SHEET PAN GRILLED CHEESE SANDWICHES

Sheet Pan Grilled Cheese Sandwiches image

Everyone loves a grilled cheese, but when making sandwiches for a crowd, who wants to stand over the stove making them one by one? Not me! My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

Provided by Kardea Brown

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 15

12 slices assorted bread, such as Texas Toast, pumpernickel, and sourdough
1 stick (8 tablespoons) salted butter, at room temperature
12 slices assorted cheese, such as American cheese, Cheddar and Muenster cheese
1 cup Kardea's Pimento Cheese, recipe follows
Toppings, such as sliced roasted red peppers, pickles, sliced ham, sliced turkey, sliced tomatoes, fresh basil, sliced red onion and/or pulled pork
8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
8 ounces cream cheese, at room temperature
4 ounces white Cheddar, shredded, preferably Vermont Cheddar (about 1 cup)
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
  • Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
  • Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.

  • Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.

Time 30m

Yield 4 servings

Number Of Ingredients 2

8 slices smoked bacon, cooked and broken into 1-inch pieces,
2 vine-ripened tomatoes, sliced, and drained on paper towels for 5 minutes

Steps:

  • Heat a large skillet over medium-low heat. Place 4 slices of bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet; swirl around to coat the pan.
  • Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook slowly, adjusting the heat as needed to melt the cheese completely before the sandwiches are brown, about 3 to 4 minutes more. Repeat with the other 2 sandwiches. Serve.

  • Choose Your Ingredients. There are just a few staple ingredients you’ll need for making a great grilled cheese: bread, cheese, and butter. You can use basic sandwich bread and a couple slices of your favorite cheese.
  • Build Your Sandwich. Once you’ve chosen your ingredients, it’s time to build your sandwich. Simply place the cheese between the two slices of bread. = There are three slices of cheese in this sandwich.
  • Butter One Side of the Sandwich and Add to a Hot Skillet. Heat a small skillet or grill plate over medium high heat. Once you’ve built your sandwich, evenly spread about a ½ Tbsp.
  • Butter Other Side and Flip. While the sandwich is cooking on the first side, you can then add the butter to the second side of the sandwich. Just like the first side, evenly spread about a ½ Tbsp.
  • Flip the Sandwich. Using a spatula, flip the sandwich to the other buttered side. Cook the sandwich on the second side for about 2-3 minutes, or until golden brown.
  • Transfer the Sandwich to a Plate and Enjoy. As soon as the sandwich has finished cooking on both sides, remove from the hot skillet and transfer to a plate.

  • Tomatoes. When I was a kid, we used to dip our grilled cheese sandwiches in ketchup, so it makes sense that tomato slices would taste good inside. In fact, this is one of my absolute favorite things to put in a grilled cheese sandwich.
  • Bacon. As you know, bacon makes anything better. Adding bacon to your grilled cheese sandwich adds loads of flavor and just the right amount of crunch.
  • Onions. You might wonder how a cheese and onion sandwich can taste that good, but it really does. When I was in college I worked in a bar and the cook would make grilled cheese and onion sandwiches for us after we closed.
  • Mushrooms and Poblanos. There is something really magical about the mixture of mushrooms and poblano peppers. I had them combined in a soft taco once and decided to try the mixture in a grilled cheese sandwich.
  • Pickles. I love pickles and adding them to grilled cheese sandwiches gives them the perfect touch of saltiness and crunch. You want to use pickle slices for the best results.
  • Cold Cuts. Thinly sliced deli meats are perfect for a grilled cheese sandwich. I personally think prosciutto is the best choice because it has a great taste that won’t overwhelm the cheese you pick for your sandwich.
  • Spicy Stuff. If you like your food with a kick, you can certainly spice up a grilled cheese sandwich. Start with pepperjack cheese, then pile on pickled or fresh jalapenos, chipotles or hot sauce.
