Steps:
- Adjust oven rack to upper-middle position and preheat oven to 325 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
- In a large bowl, whisk together the maple syrup, brown sugar, vanilla extract and salt. Whisk in the vegetable oil to combine. Add the oats and almonds and fold the mixture together with a rubber spatula until all of the oats and almonds are thoroughly coated.
- Turn the oat mixture onto the prepared baking sheet and spread into a thin, even layer. Using a stiff metal spatula, compress the oat mixture until very compact.
- Bake until the top is lightly browned, 40 to 45 minutes, rotating the sheet halfway through baking. Remove the granola from the oven and let cool on a wire rack to room temperature, about 1 hour. Break the cooled granola into pieces as large or as small as you like. Stir in the dried cranberries and dried apricots. The granola can be stored in an airtight container at room temperature for up to 2 weeks.

ALMOND MAPLE GRANOLA
This granola is good and crunchy with lots of sweet flavor, thanks to the pure maple syrup and dark brown sugar. It uses a lot less oil than some granola recipes. Can be made 1 week ahead.

ALMOND MAPLE COCONUT GRANOLA
After trying many granola recipes that just had way too much sugar and oil, I sought out to make my own. This recipe is still sweet and tasty without the loads of sugars and oils. This is also a very large-yielding recipe, as I make it in bulk and store it so I won't have to make it for a while. I hope you enjoy this recipe!

- In a medium mixing bowl, add the oats, cinnamon, nutmeg, salt, shredded coconut, and pecans. Stir to combine. Pour in the olive oil, maple syrup, and vanilla and stir to combine. Add the almond butter last, and stir to combine. If it clumps in some areas that's fine - clumps in granola are the best!
- Spread the granola out so that it's mostly flat onto your lined baking sheet. Bake for 12 minutes. After the initial 12 minutes, stir the granola on the pan, making sure to move the bits on the edges to the inside of the pan, so they don't burn. Bake for 11-15 more minutes, or until golden brown and crisp.
- Let it cool completely before putting into a storage container. Stirring the granola around when it's done baking but before it cools can ruin any clumps that have formed. Store at room temp in an airtight container for up to 2 weeks.

- Melt coconut oil in the microwave for 30 seconds. Then, add it to a large bowl and mix with the maple syrup, vanilla extract, and almond butter until combined.
- In the same mixing bowl add the oats, cinnamon, almond slices, and salt. Stir until the oats and almonds are evenly coated with the wet mixture. The oats should not be "soaked" and only lightly coated. If they feel too wet, add in extra oats.
- Pour the granola mixture onto a large aluminum baking sheet covered in parchment paper. Add the granola to the oven and bake at 350F for 35-40 minutes. Stir the granola half way through if you want smaller chunks. Once the granola is lightly browned, remove from the oven and let cool for at least 10 minutes before serving.

- 3. Spread the mixture out onto a baking sheet that has been sprayed with cooking spray. Bake for 20-30 minutes at 300 degrees, stirring occasionally. I probably stir every 7 minutes or so. Take the granola out as soon as it starts to brown.
