SPICY ASIAN SESAME PEANUTS WITH POPCORN



Spicy Asian Sesame Peanuts with Popcorn image

This spicy, salty, crunchy blend of chilies, peanuts and popcorn is one addictive snack.

Yield about 5 cups

Number Of Ingredients 12

2 tablespoons white sesame seeds
1 tablespoon toasted sesame oil
2 teaspoons low-sodium soy sauce
1 1/2 teaspoons finely grated fresh ginger
1 teaspoon five-spice powder
1 teaspoon crushed red pepper flakes
Kosher salt
Vegetable or canola oil, for the baking sheet
1 large egg white
4 cups unsalted raw peanuts
1 1/2 cups popcorn
3 tablespoons crushed dried chilies

Steps:

  • For the Asian sesame spice blend: Mix together the sesame seeds, sesame oil, soy sauce, ginger, five-spice powder, red pepper flakes and 1 1/2 teaspoons salt in a small bowl and set aside.
  • For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet with the oil.
  • Put the egg white in a large bowl and whisk until frothy. Add the peanuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet.
  • For the assembly: Stir the popcorn and chilies into the peanuts and transfer to a large bowl.

  • Pop popcorn in a hot air popper or microwave popper according to manufacturer's instructions. Pour into a large bowl.
  • Mix butter and sesame oil together in a small bowl. Drizzle over popcorn. Add Parmesan cheese, salt, and pepper; toss well to coat.

  • Place popcorn, sugar, oil, five spice powder and salt in a large kettle or pot with a tight fitting lid over medium heat. When corn begins to pop, shake the pot constantly. When popping slows, remove from heat, sprinkle with sesame seeds and transfer popped kettle corn to a bowl.

3 tablespoons canola oil
1/2 cup unpopped popcorn
2 tablespoons toasted sesame seeds
1 tablespoon salt
1 teaspoon fresh ground black pepper
onion powder

Steps:

  • Toast sesame seeds in a skillet on the stove until just golden. Crush them up with the salt in a mortar and pestle. This is an important step to get the seeds to release their yummy flavor and smell. If you don't have one of those, improvise, I used to use a coffee cup and the end of my whisk!
  • Put oil in a heavy cookpot that has a lid and place on the stove on high.
  • Add popcorn and put the lid on. Stay close by!
  • When popping slows to about a second in between pops, dump the popcorn into a large bowl.
  • Sprinkle with crushed sesame seeds and salt, pepper, and onion powder. Toss, and enjoy! Add more of the seasonings to your taste, other options are chili powder, garlic, curry.

I got a little creative one day and came up with this variation on my favorite snack, and I've made it frequently since. I make this on the stove top in an ordinary pan, but you could use an old-fashioned stove top popper. Don't use a Teflon coated pan or one with a shiny interior that you want to keep pretty.

2 teaspoons vegetable oil
1 teaspoon toasted sesame oil
1/2 cup unpopped popcorn
1/2 teaspoon red-hot chili oil (or to taste)
salt (to taste)

Steps:

  • Put vegetable and sesame oils in a large pot with a lid, and begin to heat on high heat.
  • When the oil is warmed, but not yet hot, add the unpopped popcorn, and immediately shake red hot chili oil onto the popcorn kernels.
  • Cover the pan and begin shaking immediately, holding the lid down and protecting your hands with potholders. Shake the pan until the popping slows. (I like to slightly raise the pan off the burner, shake the pan in a swirling motion, set it back down, then about two seconds later pick it up and shake it again, and so on.).
  • Transfer the popped corn to a bowl right away and salt to taste.

  • Wipe out the saucepan. Add the olive oil, sugar, sesame seeds, soy sauce, garlic powder and 2 teaspoons of salt and cook over moderate heat, stirring, until the sugar dissolves, about 3 minutes. Add the pistachios and cook, stirring, for 1 minute. Scrape the pistachios onto the prepared baking sheet and bake for about 10 minutes, until bubbling. Scrape the pistachio mixture into the popcorn and toss well. Let cool before serving.

  • In a large nonstick saucepan, heat the canola oil, sesame oil, popcorn and chiles over high heat until sizzling. Reduce the heat to moderate, add the sugar and cover. Cook, shaking the pan constantly, until half of the kernels are popped, about 4 minutes. Carefully remove the lid and add the sesame seeds, stirring once or twice. Cover the pan and cook, shaking, until the popping nearly stops.
  • Pour the kettle corn onto a baking sheet and sprinkle lightly with salt, tossing with your hands. Transfer the kettle corn to a bowl or an airtight container, discarding any unpopped kernels.
