SLOW COOKER BORSCHT

Slow Cooker Borscht image

The best thing about this borscht (other than its delicious flavor) is that it can cook all day long in the slow cooker and be waiting for you when you come home at night. One of my family's ultimate winter comfort foods.

VEGAN BORSCHT

Vegan Borscht image

A vegan version of a traditional Russian/Ukranian soup.

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Vegetable Soup Recipes     Borscht

Time 3h5m

Yield 8

Number Of Ingredients 17

1 tablespoon olive oil
3 cloves garlic, minced
1 onion, chopped
3 tablespoons olive oil
2 stalks celery, chopped
2 carrots, finely chopped
1 green bell pepper, chopped
3 beets, including greens, diced
1 (16 ounce) can whole peeled tomatoes
½ cup canned peeled and diced tomatoes
2 potatoes, quartered
1 cup shredded Swiss chard
2 cups vegetable broth
4 cups water
2 tablespoons dried dill weed
salt and freshly ground black pepper to taste
1 (16 ounce) package silken tofu

Steps:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Set aside. Heat the remaining 3 tablespoons of olive oil in a large pot over medium-high heat. Stir in the celery, carrots, bell pepper, beets including the greens, whole tomatoes, diced tomatoes, potatoes, Swiss chard, and the onion mixture. Cook and stir until the chard begins to wilt, 4 to 8 minutes. Stir in the vegetable broth, water, dill weed, and salt and pepper. Bring to a boil, and reduce heat to low. Simmer for 1 hour.
  • Strain half the beets from the broth and place in a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the beets moving before leaving it on to puree. Add the tofu, and continue pureeing until smooth. Stir the tofu mixture back into the pot. Simmer until the mixture is reduced by a third, about another hour. Serve chilled or warm.

SLOW COOKER BORSCHT

Slow Cooker Borscht image

This is a really delicious recipe that I've been making for years. Everyone who tries it wants the recipe! You have to spend a little time chopping all the veggies, but once you do, you just pop it into the slow cooker and let it go! Husband approved. :)

Provided by Foxxyladyone

Categories     Easy

Time 8h20m

Yield 8 serving(s)

Number Of Ingredients 18

1 lb top sirloin steak (cut into 1/2-inch bits)
4 medium beets, peeled and chopped
28 ounces large can diced tomatoes (28 oz)
2 medium potatoes, peeled and chopped
1 cup baby carrots, cut into bite-sized pieces
1 onion, chopped
3 garlic cloves, minced
3 cups shredded green cabbage
2 -4 cups beef broth
6 ounces tomato paste (6 oz)
6 tablespoons red wine vinegar
3 tablespoons brown sugar
1 tablespoon dried parsley
1 teaspoon salt
1 1/2 teaspoons dried dill weed
1/2 teaspoon cracked black pepper
1 bay leaf
16 tablespoons reduced-fat sour cream, 2 tablespoons sour cream per person to serve reduced fat

Steps:

  • Combine the beef and all the chopped vegetables except the cabbage in your slow cooker. You're going to need a BIG oval one; if you have a smaller crock pot, you'll need to adjust the recipe accordingly.
  • Combine 2 cups of the beef broth with the tomato paste, vinegar, brown sugar, parsley, salt, dill weed, pepper, and bay leaf. Mix to combine, then pour over the vegetable/beef mix.
  • If the vegetable/beef mix is not completely covered by the liquid, top off with the extra beef broth until they are.
  • Cover and cook on the low heat setting for 8 and 1/2 hours. You can cheat and use high heat for 4 hours if you're in a hurry, but don't expect it to be as good.
  • When the 8 and 1/2 hours are up, turn your cooker onto high heat and add the shredded cabbage. Cover again and cook on high for 30 minutes to an hour depending upon how soft you like your cabbage.
  • Remove the bay leaf. Ladle into a bowl and garnish with two tablespoons of sour cream.

BORSCHT

Borscht image

Though often associated with Russian cuisine, this red beet soup is originally from Ukraine. Recipes vary from region to region and family to family, but in addition to beets, potatoes, cabbage, carrots and onion are standard. A dollop of sour cream and a sprinkle of dill add extra flavor and visual appeal.

WORKDAY BORSCHT (VEGETARIAN/ CROCK POT)

Workday Borscht (Vegetarian/ Crock Pot) image

From the Whole Foods website. We really like this recipe. The original recipe says to serve with hard boiled eggs and warm "take-n-bake" bread.

Provided by VegSocialWorker

Categories     Vegetable

Time 9h20m

Yield 4 serving(s)

Number Of Ingredients 13

2 bunches red beets
3/4 lb russet potato, peeled and cut in half
1 large yellow onion, peeled and cut into quarters
32 ounces vegetable broth
1 tablespoon tomato paste
3 cups finely shredded green cabbage (about 1/4 small head)
1/4 cup chopped fresh dill, plus
3 tablespoons chopped fresh dill
1 tablespoon red wine vinegar, to taste
1 -2 tablespoon lemon juice, to taste
sour cream, to taste
lemon wedge
salt, to taste

Steps:

  • Remove tops from beets and set aside for another use. Peel beets and cut in half if larger than 2 inches in diameter.
  • Place beets, potato, onion, broth, and tomato paste in slow cooker and cook on high heat for 4 hours or low heat for 8 hours.
  • Process soup in batches in a blender until smooth and return to slow cooker. Take great care when blending hot liquids. Do not fill blender canister more than half full, and make sure that the top is securely attached.
  • Before you are ready to serve, bury the cabbage in the puree. Cook on high, covered, for 45 minutes. Add 1/4 cup dill, vinegar and lemon juice and season to taste with salt.
  • In a separate bowl, mix remainder of dill with sour cream. Serve with a dollop of the sour cream in each bowl of soup and with lemon wedges.

