S.O.S. also known as Creamy Hamburger Gravy is an old-school meal. This is a classic, simple and tasty meal that is reminiscent of military cooking!

1 pound ground beef
2 cups milk, (2% or higher)
4 Tablespoons salted butter
4 Tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
12 slices bread, (toasted)

Steps:

  • In a medium sauce pan over medium high heat, brown the ground beef. Season with a little salt and pepper. Drain excess grease and set aside.
  • Melt butter in the same sauce pan. Add flour and whisk until butter/flour mixture is bubbly.
  • Add milk, salt, and pepper. Whisk continuously until thick and bubbly.
  • Add cooked ground beef back in and stir.
  • Taste and adjust seasoning as needed (I usually like a bit more pepper). If necessary, add a little more milk until it reaches your desired consistency.
  • Serve over toast.

1 cube beef bouillon
¾ teaspoon salt
1 pinch ground black pepper
2 ¼ cups milk
¼ teaspoon Worcestershire sauce

Steps:

  • Brown beef in a large skillet over medium high heat. Stir in flour, bouillon, salt and pepper. Saute all together for about 5 minutes or until flour is absorbed. Gradually stir in milk and Worcestershire sauce. Bring all to a simmer, stirring constantly. Cook until thickened, about 5 to 10 minutes. Serve hot!

3 pounds ground beef
1/2 pound butter
2 cups all-purpose flour
1 tablespoon chicken base paste
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon granulated garlic
1/2 gallon 2-percent milk
2 tablespoons freshly ground black pepper
1 loaf white bread, sliced
Home Fries, recipe follows
Fruit, for serving
3 pounds potatoes, peeled and thinly sliced
3/4 tablespoon cooking oil
3 green bell peppers, seeded and diced
2 white onions, diced

Steps:

  • Brown the ground beef in a skillet over medium heat and set aside.
  • Melt the butter in a saucepan over low heat, being careful not to burn it. Slowly whisk in the flour to make a roux. You are looking for a thick consistency. Add the chicken base, seasoned salt and garlic. Slowly whisk in the milk. Turn the heat to high and bring to a boil. Let it boil for 2 to 3 minutes and then lower the heat to medium, whisking periodically until the mixture gets thick. Whisk in the black pepper and browned beef.
  • Toast the white bread and put the slices on serving plates. Ladle the SOS over the top of the toast. Serve with home fries and a piece of fruit.
  • Put the potatoes in a large skillet with cooking oil and cook for 10 minutes. Add the bell peppers and onions, and continue cooking until golden brown.

1 pound lean ground beef
1/4 cup all-purpose flour
2 cups milk
1 1/2 teaspoons salt
1/4 teaspoon pepper
4 white bread slices, toasted and cut in half diagonally
Butter, to top

Steps:

  • Saute the beef in a large skillet over medium heat, breaking it up with a wooden spoon and cooking until it is no longer pink, 12 to 15 minutes. Drain off the excess fat and sprinkle the meat with the flour. Stir and cook the beef and flour over medium heat until the flour has completely coated the beef and cooked slightly. Stir in the milk and continue to cook until the mixture becomes smooth and thickens, about 8 minutes. Add the salt and pepper. Serve over toast triangles. Top with a pat of butter.

I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

I loved it when Mom used to make this for us! I have no idea if she originally made it for Dad, who had been in the army, or if she just liked it because it tasted good and was a budget stretcher. A traditional favorite, good ol' SOS. Note: the title of this recipe specifies that it is made ground beef, rather than chipped beef; "authentic" SOS is generally made with chipped beef, however many folks also refer to the ground beef version by the same name.

1 lb lean ground beef
1/4 cup chopped onion
1/4 cup flour
1 teaspoon beef bouillon powder
3/4 teaspoon salt, to taste
fresh ground black pepper, to taste
1/4 teaspoon garlic powder or 1/4 teaspoon granulated garlic
1/4 teaspoon onion powder (optional) or 1/4 teaspoon granulated onion (optional)
cayenne powder, to taste
1/2 teaspoon Worcestershire sauce
2 1/4 cups milk

Steps:

  • In a large skillet over medium heat, brown the ground beef and onion.
  • Stir in the flour, granulated bouillon, salt, pepper, and garlic and onion powders (and cayenne, if using).
  • Saute all together until flour is absorbed, about 5 minutes.
  • Gradually stir in the Worcestershire sauce and milk.
  • Bring it all to a simmer, stirring, and cook until thickened, about 5 to 10 minutes.
  • Serve over toast, biscuits, noodles, rice, or potatoes.
  • Note: when I'm needing to avoid bread or noodles, I'll sometimes make a bunch of sauteed mushrooms and eat this over them, or sometimes with tofu. Delicious!

This is a recipe is soooooo yummy!!! It is traditionally served over toast (S.O.S. is s**t on a shingle, toast being the shingle) but it can be served over biscuits, baked potatoes, rice or whatever you like. I like to use a cast iron skillet.

