BAKED SHELLS AND BROCCOLI WITH HAM AND CHEESY-CREAMY CAULIFLOWER SAUCE

Baked Shells and Broccoli with Ham and Cheesy-Creamy Cauliflower Sauce image

Adding toasted whole-wheat breadcrumbs gives this dish a nice crunch that balances out the creaminess of the sauce. Rather than baking the shells with the crumbs on top (which can make them soggy), toast the breadcrumbs separately, and toss a handful over each serving right before you put it on the table.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 55m

Number Of Ingredients 13

1 teaspoon extra-virgin olive oil
1 small head cauliflower, cored and chopped (3 cups)
6 garlic cloves, roughly chopped
4 medium shallots, roughly chopped
Coarse salt and freshly ground black pepper
4 teaspoons all-purpose flour
4 cups skim milk
1/4 teaspoon freshly grated nutmeg
6 ounces pecorino cheese, grated (2 cups)
1/2 pound medium multigrain pasta shells
1/4 pound sliced smoked ham, chopped
1 medium bunch broccoli, trimmed and cut into florets (5 cups)
1/2 cup toasted whole-wheat panko (Japanese breadcrumbs), for serving (optional)

Steps:

  • Heat oil in a medium saucepan over medium heat. Add cauliflower, garlic, shallots, and 1/2 teaspoon salt; cook until softened but not brown, about 10 minutes, stirring occasionally. Sprinkle with flour; stir to coat well.
  • Gradually stir in milk; bring to a boil. Reduce heat; gently simmer until cauliflower is very soft, about 15 minutes. Let cool for 5 minutes. Transfer all to a blender, and puree with nutmeg and half the pecorino until smooth, about 2 minutes.
  • Preheat oven to 400 degrees. Meanwhile, bring a large pot of water to a boil. Cook pasta until slightly tender but not fully cooked, about 5 minutes. Drain well; return to pot. Add ham, broccoli, and cauliflower sauce; toss to combine. Transfer to a ovenproof 3 1/2-quart baking dish. Sprinkle with remaining pecorino, and bake until bubbling in center, about 30 minutes. Heat broiler, and broil until golden brown on top, 1 to 2 minutes. Let cool for 5 minutes. Divide among dishes, top with breadcrumbs, and serve immediately.

KETO HAM AND BROCCOLI CASSEROLE

Keto Ham and Broccoli Casserole image

This low carb broccoli ham casserole is an easy and delicious recipe to make with leftover ham, especially for a busy weeknight dinner. Only 5 ingredients needed to make this tasty low carb casserole and each serving has 5.1g net carbs.

Provided by Denise

Categories     Low Carb Main

Time 30m

Number Of Ingredients 5

8 oz ham, cooked and diced
2 cups broccoli, chopped and steamed
2 cup cauliflower, chopped and steamed
1 oz cream cheese
1 1/4 cup cheddar (divided into 1/2c and 3/4c)

Steps:

  • Preheat oven to 400 degrees F. Prepare a baking or casserole dish by spraying with nonstick cooking spray.
  • Chop and steam both the broccoli and cauliflower separately. You can do this anyway you wish. I like to use microwave steamer pot. But you can do it with boiling water or even use frozen. No matter which way you do it, make sure to drain off any excess liquid as that will make the casserole watery.
  • Add the cooked cauliflower, cream cheese and 1/2 cup of cheddar cheese to a high speed blender and blend until smooth and creamy. If it's too thick add a tablespoon of 2 of water. It should be thick and creamy though.
  • Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 15-20 minutes until browned well on the top.

Salt and freshly ground black pepper
12 oz. orecchiette pasta
4 Tbsp extra-virgin olive oil, (divided, plus more if desired)
1 1/2 Tbsp minced garlic ((4 cloves))
1 lb Italian sausage* ((can use mild or hot))
2/3 cup (1.6 oz) finely shredded Parmesan, (plus more for serving )
1 1/2 cups reserved pasta water, (divided)
Red pepper flakes, (for serving)

Steps:

  • Add 4 quarts of water to a large pot, bring to a boil over medium-high heat then season with salt (I use 2 Tbsp).

  • Crumble sausage in small chunks into skillet and cook, breaking up and tossing occasionally, until cooked through, about 7 minutes. Add garlic during last 2 minutes of cooking the sausage.
  • Pour in 1 cup of the pasta water into the sausage. Let it simmer for about a minute and reduce slightly. Add all dente pasta and cook while tossing, until tender, about 2 minutes.
  • Drizzle in remaining 3 Tbsp olive oil, season with red pepper flakes to taste and toss.
  • Sprinkle in parmesan, and toss to melt into sauce.

  • Fill a medium-sized pot half full with water, bring to a boil. Put broccoli and cauliflower pieces into the water and cook at a low boil until the vegetables are just beginning to get soft. The broccoli will cook faster than the cauliflower. If this is the case, use a slotted spoon to remove the broccoli. Check it often and don’t overcook as the vegetables will continue to cook in the oven.
  • While the vegetables are cooking, put cream cheese into a small bowl and stir in the cream cheese, onion powder, and garlic powder. Add pepper to taste.
