3 1/2 to 4 cups bread flour, plus more for rolling
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  • Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

QUICK AND EASY PIZZA CRUST

This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!

1 cup warm water (110 degrees F/45 degrees C)

  • Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
  • Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

1 tablespoon kosher salt*
1 tablespoon pure olive oil
3/4 cup warm water
2 cups bread flour (for bread machines)
1 teaspoon instant yeast
2 teaspoons olive oil
Olive oil, for the pizza crust
Flour, for dusting the pizza peel
1 1/2 ounces pizza sauce
1/2 teaspoon each chopped fresh herbs such as thyme, oregano, red pepper flakes, for example
A combination of 3 grated cheeses such as mozzarella, Monterey Jack, and provolone

Steps:

  • Place the sugar, salt, olive oil, water, 1 cup of flour, yeast, and remaining cup of flour into a standing mixer's work bowl. Using the paddle attachment, start the mixer on low and mix until the dough just comes together, forming a ball. Lube the hook attachment with cooking spray. Attach the hook to the mixer and knead for 15 minutes on medium speed.
  • Tear off a small piece of dough and flatten into a disc. Stretch the dough until thin. Hold it up to the light and look to see if the baker's windowpane, or taut membrane, has formed. If the dough tears before it forms, knead the dough for an additional 5 to 10 minutes.
  • Roll the pizza dough into a smooth ball on the countertop. Place into a stainless steel or glass bowl. Add 2 teaspoons of olive oil to the bowl and toss to coat. Cover with plastic wrap and refrigerate for 18 to 24 hours.
  • Place the pizza stone or tile onto the bottom of a cold oven and turn the oven to its highest temperature, about 500 degrees F. If the oven has coils on the oven floor, place the tile onto the lowest rack of the oven. Split the pizza dough into 2 equal parts using a knife or a dough scraper. Flatten into a disk onto the countertop and then fold the dough into a ball.
  • Wet hands barely with water and rub them onto the countertop to dampen the surface. Roll the dough on the surface until it tightens. Cover one ball with a tea towel and rest for 30 minutes.
  • Repeat the steps with the other piece of dough. If not baking the remaining pizza immediately, spray the inside of a ziptop bag with cooking spray and place the dough ball into the bag. Refrigerate for up to 6 days.
  • Sprinkle the flour onto the peel and place the dough onto the peel. Using your hands, form a lip around the edges of the pizza. Stretch the dough into a round disc, rotating after each stretch. Toss the dough in the air if you dare. Shake the pizza on the peel to be sure that it will slide onto the pizza stone or tile. (Dress and bake the pizza immediately for a crisp crust or rest the dough for 30 minutes if you want a chewy texture.)
  • Brush the rim of the pizza with olive oil. Spread the pizza sauce evenly onto the pizza. Sprinkle the herbs onto the pizza and top with the cheese.
  • Slide the pizza onto the tile and bake for 7 minutes, or until bubbly and golden brown. Rest for 3 minutes before slicing.
  • *This recipe's been on the web for some time now and although most of the reactions have been darned positive, some of you have commented that the dough was way too salty. At first we chalked this up to personal preference; some folks are just not as sensitive as others to this basic flavor. And of course salty toppings would definitley change the dynamic. Still, we didn't want to leave it at that. We went back to the lab and found that the flake size of kosher salt differs quite a bit from brand to brand. This could easily result in a too salty crust. So unless you've had success with the recipe in the past, we suggest you cut the salt by one teaspoon, from a tablespoon to two teaspoons. So that the yeast doesn't go crazy, you should also cut back on the sugar by half a teaspoon. Thanks, AB

1 teaspoon salt
1 package rapidmix yeast
1 cup hot tap water
4 teaspoons olive oil

Steps:

  • In food processor fitted with metal blade, combine flour, salt and yeast; process until well mixed.
  • With the machine running, pour in hot water and oil (down the feed tube) and process 35 to 45 seconds, or until smooth; add a little extra flour if necessary.
  • Remove from processor and form into a smooth ball.
  • Place in an oiled bowl, turning ball until completely coated with the oil.
  • Cover bowl with plastic wrap and let rise, in a warm spot, for about one hour.
  • Preheat oven to 425 degrees F.
  • Lightly rub a small amount of olive oil on a cookie sheet and set aside.
  • Punch down pizza dough and, on a floured surface, roll out into a rectangle to fit your cookie sheet (your dough will be about 1/4 inch thick).
  • Place dough on oiled cookie sheet and spread your choice of sauce and toppings (and cheese!) on it; bake pizza for approximately 20 minutes.

  • Whisk 1 1/3 cups warm water (105 degrees F) and the sugar in a bowl; sprinkle the yeast on top. Set aside until foamy, about 10 minutes. Stir in the olive oil.
  • Whisk the flour and salt in a large bowl. Make a well in the center of the flour and pour in the yeast mixture. Gradually stir with a wooden spoon to make a rough dough.
  • Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes, dusting with more flour if necessary. Form into 2 balls. Brush 2 large bowls with olive oil, add a ball of dough to each and turn to coat with the oil. 20 g flax seed meal
62 1/2 ml water
50 g rolled oats (gluten-free optional)
1 teaspoon dried rosemary
1/4 teaspoon garlic powder

1 tablespoon olive oil
20 g garlic, finely chopped
400 g crushed tomatoes
1 teaspoon red pepper flakes
2 tablespoons balsamic vinegar
1 teaspoon maple syrup
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Make the Pizza Crust.
  • Line a baking sheet with parchment paper.
  • Whisk together flax meal and water in a bowl. Leave for 5 minutes.
  • Steam cauliflower until fall-apart tender. Let it cool then squeeze out as much of the moisture through a fine cheesecloth.
  • Grind rolled oats, dried rosemary, garlic powder, and salt in a food processor to a flour-like texture.
  • Combine the pressed cauliflower and flax meal mixture. Stir well.
  • Stir in the oat mixture.
  • Form a ball and put it on top of the lined baking sheet.
  • Press it down to a circle. Lay a sheet of parchment paper on top and roll it flat to about ¼ inch thick using a rolling pin.
  • Bake for 15 minutes at 230C/450°F.
  • Make the Marinara Sauce.
  • Sautee garlic in olive oil.
  • Add all remaining ingredients and simmer for 10 minutes.
  • Puree in a blender.

