Provided by Karla Harmer

Categories     Dessert

Time 30m

Number Of Ingredients 10

1/2 cup unsalted butter
1/4 cup white sugar + 2 tablespoons
3/4 cup brown sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/4 cup sourdough discard
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees fahrenheit. Then line baking sheet with parchment paper and set aside.
  • In a medium sized bowl, combine flour, baking soda, baking powder and salt and set aside.
  • In a stand mixer cream butter and both sugars until light and fluffy. Use the paddle attachment and beat on medium speed.
  • Add eggs one at a time, vanilla and sourdough discard and mix until combined.
  • Then add the dry ingredients and mix the dough until just combined. It will be thick and not too sticky. Do not over mix.
  • Use a spatula to scrape down the sides of the mixing bowl and clean the paddle. At this point it should start to form a ball.
  • Start to create the cookie. Form 1 tablespoon sized balls of dough, then lightly roll those balls into the rolling sugar.
  • Set balls on a cookie sheet pan.
  • Bake for 7 to 10 minutes. Check after 7. The cookies should be soft in the center but done.
  • Make sure to remove the cookies before the edges turn golden brown, you do not want to overbake them.
  • Allow the cookies to cook for 5 minutes prior to moving to the cooling rack.
  • Repeat the baking process until all cookies are done.

Get Alton Brown's simple Sugar Cookies recipe from Good Eats on Food Network, the perfect base for frosting, sprinkles and other sweet decorations.

Provided by Alton Brown

Categories     dessert

Time 2h24m

Yield about 3 dozen-2 1/2 inch

Number Of Ingredients 8

3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 tablespoon milk
Powdered sugar, for rolling out dough

Steps:

  • Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.
  • Preheat oven to 375 degrees F.
  • Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

SUGAR COOKIES

Sugar Cookies image

The dough for these cookies is easily made in a food processor, much like pie dough, but with softened butter. We pulse the sugar first to finely grind it, which gives the cookies their tender and crunchy texture.

Provided by Food Network Kitchen

Categories     dessert

Time 2h30m

Yield About 2 1/2 dozen cookies and 2 cups icing

Number Of Ingredients 11

1 cup granulated sugar
2 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon fine salt
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces, at room temperature
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
One 1-pound box confectioners' sugar (3 3/4 to 4 cups)
2 tablespoons meringue powder
Food coloring, as desired
Candy and sanding sugar, for decorating

Steps:

  • For the cookies: Put the sugar in a food processor and pulse a few times to finely grind. Add the flour, baking powder and salt and pulse just to combine.
  • Add the butter and pulse until all of the butter is incorporated into the flour and the mixture is sandy. Add the egg and vanilla and pulse until the mixture comes together in big clumps.
  • Turn the dough out onto a clean work surface and knead a few times to form a ball. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  • Position an oven rack in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Let the dough sit at room temperature for a few minutes to make rolling easier. Put 1 disc of dough between 2 pieces of parchment paper and roll out the dough to 1/8 inch thick. Cut out with desired cookie cutters and arrange on one of the prepared baking sheets about 2 inches apart. Bake until the bottom of the cookies are golden brown, 10 to 12 minutes. Cool on the baking sheet until firm enough to transfer to a rack to cool completely. Repeat with the remaining dough. Gently gather any scraps into a ball and press into another disc. Chill the disc until firm enough to roll and cut out as many cookies as possible.
  • For the icing: Sift together the confectioners' sugar and the meringue powder in a large bowl and add 6 tablespoons water. Beat with an electric mixer on medium-high until the mixture is glossy and soft peaks form, 3 to 4 minutes. Add food coloring if using or divide into several batches and color with different shades of food coloring. Decorate cookies as desired. The cookies can be store in an airtight container at room temperature for up to 3 days.

SOURDOUGH CHOCOLATE CHIP COOKIES

Sourdough Chocolate Chip Cookies image

This recipe uses sourdough discard from a homemade starter; the water from the discard results in a slight cakey cookie, and the browned butter lends a nutty, toasty note.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 1h45m

Yield Makes about 20 cookies

Number Of Ingredients 9

2 1/2 sticks unsalted butter
2 cups packed light-brown sugar
1/2 teaspoon baking soda
3/4 teaspoon fine sea salt
3 large egg yolks, room temperature
2 teaspoons pure vanilla extract
3/4 cup discard from Sourdough Starter
2 1/2 cups unbleached organic all-purpose flour
10 ounces semisweet chocolate, coarsely chopped, or chocolate chips

Steps:

  • Heat butter in a saucepan over medium until it simmers and foam rises to surface. Continue cooking until solids sink to bottom and turn golden brown, 5 to 8 minutes. Pour into a mixing bowl, scraping in browned solids as well. Let cool 30 minutes.
  • Beat butter with sugar, baking soda, and salt on medium speed until well combined, about 2 minutes. Add egg yolks and vanilla and continue beating another 1 minute. Beat in sourdough discard until combined. Add flour; beat to combine. Add chocolate; beat to combine. Let stand 30 minutes.
  • Preheat oven to 350°F. Use a 2-ounce scoop to form 1/4-cup balls of dough; arrange on parchment-lined baking sheets, spaced 2 inches apart. (Formed balls can be refrigerated in an airtight container up to 24 hours, or frozen up to 1 month; if making from frozen, add about 2 minutes to baking time.)
  • Bake 9 minutes. Remove sheets from oven and bang on a hard surface or oven rack. Bake 3 minutes more; remove and bang again. Bake until cookies begin to brown at edges and are just set in center, 3 to 5 minutes more. Let cool on sheets on a wire rack 5 minutes, then transfer directly to rack and let cool completely (or serve warm). Cookies can be stored in an air-tight container at room temperature up to 3 days.

SUGAR COOKIES - NO BREAK, FAIL-SAFE AND FOOLPROOF

Sugar Cookies - No Break, Fail-Safe and Foolproof image

Are you tired of sugar cookie dough that will not roll out properly? Dough's too sticky? That won't cut-out properly? Are you tired of sugar cookies that are too fragile to decorate? If so, then this is the recipe for you. I have the world's worst luck with sugar cookies. 3 years in a row I had great intentions of making cutout sugar cookies for my Christmas baskets. Inevitably, I failed. One year, the dough was way too sticky. Another, the cookies just feel apart. Then I found this recipe. These cookies roll out and cut beautifully, they bake evenly, and they are sturdy enough to frost and decorate yet still taste heavenly. Even my 3yo could not mess these up! And yes, I checked this against all the other sugar cookie recipes on this site -- it's different. And delicious!
