COAL REGION BOILO
This special Yuletide drink has been enjoyed by natives of the Pennsylvania coal region for over a century! Use raisins or dried currants; use 1/2 gallon of your choice of high-proof whiskey if you prefer.

Steps:
- In a large pot over medium heat, mix the water with honey, and stir to combine. Stir in the orange and lemon quarters, raisins, cinnamon sticks, caraway seeds, allspice berries, and cloves, and bring mixture to a boil. Reduce heat to a simmer, and cook, stirring occasionally, for 30 minutes. Remove from heat, and strain the liquid into a large pot. Allow to cool for a few minutes.
- Slowly pour the grain alcohol into the honey mixture, and stir to combine. Pour into bottles, and cap; refrigerate until use. Serve gently warmed in shot glasses.

Steps:
- Cut oranges and lemon into eights.
- In large pot simmer all ingredients EXCEPT WHISKY for 20 minutes.
- Strain through cheesecloth squeezing out all juice into another pot.
- Add Whiskey and reheat to just short of boiling. stir. bottle, and store at room temperature It may get ugly looking but thats OK, just shake it up.
- Heat to serve in warmed shot glass.

- Cut the whole oranges and lemons into quarters. Squeeze the pieces to release the juice then add the unpeeled squeezed fruit to the pot. Add the ginger ale, orange juice, or water to the pot. Add the remaining ingredients to the pot EXCEPT the whiskey.
- Once the fruit is softened and mushed from cooking, strain the liquid through a fine mesh strainer to remove the solids and spices. (If strainer is not fine enough to catch spices, use a regular colander lined with several layers of cheesecloth.) Press the pieces of fruit using the back of a spoon in the strainer to remove all the liquid. Discard the remains of the fruit/spices.
- Allow the mixture to cool slightly (adding alcohol to very hot or boiling liquid will cook off some alcohol thereby defeating the entire purpose of boilo; so, don't boil your boilo!!) Away from heat, add the bottle of whiskey. Stir to blend.