  • Sprinkle yeast in hot water, add a pinch of sugar.
  • Let stand for 5 minutes.

3 cups all-purpose flour
¼ teaspoon active dry yeast
1 ¼ teaspoons salt

1 ½ cups warm water (100 degrees F or 38 degrees C)

Steps:

  • Stir whole wheat flour, all-purpose flour, yeast, salt, sugar, olive oil, and warm water with a spatula until formed into a sticky ball of dough that pulls away from sides of a large bowl, about 3-4 minutes.
  • Cover the bowl with a light cloth or plastic wrap and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) for 18 hours, until doubled in size.
  • Preheat the oven to 550 degrees F (280 degrees C). Sprinkle a baking sheet with cornmeal.
  • Turn the dough onto a lightly floured surface and sprinkle with more flour. Form the dough into a rectangle, and cut it into four equal parts. Shape each piece into a ball, stretching and tucking the dough to create a smooth surface, adding more flour if needed. Cover the dough balls with a towel and let rest for 15 minutes.
  • To shape the dough, sprinkle the surface with flour and lightly pat flat. Use a rolling pin to form a thin disk about 9 inches in diameter.
  • Transfer the formed crust to the prepared baking sheet and top as desired. Bake on the bottom rack for 4 minutes, move to the middle rack and bake for 5-6 minutes more minutes, until the bottom is crispy and the top is lightly browned. Move to cooling rack to cool slightly before serving.

The trouble with most homemade pizza dough recipes is that they're sort of a pain. You have to plan ahead. Knead the dough. Let it rise. Clean up after it. This might be the pizza dough recipe that finally persuades you it's worth the effort - what little effort is required. With the help of two allies in the kitchen - your food processor and your freezer - now homemade pizza dough is nearly as simple as taking a chicken breast out of the freezer to thaw on your way out the door in the morning.

2 3/4 cups/390 grams bread flour
2 1/2 teaspoons/7 grams active dry yeast (1 packet)
2 teaspoons sea salt
1/4 cup extra-virgin olive oil
1 cup warm water
2 or 3 tablespoons medium or coarse cornmeal

Steps:

  • Put the flour, yeast and salt in a food processor. With the machine running, pour the oil through the feed tube, then add the water in a slow, steady stream. Continue to process for 2 to 3 minutes (the dough should form a rough ball and ride around in the processor). The finished dough should be soft, slightly sticky and elastic. If too dry, add a bit more water; if too wet, a tablespoon or so more flour.
  • Lay a 12-inch-long piece of plastic wrap on a clean work surface. Work the dough into a rectangle on the plastic, about 8 inches long and 6 inches wide. Press your fingers into the top of the dough all over, making indentations as though it were a focaccia. Fold the left third of the dough over (as you would a letter) and repeat the indentations. Fold the right third over and make the indentations again. Cover the folded dough with plastic wrap and let rise for 20 minutes.
  • Cut the dough in half, form each piece into a neat ball, wrap tightly in plastic wrap and transfer to the freezer. The morning before you want to make pizza, transfer the dough to the refrigerator to thaw.
  • Bring the dough to room temperature, 15 to 20 minutes. Put a pizza stone in the oven and preheat to 550 degrees. (If you don't have a stone, oil a rimmed baking sheet and set aside.) Dust a peel or the greased baking sheet generously with cornmeal. Working with the dough in your hands (not flat on a work surface), gently begin to stretch the dough into a circular shape, pressing your fist into the center of the dough and pulling at the edges with your other hand. With both hands, stretch the dough, being careful not to tear it. Working in a circular motion, pull the thicker edges of the dough outward, letting gravity help you. Continue to stretch the dough until it's relatively even in thickness (the edges will be thicker) and you have the size you want. Carefully lay it on the peel or baking sheet.
  • Top the pizza as desired and either slide it off the peel and onto your heated stone, or place the baking sheet into the oven. Cook the pizza for 6 to 10 minutes or until the crust is golden and the cheese is bubbling.

Number Of Ingredients 5

3 1/2 TO 4 c flour
1/2 c water or half water and half flat beer
1 pkg avtive dry yeast
1/2 tsp salt
2 Tbsp olive oil

Steps:

  • 1. Heat water to 115 degrees. Dissolve yeast in 1/4 cup of the warm water. Set aside for 5 minutes.
  • 2. In a large bowl, Combine 2 cups flour, salt, olive oil and remaining water to make a soft dough ( or use 3/4 cup water plus 3/4cup flat beer for extra flavor) Stir in dissolved yeast plus enough remaining flour to make a stiff dough.
  • 3. Turn onto floured board,kneed until all remaining flour is absorbed and dough is smooth.
  • 4. Place in a greased bowl, turning to grease top of dough.
  • 5. Let rise until doubled ( about 4 minutes ). When pressed down with two fingers 1/4 inch deep, the impression should remain if they spring back dough has not risen enough, Let rise longer.
  • 6. Punch down,Divide in half and form into 2 12 inch balls. Rolling out to make two pizza's.
  • 7. Top with your favorite pizza toppings and bake at 325 degrees until bubbly
  • 8. TIP: Dough will be easier to handle if you coat your hands with olive oil.