4 tablespoons flour
1 quart milk (depending how thick you like it)
fresh ground pepper (to taste)
1/2-3/4 lb dried beef

Steps:

  • Heat large skillet over Medium heat.
  • Add butter and melt till foamy.
  • Remove pan from heat and whisk in flour and continue stirring until no lumps are left.
  • Return to heat and continue stirring about 5 minutes to remove raw flour taste.
  • Slowly pour milk in while whisking.
  • About a quart will do depending on how thick you like it.
  • Continue stirring over heat until desired thickness.
  • Add dried beef and heat through, Add pepper and serve HOT over Toast.

FEIJOADA - THE REAL ONE

This recipe is the real Brazilian Feijoada. It is like my mother does it, but she spends at least 8 hours cooking it (The secret she doesn't tell me). It can have some differences in other places of Brazil (this is the Southern style). You can keep the fat if you want it more 'creamy'. Some like it on the next day (keep on the refrigerator, of course). The perfect drink is Caipirinha, made with 'cachaca', smashed lemons and sugar, cold. You can drink beer, also. Be sure to have a place to rest after the Feijoada. You'll need it... :))

1/2 lb portuguese smoked sausage
1/2 lb of other smoked sausage (I use a sausage called, in portuguese, 'paio')
1/2 lb smoked pork ribs
1/2 lb salted pork ears
1/2 lb salted pork tail
1/2 lb lean bacon, in one piece,rind removed
4 ounces smoked pork tongue (optional)
1/2 lb jerked beef
1 pork trotter, blanched and scraped,if necessary
1/2 lb pork shoulder
4 quarts water
4 1/2 cups black beans, picked over,soaked overnight,drained
2 tablespoons oil
2 medium onions, finely chopped
2 cloves garlic, minced
3 bay leaves
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Soak the smoked and salted meats in a large pan overnight.
  • The next morning, drain, rinse, and soak again until ready to cook.
  • In a large heavy stock pot, heat the oil over medium-low heat.
  • Add the onions and cook, until they are softened and translucent.
  • Add the garlic and cook for 3 minutes more, until the aroma is released.
  • Tie the bay leaves, and add it to the pan, along with the dried soaked meats, fresh meats, and the water.
  • Bring slowly to a boil over medium heat, then reduce the heat and skim the fats and scum from the top.
  • Cook for 1 hour, then add the beans, return to a simmer, and again skim any scum from the top.
  • Simmer for another hour.
  • As each piece of meat becomes forktender, remove it.
  • Place the cooked meats on a platter, cover with aluminum foil, and keep warm in a low oven.
  • Remove all the meat and skin from the pigs trotter and dice it.
  • Discard the bone and add the meat to the beans.
  • Cut the jerked beef into half a inch dice and also return it to the beans.
  • Continue cooking the beans for 20 minutes more, or until tender.
  • Remove any fat or gristle from the remaining cuts of meat, then cube or slice it into bitesized pieces.
  • Arrange the sliced sausages, pork pieces and bacon on one side of a large heated platter and place the beans on the other side.
  • Serve hot, accompanied by stewed kale, cooked white rice, fried pork lard and orange segments.

After being wounded in Italy in 1944, my grandfather returned home and improvised a dish he was often served in the military. The Army called it "Chipped Beef on Toast". The soldiers called it Something (I can't mention here) On a Shingle, and in classic military tradition, that name was reduced to SOS. My grandfather taught this recipe to my dad, who, in turn, also taught it to my mother and me. My mother, who is offended by the idea of having the first "S" of SOS on her table, calls it Creamed Beef on Toast. All measures are approximate. Because of this, the recipe multiplies well. Heck, you could make enough to feed an army. ;-)

3/4 cup flour
1 medium onion, medium dice
1 teaspoon minced garlic
1 1/2 cups milk, any grade you like but the richer the milk, the richer the gravy
salt & pepper (to taste)
dry toast

Steps:

  • Combine ground beef, onion and garlic on a large skillet or pot, and brown the beef.
  • Once the beef is browned and your onions clear, add the flour. There are two important things to note here - (1) Do not drain the beef (2) Add enough flour to completely absorb all the liquid in the pan.
  • Once all fluid is absorbed by the flour and you have a nice roux, add your milk. Again, remember that the measures are approximate. So, you want to add about twice as much milk as flour.
  • *Do not be afraid of adding too much milk. If you do, you will just have to cook it for longer in the next step, but the flavor will reward you for your efforts.
  • Season with salt and pepper and bring to a boil. Reduce heat and slowly cook away the fluid, stirring often, until you have a nice thick milk gravy.
  • Spoon generous amounts over dry toast (like an open-faced sandwich) and enjoy.
  • We never have it with a salad or veggies, but they would go well this dish.
