy over the tomato/cucumber mixture.
  • If you are going to refrigerate the salad before eating (any length of time) do it now. If you refrigerate after you add the oil and vinegar it will get soggy.

  • Wash the cucumbers and peel, if desired (we usually don't peel the cucumbers when making the recipe). Thinly slice the cucumbers using a mandolin or the slicing side of a four-sided box grater. Add the cucumber slices to a bowl.
  • Sprinkle 1 teaspoon of salt over the cucumbers and let them sit for 20 minutes. This will remove excess moisture. After the 20 minutes, give the cucumber a squeeze to remove even more water. Be sure to drain any excess liquid from the bowl.
  • While you're waiting for the cucumber slices, wash, dry, and finely chop the dill. Make sure to remove the hard stems first. Also, peel and finely chop a small onion. Add both (dill and onion) to the cucumber bowl after the 20 minutes are up and you have drained the liquid.
  • Add the oil, vinegar, sour cream, sugar, and pepper to the bowl. Mix well. Add more salt (be careful here since you added quite a bit of salt earlier!) and/or pepper if desired. Serve and enjoy!
