SOUTH OF THE BORDER CHICKEN SOUP
I'm not sure where I got this recipe (probably from a magazine), but it was in my "to try" binder and I made it tonight - husband and I LOVED it and each had 2 bowls. We served it with corn bread on the side. It has a kick in it from the chili powder...very delicious! Enjoy!

Steps:
- Heat oil in large skillet; add tortilla strips and fry, stirring constantly, until golden. Drain on paper-towel lined plate.
- Add onion and green peppers to skillet; cook and stir until soft.
- Add garlic and stir in flour; gradually stir in chicken broth.
- Add remaining ingredients (except tortilla strips) and cook until slightly thickened.
- Sprinkle with tortilla strips before serving.

Spicy grilled chicken sandwiches (or you can broil), with pepper-jack cheese and a spicy mayo to give it a little kick. Perfect for weekend meals!

- Pound chicken to 1/4-inch thickness.
- Combine oil and juice in a resealable ziplock bag.
- Add chicken and marinate 4-6 hours.
- Combine ingredients for Spicy Mayo (mayonnaise, chili powder, cumin, cayenne pepper, salt, tomato paste, lime juice, and orange juice) until smooth.
- Chill for several 2-3 hours before making sandwiches to blend flavors.
- Remove chicken from marinade and discard marinade.
- Grill or broil chicken 8-10 minutes, or until cooked through, turning once while cooking.
- Remove chicken from heat and place cheese on chicken while it is very hot.
- Butter cut sides of rolls and grill or toast until lightly golden and crisp.
- Place chicken (with cheese), lettuce, tomato, red onion, a dallop of southwest mayo, and sprinkle about a tablespoon of chopped cilantro on each sandwich and top with upper portion of each roll.
- Serve hot.

- Cooking Day.
- Enchilada sauce: Melt butter in medium saucepan, saute onion and garlic in butter until tender. Add tomato sauce, chiles, sugar, cumin, salt, oregano and basil. Simmer on stovetop about 20 minutes, until heated though and well blended.
- Fill each enchilada with 1/3 cup chicken and sprinkle with 2 T cheese, roll and place seam side down in lined 9x13. Blend sour cream with enchilada sauce and pour over enchiladas. sprinkle with remaining cheese.
- Serving Day.
- Thaw completely. Bake uncovered at 350 for 40-50 minutes.

LOW FAT SOUTH OF THE BORDER CHICKEN CHILI
This is sweeter than most chili, but quite tasty and very filling. You can use a 16 oz can of baked beans in place of the pinto beans & brown sugar if you prefer. You can also use canned chicken breast, more beans, a can of drained corn...whatever...it's a pretty forgiving recipe.

- Preheat a gas or charcoal grill.
- Combine chili powder, cumin, coriander, sugar, salt, cayenne and olive oil in a bowl. Mixture will be a little dry.
- Pound chicken breasts with a meat mallet or other heavy object until a uniform 1/4-inch thickness. Use your hands to rub chicken with chili mixture. Place chicken on grill and cook, turning 9 to 10 minutes until juices run clear when the thickest part of the breast is pierced with the tip of a knife. Slice crosswise into strips.

- Sauté green pepper and chicken in butter or oil until lightly browned (about 5 mins).
- Spread the rice in a greased 9x9 pan.
- Top with peppers and chicken.
- Mix sour cream and salsa and spoon over chicken. Sprinkle with cheese.

CHICKEN - SOUTH OF THE BORDER
I found this recipe in an issue of Good Housekeeping back in the early 80's,when Southwestern/Mexican recipes were hard to come by - at least here in Wisconsin . It's like a Southwestern version of Chicken Parmesan. I used to use Pace Picante on it, but you can adjust it with any salsa or heat level you prefer. I also added the green chiles because I love them! Also would accompany this chicken with home-made Mexican rice, and a picante-based vegetable "stew."

- Pound chicken breast halves to 1/2 inch thickness.
- Combine flour and seasonings in a medium bwl.
- Lightly beat eggs.
- Measure cornmeal into a shallow bowl.
- Dip chicken, first into seasoned flour,then in eggs, then coat with cornmeal, and chill in the fridge.

- Combine chili powder, oregano, red pepper flakes if using, and salt in a small bowl; set aside.
- Place bread cubes in a large mixing bowl, and drizzle the oil over cubes. Stir until cubes are coated with oil. Sprinkle cubes with cheese and the amount of seasoning desired. Store unused seasoning mixture in a re-sealable container for future use.
