A friend had suggested ages ago, after marinading and immediately before grilling or cooking, to place 1 small spring of rosemary on top each piece of meat. The Asian-rosemary infused flavor is delicious.

Number Of Ingredients 7

1/4 cup soy sauce or 1/4 cup tamari
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 tablespoons green onions, sliced thin
ground black pepper

Steps:

  • Whisk ingredients together in a small bowl. Place meat, poultry, fish, or vegetables in zipper lock bag or in shallow, nonreactive pan. Pour marinade over contents and seal or cover. Turn zipper lock bag or stir contents of pan occasionally to evenly distribute marinade.
  • Prepare 1/2 cup marinade per pound of meat. See description for suggested use of rosemary.

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

Number Of Ingredients 7

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!

ASIAN MARINATED SKIRT STEAK

1 bottle Japanese beer, such as Sapporo
1/2 cup orange juice
1/4 cup hoisin
1/4 cup mirin (Japanese sweet wine)
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 tablespoon Sriracha hot sauce
1 tablespoon sesame oil
3 cloves garlic, smashed
1 onion, coarsely chopped
2 flank steaks (about 4 pounds total)
Toasted sesame seeds, for garnish

Steps:

  • Whisk together the beer, orange juice, hoisin, mirin, soy, Worcestershire, Sriracha and sesame oil. Stir in the garlic and onions.
  • Place the steaks in a large baking dish and pour the marinade over top. Marinate at least 30 minutes, or up to overnight in the fridge.
  • Preheat a grill pan or grill over high heat.
  • Remove the steaks from the marinade, shaking off any excess. Discard the marinade. Grill the steaks for about 6 minutes per side for medium-rare. Let the steaks rest for 5 minutes before slicing. Slice into thin slices across the grain and transfer to a serving plate. Sprinkle sesame seeds on top and serve.

1 tablespoon sugar
3 tablespoons fresh lime juice
1 tablespoon fish sauce
2 teaspoons sriracha sauce (hot chile sauce, such as Tuong)
1/2 teaspoon ground coriander
3 garlic cloves, minced
1 -1 1/2 lb flank steak, trimmed
cooking spray
1/4 teaspoon salt

Steps:

  • Combine first 6 ingredients in a flat, non-metallic pan. Add steak; cover with plastic and marinate in refrigerator up to 24 hours, turning occasionally.
  • Prepare grill (medium-high heat).
  • Remove steak from marinade; discard marinade.
  • Spray grill rack with cooking spray; place steak on grill rack; 4 minutes on each side (for medium rare), adjust time for degree of doneness. Remove steak from grill; sprinkle with salt. Let stand 5 minutes.
  • Cut across grain into ~1/4-inch slices and serve with rice etc.

2 (8 ounce) rib eye steaks, boneless cut 3/4 inch thick or 2 (8 ounce) beef, strip steaks boneless cut 3/4 inch thick
1 (6 -8 ounce) package vermicelli rice noodles (or 4 cooked cups angel hair pasta)
3 cups thinly sliced romaine lettuce
1 cup fresh bean sprout
1 cup matchstick carrot
1/2 cup thinly sliced green onion
1/4 cup cilantro, chopped (fresh)
1/4 cup mint, chopped (fresh)
4 slices limes (optional)
fresh cilantro (optional) or mint sprig (optional)
1/2 cup regular teriyaki sauce
1/4 cup fresh lime juice
3 tablespoons honey
3 tablespoons vegetable oil
1 tablespoon sesame oil
1 teaspoon chili-garlic sauce

Steps:

  • Combine Marinade ingredients in small bowl. Cover and refrigerate 1/2 cup for sauce. Place beef steaks and remaining marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours.
  • Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 6 to 8 minutes (over medium heat on preheated gas grill, covered, 7 to 9 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
  • Meanwhile, prepare noodles according to package directions; drain well.
  • Carve steaks into slices. Divide noodles among 4 large shallow bowls; top with equal amounts of lettuce, bean sprouts, carrots, green onions, cilantro and mint. Drizzle with reserved marinade. Arrange beef on top. Garnish with lime slices and cilantro or mint sprigs, if desired.
  • Alternative Cooking Methods:
  • For charcoal, grill, uncovered, 10 to 12 minutes (for gas, grill, covered, 7 to 10 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
  • To broil, place steaks on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 9 to 11 minutes for medium rare (145°F) to medium (160°F) doneness, turning once.

Was looking for something different in a marinade and had just gotten some news spices in the Herb & Spice swap so came up with this. Turns out it was a hit and my family said to make it again.

1 minced garlic clove
1 teaspoon minced ginger
1/2 teaspoon fish sauce
1/2 teaspoon sesame oil
1 teaspoon honey
1 tablespoon lime juice
1 teaspoon dried lemongrass
1 teaspoon Chinese five spice powder
1 teaspoon kosher salt
4 steaks

Steps:

  • Place all ingredients in a large ziplock plastic bag. Mix well then add steak of your choice making sure to rub well into all steaks. Place in fridge, turning occasionally to make sure marinade gets into all aspects of the steak. Let sit for at least 3 to 4 hrs before grilling. This is a flavorful marinade without heat. If you want the addition of heat I would suggest adding 1/4 tsp or 1/2 tsp of dried chili pepper flakes.
  • Take steaks out of the fridge and allow them to come to room temp(approx 5 min). Heat grill to med/high temp before placing steaks on to get a good sear. When nice sear on one side turn and sear the other side. I generally like my steak medium rare so would take off at this point and allow to rest on a warm plate for 5 minute If you prefer your steak more well done then lower heat and continue to grill to preferred doneness.
