CHERRY CORDIAL COOKIES
One of my dad's favorite candies is chocolate-covered cherry cordials. I decided to re-create the flavor in these cookies. They were a hit with my taste testers! For extra ease, you could prepare the dough ahead and freeze up to 3 months. -Noelle Myers, Grand Forks, North Dakota

Steps:
- Place the cookie mix, cherries, butter and egg in a large bowl; beat until well mixed. Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges are browned., Meanwhile, place cherry preserves in a small microwave-safe bowl. Microwave on high for 1 minute. Stir in chocolate chips until melted. If necessary, microwave in 10- to 20-second intervals until chips are melted; stir until blended., Using the back of a tablespoon, make an indentation in the center of each warm cookie. Fill indentations with cherry mixture. Remove to wire racks to cool completely., Microwave white baking chips until melted. Drizzle over cookies. Let stand until set.

- Preheat oven to 325 degrees. In a mixing bowl beat butter for 30 seconds on med-high speed. Add powdered sugar and salt beating until combined (scrape sides of bowl). Beat in the cherry liquid and almond extract. Beat in as much flour as you can then use a spoon to mix any remaining flour and the chopped cherries.
- Roll dough into 1 inch balls and place on ungreased cookie sheet about 2 inches apart. Using the bottom of a glass dipped in granulated sugar, flatten the balls until they are about 1/2 inch thick. Bake 14 minutes or until bottoms are light brown. Right away place a chocolate kiss into the center of each cookie then transfer to a wire rack to cool.
HERSHEY'S CHERRY CORDIAL CREME CHEESECAKE
Taken from the back of a package of Hershey's Cherry Cordial Kisses. The title of the recipe is misleading, as it is not, in fact, a cheesecake. The cake is chocolate. There are a lot of ingredients, but it looks more complicated than it really is. I've made it several times, every time without a hitch. I was so impressed with how it turned out it's the background picture on my cell phone, and it definitely tastes as good as it looks!

- Heat oven to 350.
- Line 9-inch round cake pan with foil, extending foil beyond the sides. Grease foil.
- Stir together melted butter, granulated sugar, and vanilla in a large bowl. Add eggs. Beat well using spoon. Stir together flour, cocoa, baking powder, and salt. Gradually add to egg mixture, beating with a spoon until well blended. Spread batter in prepared pan.
- Bake 25 minutes or until cake is set. (Cake is fudgy and will not test done.) Remove from oven. Cool completely in pan on wire rack.
- Beat cream cheese and powdered sugar in medium bowl until well blended. Beat whipping cream until stiff. Gradually fold into cream cheese mixture, blending well. Spread over brownie layer. Cover. Refrigerate until serving time. Use foil to lift out of pan; remove foil.
- Just before serving, put cherry pie filling in 5-inch wide heart shape in center of dessert. (I went to Wal-Mart and found a set of heart-shaped cookie cutters to do this step.) Place kisses around edge. Cut into wedges; serve with remaining pie filling. Cover; refrigerate leftover dessert.
CHOCOLATE CHERRY CORDIAL COOKIES
Like Chocolate covered cherries but cookies. For those that love the candies, they will LOVE these. The recipe sounds complicated, but it's simple.

- Pre-heat oven to 350 degrees in a large bowl beat butter, sugar, eggs and rum extract until light and fluffy.
- Add flour cocoa, salt, baking powder and baking soda. Beat well.
- Flatten about 1 tablespoon of dough.
- Place a cherry in the middle of the dough and mold the dough around it.
- Roll in sugar and repeat with remaining dough.
- Place cookies 2 inches apart of an un-greased baking sheet.
- Bake for 8 minutes and let cool on rack.
- For glaze whisk ingredients together and spoon over cookies.
CHERRY CORDIAL
Cherry cordial is perfect for sipping on brisk autumn days. Serve one of the spirited cheries in each tiny cordial glass of liqueur. Choose ripe fruit free of bruises and spoilage. Setting time not included in preparation time. From an old newspaper clipping.

- Combine fruit, sugar and allspice in a bowl.
- Add brandy and rum; pour into a sterilized glass jar or crock.
- Allow to stand one or two months in a cool room or in the refrigerator.
- When the cordial is ready for bottling, strain fruit out and bottle for storage (don't throw the fruit away -- sweeten and thicken it for serving over ice cream or cake for the big kids in the family).
