This Apple Fritter Bread recipe is like the classic donut in cake form!

1/3 cup light brown sugar
2 teaspoons cinnamon, divided
2 medium Granny Smith apples, peeled and diced
2/3 cup, plus 2 tablespoons granulated sugar, divided
1/2 cup salted butter, room temperature
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 cup milk
1/2 cup powdered sugar
1 tablespoon milk

Steps:

  • Preheat oven to 350°F. Coat a 9×5- inch loaf pan with baking spray. Line the bottom and up the short sides with parchment paper. Spray again. Set aside.
  • Prepare cinnamon sugar mixture by combining brown sugar with 1 teaspoon of cinnamon and mixing well. Set aside.
  • Prepare apple mixture by combining apples with 2 tablespoons granulated sugar and remaining 1 teaspoon of cinnamon and mix until well combined. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment combine the butter and 2/3 cup granulated sugar on medium speed for 2 minutes. Add in the eggs one at a time and vanilla and mix until blended, scraping the sides of the bowl as necessary.
  • Turn mixer to low and add in the flour and baking powder until incorporated. Add in the milk and mix until just combined. Don't over-mix.
  • Pour half of the batter into the prepared pan. Distribute half of the apple mixture on top of the batter. Sprinkle half of the cinnamon-sugar mixture over the apples. Using the end of a dull knife, gently swirl the brown sugar mixture and the apples into the batter. Pour remaining batter into the pan, followed by the remaining apple mixture and remaining cinnamon-sugar mixture. Again, gently swirl the sugar and apple mixture into the batter. If needed press the apples into the batter.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10-15 minutes, then gently run a knife around the edges of the pan to loosen the loaf. Remove the bread from the pan onto a wire rack to cool completely.
  • To make the glaze, whisk together powdered sugar and milk until well combined. Drizzle over bread.

1/3 cup light brown sugar
2 tsp cinnamon
2 medium apples, diced
1/2 cup unsalted butter
2/3 cup light brown sugar
2 eggs
2 tsp vanilla
1 1/2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
1/8 tsp nutmeg
1/2 cup milk
1/2 cup powdered sugar
1 to 1 1/2 tbsp milk

Steps:

  • Preheat oven: to 350 degrees. Grease a 9 x 5 pan with nonstick cooking spray. Make apple filling: Add brown sugar, cinnamon and apples to a medium bowl and toss to coat.
  • Cream butter and sugar: In a stand mixer with the paddle attachment for 2-3 minutes, or until lighter in color and fluffy.
  • Add in eggs and vanilla: and mix until combined.
  • Combine dry ingredients: Whisk together flour, salt, baking powder and nutmeg in a medium bowl.
  • Add dry ingredients: To the stand mixer on low speed then add in the milk.
  • First layer: Pour half of the batter into the greased loaf pan.
  • Second layer: Top with half of the apple mixture.
  • Third layer: Pour the remaining half of the batter on top.
  • Fourth layer: Sprinkle with the remaining apple mixture.
  • Bake: For 50-60 minutes or until the bread is golden brown and set and a toothpick comes out mostly clean.Allow bread to cool for 30 minutes in the pan before removing it to a wire rack to cool completely.
  • Make the glaze: Combine powdered sugar and milk in a small bowl. Drizzle over cooled bread and serve!

1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

  • Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing. Mix brown sugar and cinnamon together in a bowl. Set aside. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until blended in; add in vanilla extract. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan; add half the apples and half the brown sugar/cinnamon mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer and top with remaining apples and brown sugar/cinnamon mixture. Regardless of their variety or whether they were sliced or grated, the apples in our Apple Fritters exuded juice and produced soggy, undercooked interiors. We found that the best solution was to dry the apples with paper towels and mix them with the dry ingredients. The dry ingredients sucked up the moisture that would otherwise have leached out during frying. We like Granny Smith apples in these fritters because they are tart and crisp. Apple juice doesn't have enough flavor-you really do need the cider. Penzeys Extra Fancy Vietnamese Cassia Cinnamon is the test kitchen's favorite brand.

2 granny smith apples, peeled, cored, and cut into 1/4-inch pieces
2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup apple cider
2 large eggs, lightly beaten
2 tablespoons unsalted butter, melted
3 cups vegetable peanut oil
2 cups confectioners' sugar
1/4 cup apple cider
1/2 teaspoon ground cinnamon
1/4 teaspoon groud nutmeg

Steps:

  • 1. Spread prepared apples in single layer on paper towel-lined baking sheet and pat thoroughly dry with paper towels. Combine flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg in large bowl. Whisk cider, eggs, and melted butter in medium bowl until combined. Stir apples into flour mixture. Stir in cider mixture until incorporated.
  • 2. Heat oil in Dutch oven over medium-high heat to 350 degrees. Following step 1, use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
  • 3. Meanwhile, whisk confectioners' sugar, cider, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.

  • 1. Use a 1/3-cup measure and a spoon to carefully and gently portion batter into the hot oil.
  • 2. Use the spoon to gently press on each fritter. The flattened shape helps the interior cook through.

1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup water
1 egg, beaten
3/4 cup milk

2 large apples, peeled and diced

1 tablespoon lemon juice
1 teaspoon vanilla
2 tablespoons butter
1 teaspoon cinnamon
1 tablespoon cornstarch
1 tablespoon butter, softened
1 teaspoon vanilla
3/4 cup powdered sugar
3 teaspoons milk

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 5 bread pan.
  • In a skillet, cook apples, lemon juice, brown sugar, vanilla, butter, cinnamon & cornstarch until mixture is thickened. Set aside to cool.
  • Combine dough ingredients into a stand mixer. Combine and knead for 5 minutes.
  • Roll dough into a large rectangle on a floured surface.
  • Evenly spread apple mixture over dough.
  • Cut dough into even squares (you should get around 20).
  • Carefully stack pieces of dough onto each other forming four piles.
  • Place piles of dough into prepared pan.
  • Bake 50 - 60 minutes.
  • Let cool for 10 minutes, then remove loaf to a wire rack to cool.
  • To make the glaze, mix butter, vanilla and powdered sugar into a bowl. Add milk; stir until you get a creamy consistency.
  • Pour on glaze and allow to setup for a few minutes.
