This baby spinach salad with fresh berries, pecans and goat cheese always elicits oohs and aahs.

2½ tablespoons raspberry vinegar
6 tablespoons vegetable oil
¼ cup honey
½ teaspoon Dijon mustard
2 tablespoons finely minced shallots, from one shallot
¼ teaspoon salt
⅛ teaspoon freshly ground black pepper
1 (6-7 ounce) bag or carton baby spinach (about 6-7 cups)
2 cups (1 pint) stemmed and sliced strawberries
1 cup (½ pint) blueberries
½ cup pecans, toasted
4 ounces goat cheese

Steps:

  • Combine raspberry vinegar, vegetable oil, honey, Dijon mustard, shallots, salt and pepper in a small sealable container and shake vigorously to blend (be sure honey doesn't stick to bottom). Alternatively, combine vinegar, honey, mustard, shallots, salt and pepper in a medium bowl. Whisking constantly, slowly drizzle in oil until emulsified.
  • In a large bowl, combine baby spinach, strawberries, blueberries and pecans. Add the dressing little by little and toss until greens are well-coated (you may have a bit left over but you'll use most of it). Taste and adjust seasoning with salt and pepper. Sprinkle crumbled goat cheese over top and serve.

Steps:

  • Chop 1 pear and slice remaining two.

4 oz goat cheese
1/4 c bread crumbs
1/4 c halved pecans
2 Tbsp good quality balsamic vinegar
3 Tbsp honey
3 Tbsp extra virgin olive oil
1 tsp dried mustard
6 oz baby spinach
2 c diced strawberries
2 green onions - green part chopped
salt & pepper to taste

Steps:

  • 1. Freeze goat cheese for at least 30 minutes. Pre-heat oven to 375?F. Remove goat cheese from freezer, and slice into thick rounds. Dredge the goat cheese in the bread crumbs, making sure to completely cover the cheese. Place goat cheese rounds on a baking sheet. Place pecan halves in an even layer on same baking sheet. Bake until pecans are toasted, about 5-6 minutes. Remove from oven, and roughly chop pecans. Set aside.
  • 2. While you are waiting for 6 minutes, start preparing for Spinach salad so that you can immediately serve it with warm goat cheese.
  • 3. In a small bowl, combine the balsamic vinegar, honey, EVOO, and mustard. Whisk until well combined. Season with salt and pepper. Clean strawberries and spinach with water but make sure they are completely dry before you use them otherwise the dressing won't be able to cover the salad properly ( Use salad spinner for best results).
  • 4. Now Toss the spinach, strawberries, and green onions (if using) in a large bowl. Drizzle dressing over the mixture, and toss to combine. Divide salad evenly into four bowls. Top with chopped pecans and a goat cheese round.
  • 5. Enjoy this healthy, flavorful and refreshing summer salad just in 15 minutes!

2 tablespoons extra-virgin olive oil
1 lb spinach, trimmed

Steps:

  • Cut peel and white pith from oranges with a sharp small knife. Working over a sieve set over a bowl, cut orange sections free from membranes, letting sections drop into sieve.
  • Cut goat cheese into fourths and pat each portion between your hands to form a disk. Pat pecans all over each disk to coat. Bake on a small baking sheet in middle of oven until heated through, about 5 minutes.

  • Put the lentils, bay leaf and thyme sprigs in a 4-6 quart pot along with 2 teaspoons salt and 6 cups water. Bring to a boil, then reduce heat to a simmer and cook 15 minutes.
  • Add the carrots, celery and onion to the lentils and continue cooking 5 - 10 minutes, until the lentils are tender. They will have absorbed most, but not all of the liquid.
  • Drain the lentils and transfer back to the pot or to a serving bowl. Pluck out the bay leaf and thyme sprigs and discard. Pour the dressing over and stir to coat. Add the parsley and spinach and stir through.
  • Sprinkle the cheese and walnuts over the salad and serve warm or at room temperature.

2 tomatoes
1 Orange
0.5 bunch Basil
3 ozs firm Goat cheese
1 oz Sour cream
salt

1 Tbsp balsamic vinegar
1 Tbsp olive oil

Steps:

  • Trim spinach and radicchio, rinse and spin dry. Cut radicchio into thin strips and place in a salad bowl with the spinach.
  • Rinse tomatoes, cut in half and remove the seeds with a spoon. Slice into narrow strips and add to the salad.
  • Peel orange so that all that is white pith is removed.
  • Cut out orange segments between the separating skins, collecting the juice in a small bowl.
  • Carefully mix the orange segments with the spinach, radicchio and tomatoes.
  • Rinse the basil, pat dry well with paper towels, pluck off the leaves and cut with a large knife into thin strips.
  • Mix fresh goat cheese and sour cream in a bowl with a tablespoon of basil. Season with salt and pepper.
  • With damp hands, shape the cheese mixture into dumplings.
  • Stir vinegar, oil and salt and pepper to taste with the collected orange juice. Mix dressing with salad ingredients and serve with the cheese dumplings.

1/2 lb sliced bacon
3/4 cup pecans
3 tablespoons plus 2 teaspoons olive oil
2 tablespoons cider vinegar
1 (10-oz) bag baby spinach
2 oz goat cheese, crumbled

Steps:

  • Cook bacon in a large skillet until crisp, then transfer with tongs to paper towels to drain. Reserve 3 tablespoons fat from skillet, discarding remainder. Crumble bacon.
  • Toast pecans in 2 teaspoons olive oil in skillet over moderate heat, stirring, until 1 shade darker, then transfer to paper towels to drain. Season nuts with salt and pepper and coarsely chop.
  • Heat reserved fat in a saucepan over moderately low heat until just warm. Remove pan from heat, then whisk in vinegar and remaining 3 tablespoons olive oil until emulsified. Season dressing with salt and pepper.
  • Toss bacon, spinach, cheese, and half of nuts with enough dressing to coat. Sprinkle salad with remaining nuts.