When I made friends, I found that many people had heard of Borscht, a traditional soup made with fresh beets, but few knew how to cook it. Hot Beef Borscht with Sour Cream image

Categories     Soup/Stew     Vegetable     Beef Rib     Beet     Winter     Bon Appétit

Yield Serves 10

Number Of Ingredients 22

BEEF STOCK
2 tablespoons vegetable oil
3 pounds beef short ribs, cut into 3- to 4-inch pieces
1 large onion, sliced
3 1/2 quarts water
2 celery stalks, chopped
1 carrot, coarsely chopped
12 whole black peppercorns
2 bay leaves
2 whole cloves
BORSCHT
10 medium beets (about 2 inches in diameter), rinsed, tops trimmed
1 cup water
3 cups (about) canned beef broth
2 tablespoons (1/4 stick) butter
1 cup diced carrots
1 cup chopped onions
6 cups thinly sliced green cabbage (about 1/2 small head)
4 teaspoons minced garlic
1 large russet potato, peeled, diced
2 tablespoons (or more) red wine vinegar
Sour cream

Steps:

  • FOR STOCK:
  • Heat vegetable oil in heavy large pot over medium-high heat. Add half of beef ribs and sauté until brown on all sides, about 8 minutes. Transfer to plate. Repeat with remaining ribs; transfer to plate. Add sliced onion to pot. Sauté until golden, about 10 minutes. Return ribs and any juices to pot. Add 3 1/2 quarts water and remaining stock ingredients. Bring to boil, skimming any foam from surface. Reduce heat and simmer until ribs are very tender, skimming foam occasionally, about 2 1/2 hours.
  • Using tongs, transfer ribs to plate. Strain stock into large bowl. Chill stock until fat solidifies on top, at least 3 hours. Remove meat from bones; cut away excess fat. Shred meat finely. (Can be made 1 day ahead. Cover meat and chill. Keep stock chilled.)
  • FOR BORSCHT:
  • Preheat oven to 375°F. Arrange beets in single layer in 13x9x2-inch baking dish; add 1 cup water. Cover; bake beets until tender when pierced with knife, about 1 hour. Cool beets. Peel and cut into 1/3-inch dice.
  • Remove fat from surface of stock. Add enough canned beef broth to stock to measure 10 cups.
  • Melt 2 tablespoons butter in heavy large pot over medium-low heat. Add diced carrots and chopped onions and sauté 10 minutes. Add cabbage and garlic and sauté 5 minutes. Add 10 cups beef stock, beets, potato and 2 tablespoons red wine vinegar. Simmer until cabbage and potato are tender, about 20 minutes. Add shredded meat; simmer 5 minutes. Season with additional red wine vinegar, salt and pepper.
  • Ladle borscht into bowls. Top each with dollop of sour cream and serve.

BORSCH

Borsch image

Make a warming bowl of borsch (also known as borscht or borshch) with this simple and comforting recipe. Serve this hearty soup with a dollop of soured cream and a chunk of crusty bread

Provided by Olia Hercules

Categories     Soup

Time 2h20m

Number Of Ingredients 16

1kg fatty beef shin, (left in large chunks)
1 onion, peeled and left whole
1 bay leaf
2.2kg potatoes, peeled and chopped
2 tbsp sunflower oil
1 onion, finely diced
1 carrot, roughly grated
200g beetroot, peeled and chopped into matchsticks
1 red pepper, chopped (optional)
½ x 400g can chopped tomatoes
6 prunes, pitted (we used French Agen prunes)
½ white cabbage, shredded
400g can red kidney beans, drained and rinsed
100ml soured cream or crème fraîche, to serve
½ bunch dill, chopped
crusty bread, to serve

Steps:

  • To make the stock, put the meat, whole onion, bay leaf and 2 litres of lightly salted cold water in a large saucepan. Cook over a very low heat for 1 hr 30 mins or until the beef shin is soft and falls apart easily - this can take up to 3 hrs. Skim off the scum with a spoon from time to time. Break up any larger pieces of beef into the broth, remove the whole onion and discard.
  • Add the potatoes to the borscht, season well with salt and pepper and cook for 10-15 mins until tender. Meanwhile, heat the sunflower oil in a large, deep frying pan. Add the diced onion and carrot, and cook over a medium heat, stirring, until the carrot is soft and is about to start caramelising.
  • Add the beetroot and cook for around 5 mins, stirring occasionally. Add the red pepper, if using, and cook for another 2 mins, then add the tomatoes and prunes, stir, then increase the heat and boil to reduce slightly, before adding everything to the borscht.
  • Add the shredded cabbage and the kidney beans, and cook for 7-10 mins or until tender. Serve with a dollop of sour cream or crème fraîche, lots of chopped dill and some crusty bread.
