AVOCADO BREAKFAST SANDWICH
Restaurant-style breakfast sandwich at home! It's quick, easy and delicious! The sliced avocado is what makes this sandwich pop and gives it a unique flavor. It is chock-full of protein, as well, so this sandwich will keep you full until lunchtime.

Steps:
- Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
- Spread butter onto 1 side of each bread slice.
- Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
- Remove sandwich from skillet and cut in half.

- Beat together egg and egg white; season with salt and pepper. In a small nonstick skillet, heat oil over medium. Cook scallion until softened, 1 minute. Add eggs and cook, stirring, until almost set, 1 to 2 minutes. Fold edges of egg mixture in to form a patty about the size of an English muffin. Continue to cook until set, about 20 seconds more.
- Place egg on bottom half of English muffin and season with salt, pepper, and hot sauce, if using. Layer with avocado, then other half of muffin.

- Toast sliced bagel in a toaster until golden brown.
- While the bagel is toasting, heat oil in a frying pan over medium heat and add egg. Pan-fry until set, 3 to 4 minutes.
- Mash avocado (a fork will do the job nicely!) in a medium bowl; sprinkle with salt and black pepper.
- Spread 1 tablespoon cream cheese on each toasted bagel half. Top with mashed avocado and egg, and add more salt and pepper if desired.

AVOCADO PASTE SANDWICH
We have an avocado tree and I make these sandwiches for myself all the time. My 16 month old does not like avocados and this is the only way he'll eat them. There is a variety that tastes very buttery and my grandmother used to call the avocado "poor man's butter" because she would use it on bread instead of butter when times were hard. By itself the paste is an excellent first food for baby.

- Smash avocado on a plate with a fork.
- Spread between two pieces of bread.
- Serve.
- Omit the bread and the paste alone makes a good first baby food.
- If I'm packing this for lunch sometimes I'll rub the avocado with a cut lime before making the paste.
- For the adults we add a pinch of salt. Baby/toddler - no salt.

BACON, EGG & AVOCADO SANDWICHES

- In a large nonstick skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Pour off drippings., In same skillet, break eggs, one at a time, into pan; immediately reduce heat to low. Cook until whites are completely set and yolks begin to thicken. Remove from heat; sprinkle with garlic salt and pepper. , Spread Miracle Whip over two slices of toast. Top with bacon, eggs, tomato, avocado and, if desired, cheese and onion. Spread butter over remaining toast; place over top.

- Preheat your Hamiltion Beach Sandwich maker. While the appliance is warming up, prepare your toppings, slice the avocado and tomato into thin slices.
- Once your sandwich maker is to temperature, lightly grease with spray oil. In the bottom compartment layer bottom half of the bagel thin, avocado slices, tomato slices, and cheese. Close the bottom compartment.
- Crack an egg into the top griddle (ensuring the griddle is closed). Break the yolk so that the egg cooks evenly. Add the top half of the bagel thin to the top campartment and close the breakfast maker. Set time to 3 or 3.5 minutes depending on how well you like it toasted.
- When timer goes off carefully slide the griddle out releasing the egg and then lift the compartments up to release the sandwich. Enjoy!
