This peanut butter pie is the real deal. No pudding or freezing. Any true Southerner knows a real peanut butter pie when they taste it and this is it. This recipe was passed on to me by a chef at a famous inn here in Virginia that served up some of the best pies in the state.

¾ cup confectioners' sugar
⅓ cup peanut butter
1 baked (9-inch) pie crust
2 cups milk
½ cup white sugar
⅓ cup all-purpose flour
2 egg yolks, beaten
⅛ teaspoon salt
2 teaspoons butter
1 teaspoon vanilla extract
1 (4 ounce) container frozen whipped topping, thawed

Steps:

  • Stir confectioners' sugar and peanut butter together in a bowl until crumbly. Remove 2 tablespoons peanut butter mixture to a small bowl and reserve as a garnish. Spread remaining peanut butter mixture into the bottom of the pie crust.
  • Whisk milk, white sugar, flour, egg yolks, and salt together in a saucepan over medium heat until mixture begins to bubble and thicken, 5 to 10 minutes. Remove from heat and stir in butter and vanilla. Pour milk mixture over peanut butter mixture and cool pie completely in refrigerator, at least 2 hours.
  • Spread whipped topping over chilled pie and sprinkle reserved 2 tablespoons peanut butter mixture over the top.

1 graham cracker pie crust (or chocolate Oreo crust)
8 ounces Philadelphia Cream Cheese
1/2 cup peanut butter
1 cup powdered sugar
1 teaspoon vanilla
1/2 cup milk
2 cups Cool Whip
chocolate syrup
2 tablespoons Kahlua (optional) or 2 tablespoons bailey's irish cream, to taste (optional)

Steps:

  • Mix together the first 5 ingredients (following crust) and fold in Cool Whip (add liqueur if desired).
  • Scoop and smooth into graham crust then garnish with drizzled chocolate syrup (sprinkle chopped peanuts on the top if desired).
  • Put in refrigerator 1 hour or longer before serving.

2 cups milk
1/2 cup sugar
4 tablespoons cornstarch
2 egg yolks
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon vanilla
2/3 cup confectioners' sugar
1/3 cup peanut butter
1 9-inch baked pie crust

Steps:

  • To prepare the Custard:.
  • Scald 1 1/2 cups of the milk in double-boiler.
  • Combine sugar, salt, cornstarch in mixing bowl.
  • Add remaining 1/2 cup milk to that mixture; pour into scalded milk.
  • Cook (stirring) until thick.
  • Slightly beat egg yolks.
  • Add a little of the hot mixture to the egg yolks first then add the yolks to the custard mixture and cook 2 minutes longer.
  • Remove from heat and add butter and vanilla.
  • Custard should be pretty thick.
  • Chill well.
  • To prepare Peanut Butter Crumbs:.
  • Mix together confectioner's sugar and peanut butter until crumbly.
  • Sprinkle half (better if a little under half than over) of the crumb mixture in bottom of baked pie crust.
  • Add chilled custard, top with whipped cream and remainder of peanut butter crumbs.

1/4 cup creamy peanut butter
1/3 cup confectioners' sugar
1 baked and cooled 9 inch pie shell
3/4 cup granulated sugar, divided
1/4 cup cornstarch
1 (12 ounce) can evaporated milk
4 large eggs, yolks and whites seperated (cover whites and leave at room temperature until used)
1 1/2 cups hot water
1/4 cup butter or 1/4 cup margarine, at room temperature
1 teaspoon vanilla
1/4 teaspoon cream of tartar
1/2 teaspoon salt

Steps:

  • In a small bowl mix peanut butter and confectioners' sugar with fork until crumbly but well combined.
  • Sprinkle over bottom of pie shell.
  • Mix 1/2 cup granulated sugar, the cornstarch and salt in a medium size heavy (not aluminum) saucepan.
  • Using a whisk, stir in milk and egg yolks until blended.
  • Place over medium heat and gradually whisk in the hot water.
  • Stirring constantly, bring to a boil and boil 2 minutes until mixture is very thick.
  • Remove from heat; add butter and vanilla and beat until smooth.
  • Pour over peanut butter mixture in pie shell.
  • Cover surface with plastic wrap (to keep skin from forming) and refrigerate 2 hours or until completely cool.
  • Heat oven to 425 degrees.
  • Beat eggs whites and cream of tartar in a large bowl with electric mixer until soft peaks form when beaters are lifted.
  • Beat in remaining sugar 1 Tbls.
  • at a time until whites are thick and glossy.
  • Spread meringue over pie filling with spatula, making sure it touches the crust all around the edge.
  • Bake 5 to 7 minutes until the meringue is lightly browned.
  • Place on rack; cool to room temperature (to keep meringue from shrinking) before serving.

1/2 cup chopped salted peanuts
1 cup chocolate sauce
1/4 pound chocolate, shaved into curls
Fresh mint sprigs
8 ounces cream cheese, at room temperature
3/4 cup confectioners' sugar
1/2 cup crunchy peanut butter
2 tablespoons milk
1/2 cup chopped roasted peanuts
4 cups heavy cream, whipped until thick, in all

Steps:

  • Using an electric mixture, fitted with the whip attachment, beat the cream cheese and sugar until smooth. Add the peanut butter, milk and roasted peanuts and beat well. Fold 2 cups of the whipped cream into the cheese mixture. Pour the filling into the prepared crust. Place the pie in the refrigerator and chill completely, about 2 hours. Slice the pie into 8 servings. To assemble, place 1 piece of pie on each plate. Dollop each piece of pie with the remaining whipped cream. Garnish each piece with the salted peanuts, drizzle of chocolate sauce, chocolate curls and mint.
