APPLE FRITTER BREAD
This Apple Fritter Bread recipe is like the classic donut in cake form!

Steps:
- Preheat oven to 350°F. Coat a 9×5- inch loaf pan with baking spray. Line the bottom and up the short sides with parchment paper. Spray again. Set aside.
- Prepare cinnamon sugar mixture by combining brown sugar with 1 teaspoon of cinnamon and mixing well. Set aside.
- Prepare apple mixture by combining apples with 2 tablespoons granulated sugar and remaining 1 teaspoon of cinnamon and mix until well combined. Set aside.
- In the bowl of your stand mixer fitted with the paddle attachment combine the butter and 2/3 cup granulated sugar on medium speed for 2 minutes. Add in the eggs one at a time and vanilla and mix until blended, scraping the sides of the bowl as necessary.
- Turn mixer to low and add in the flour and baking powder until incorporated. Add in the milk and mix until just combined. Don't over-mix.
- Pour half of the batter into the prepared pan. Distribute half of the apple mixture on top of the batter. Sprinkle half of the cinnamon-sugar mixture over the apples. Using the end of a dull knife, gently swirl the brown sugar mixture and the apples into the batter. Pour remaining batter into the pan, followed by the remaining apple mixture and remaining cinnamon-sugar mixture. Again, gently swirl the sugar and apple mixture into the batter. If needed press the apples into the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10-15 minutes, then gently run a knife around the edges of the pan to loosen the loaf. Remove the bread from the pan onto a wire rack to cool completely.
- To make the glaze, whisk together powdered sugar and milk until well combined. Drizzle over bread.

- Preheat oven: to 350 degrees. Grease a 9 x 5 pan with nonstick cooking spray. Make apple filling: Add brown sugar, cinnamon and apples to a medium bowl and toss to coat.
- Cream butter and sugar: In a stand mixer with the paddle attachment for 2-3 minutes, or until lighter in color and fluffy.
- Add in eggs and vanilla: and mix until combined.
- Combine dry ingredients: Whisk together flour, salt, baking powder and nutmeg in a medium bowl.
- Add dry ingredients: To the stand mixer on low speed then add in the milk.
- First layer: Pour half of the batter into the greased loaf pan.
- Second layer: Top with half of the apple mixture.
- Third layer: Pour the remaining half of the batter on top.
- Fourth layer: Sprinkle with the remaining apple mixture.
- Bake: For 50-60 minutes or until the bread is golden brown and set and a toothpick comes out mostly clean.Allow bread to cool for 30 minutes in the pan before removing it to a wire rack to cool completely.
- Make the glaze: Combine powdered sugar and milk in a small bowl. Drizzle over cooled bread and serve!

APPLE FRITTERS -- COOK'S COUNTRY
Regardless of their variety or whether they were sliced or grated, the apples in our Apple Fritters exuded juice and produced soggy, undercooked interiors. We found that the best solution was to dry the apples with paper towels and mix them with the dry ingredients. The dry ingredients sucked up the moisture that would otherwise have leached out during frying. We like Granny Smith apples in these fritters because they are tart and crisp. Apple juice doesn't have enough flavor-you really do need the cider. Penzeys Extra Fancy Vietnamese Cassia Cinnamon is the test kitchen's favorite brand.

- 1. Spread prepared apples in single layer on paper towel-lined baking sheet and pat thoroughly dry with paper towels. Combine flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg in large bowl. Whisk cider, eggs, and melted butter in medium bowl until combined. Stir apples into flour mixture. Stir in cider mixture until incorporated.
- 2. Heat oil in Dutch oven over medium-high heat to 350 degrees. Following step 1, use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
- 3. Meanwhile, whisk confectioners' sugar, cider, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.

- Preheat oven to 350 degrees. Grease a 9 x 5 bread pan.
- In a skillet, cook apples, lemon juice, brown sugar, vanilla, butter, cinnamon & cornstarch until mixture is thickened. Set aside to cool.
- Combine dough ingredients into a stand mixer. Combine and knead for 5 minutes.
- Roll dough into a large rectangle on a floured surface.
- Evenly spread apple mixture over dough.
- Cut dough into even squares (you should get around 20).
- Carefully stack pieces of dough onto each other forming four piles.
- Place piles of dough into prepared pan.
- Bake 50 - 60 minutes.
- Let cool for 10 minutes, then remove loaf to a wire rack to cool.
- To make the glaze, mix butter, vanilla and powdered sugar into a bowl. Add milk; stir until you get a creamy consistency.
- Pour on glaze and allow to setup for a few minutes.
