- Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

- Blend all ingredients except bread and butter in a medium bowl.
- Butter one side of each slice of bread.
- Put sandwiches together using about 1/2 cup of filling each.
- Place buttered side of bread on the outside of sandwich.
- Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.

SHEET PAN GRILLED CHEESE SANDWICHES
Everyone loves a grilled cheese, but when making sandwiches for a crowd, who wants to stand over the stove making them one by one? Not me! My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

- Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
- Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
- Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
- Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
- Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
- Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

- Heat a large skillet over medium-low heat. Place 4 slices of bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet; swirl around to coat the pan.
- Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook slowly, adjusting the heat as needed to melt the cheese completely before the sandwiches are brown, about 3 to 4 minutes more. Repeat with the other 2 sandwiches. Serve.
