A refreshing and delicious sandwich. Depending on the way you cut the bread, these can be made as appetizers or a simple lunch time sandwich.

1 cucumber, peeled and thinly sliced
1 (8 ounce) package cream cheese, softened
¼ cup mayonnaise
¼ teaspoon garlic powder
¼ teaspoon onion salt
1 dash Worcestershire sauce
1 (1 pound) loaf sliced bread, crusts removed
1 pinch lemon pepper

Steps:

  • Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
  • Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
  • Spread cream cheese mixture evenly on one side of each bread slice.
  • Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.
  • Stack the other half of the bread slices with spread sides down over the cucumber slices to make sandwiches.

2 tbsp cream cheese
¼ cucumber
¼ tsp salt
¼ tsp pepper
2 tbsp butter
2 tbsp dill, fresh ((or mint))

Steps:

  • Spread butter on half the slices of bread, and cream cheese on the other half.
  • Peel and slice the cucumber thinly.
  • Layer the cucumber slices on the buttered side. Dash a little salt and pepper onto the cucumber.
  • Sprinkle over the dill or mint leaves.
  • Slap cream cheese bread on top of cucumber bread.

My Grandma and her sisters got together every couple of weeks to play bridge. She always made these sandwiches when it was her turn to host--and spent most of the day in the kitchen guarding the refrigerator to keep all the rest of us from stealing them! I changed the bread to whole wheat, as I like it better, but you can use whatever suits you--we also use pumpernickel or rye.

1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
1 tablespoon fresh dill, snipped
1 tablespoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
2 large cucumbers, seeded and chopped
1/2 cup sweet red pepper (optional)
1/4 cup chopped onion
1/4 cup green olives, chopped (Can use pimento stuffed)
1/4 cup minced fresh parsley
12 slices whole wheat bread
cucumber, slices (optional)
fresh dill sprig (optional)

Steps:

  • In a small mixing bowl, combine the first 8 ingredients; beat until well blended. Stir in the cucumbers, red peppers (if using, onions, olives and parsley. Cover and refrigerate for up to 8 hours.
  • Remove crusts from bread; cut each slice into 4 triangles. Spread with cream cheese mixture. Garnish with cucumber slices and dill sprigs if desired.

1 large English cucumber, peeled, sliced paper thin
1/2 teaspoon salt
2 tablespoons white vinegar
1 cup unsalted butter, softened
1/4 cup fresh tarragon, minced
1/4 cup fresh chervil, minced
30 slices whole wheat bread, enough to make 72 (2x4inch) rectangles (thin slices)
to taste watercress leaf (optional)
to taste mayonnaise (optional)
to taste fresh parsley, chopped (optional)

Steps:

  • Put cucumber slices into a large, non-metal bowl.
  • Toss with salt. Sprinkle with vinegar.
  • Toss to mix well.
  • Let stand 1 hour.
  • Drain well in colander.
  • Blend butter, tarragon and chervil.
  • To assemble, spread butter over 1 side of each bread slice. Cover 15 slices with cucumbers, dividing evenly.
  • Close sandwiches.
  • Trim crusts.
  • Cut into 36 rectangles.
  • Arrange on platter, garnished with watercress leaves.
  • Optional: For looks, dip one end of a sandwich into mayonnaise, then into minced fresh parsley.

1 medium cucumber
1 medium red bell pepper
6 carrot sticks
4 celery sticks
1 tbsp minced garlic
1/2 cup sliced green onions
2 tbsp minced fresh parsley
2 8-ounce packages 1/3 less fat cream cheese, softened (also called neufchatel)
2 tbsp nonfat, plain greek yogurt
salt and pepper to taste
20 thin rye bread slices

Steps:

  • 1. Peel and seed cucumber. Dice cucumber, red pepper, carrots, and celery very finely.
  • 2. Combine first nine ingredients in large bowl, stirring until well blended. Salt and pepper to taste. Spread mixture on half the bread slices, topping with the other half. Cut how you like.
  • 3. The veggie measurements are approximate; you can feel free to throw whatever you like in there. I actually think it would be good with pecans or some other kind of nut to give it extra crunch.
  • 4. **** I love the idea of small shrimp with diced chicken together on top of everything.
