"I lightened up this recipe i found on the back of a pasta box many years ago," writes Pat Morris, Marlton, New Jersey. "it's become a staple at our home and for family gatherings."

1-1/4 cups uncooked tricolor spiral pasta
1/4 cup reduced-sodium chicken broth or vegetable broth
3 tablespoons red wine vinegar
1 tablespoon canola oil
1 garlic clove, minced
1 teaspoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
2 cups broccoli florets
1 cup halved cherry tomatoes
1 large sweet red pepper, julienned
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; rinse under cold water. Drain. In a large bowl, whisk together the broth, vinegar, oil, garlic, sugar, basil and salt. Add pasta, broccoli, tomatoes, pepper and Parmesan and toss to coat.

12 ½ ounces chopped cooked white-meat chicken
1 cup mayonnaise
1 (8 ounce) can pineapple tidbits in juice, drained, juice reserved
½ cup chopped cilantro
¼ cup finely chopped red onion
1 teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until cool; drain.
  • Mix macaroni, chicken, mayonnaise, pineapple with about half the reserved juice, cilantro, red onion, and salt together in a large bowl.
  • Cover bowl with plastic wrap and refrigerate until chilled, at least 15 minutes.

Now my friends and family can't get enough of it! I recommend making it a day ahead and chilling it overnight to really develop the flavors.

1 (16 ounce) package small seashell pasta
1 cup mayonnaise
¼ cup distilled white vinegar
⅔ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large Vidalia or sweet onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
¼ cup grated carrots
1 pound diced cooked ham

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook until al dente, 8 to 10 minutes. Drain pasta, but do not rinse. Let stand 5 minutes.
  • To make the dressing, combine the mayonnaise, vinegar, sugar, mustard, salt, and pepper in a bowl. Set aside.
  • Combine the onion, celery, bell pepper, carrots, and ham in a large bowl. Stir in the dressing. Add the pasta and toss gently to blend all ingredients. Chill at least 4 hours before serving.

4 c cooked macaroni, drained and cooled
2 Tbsp onion, finely diced
1/2 c radishes, sliced
1 c celery, sliced
1/2 c mayonnaise
1 1/2-2 Tbsp spicy brown mustard
1 1/2-2 tsp prepared horseradish
salt and pepper to taste

Steps:

  • 1. Combine macaroni, onion, radishes and celery in a large bowl.
  • 2. In a small bowl combine mayonnaise, mustard, horseradish, salt and pepper. Whisk until well blended and smooth.
  • 3. Pour over macaroni mixture and toss. Chill.
  • 4. Note: If you want more of a "kick", add a little finely minced jalapeno.

  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions, usually 7-10 minutes. Then drain and rinse with cold water.
  • In a medium bowl mix the mayonnaise, apple cider vinegar, sugar, hot sauce, garlic, 1 teaspoon salt, and 1/2 teaspoon ground pepper.
  • Pour the macaroni in a large bowl. Pour the dressing over the top. Then add the chopped roasted red peppers, kale, bacon, pickle relish, and scallions.

1 cup tony packos sweet hots pickle juice
2 tablespoons sweet pickle relish
1 cup cubed sharp cheddar cheese (small cubes)

  • Cook macaroni and drain.
  • Put macaroni in a bowl and pour pickle juice over it while it is still hot.

A spicy Cajun twist on classic macaroni salad, this Creole pasta salad is perfect for summer BBQ's and potlucks.

1 pound elbow macaroni
1 tablespoon olive oil
½ sweet onion, minced (like Vidalia)
4 ribs celery, small dice
2 hard boiled eggs, small dice
2 teaspoons Cajun seasoning (preferably no salt blend)
1 teaspoon smoked paprika
1 teaspoon freshly, cracked black pepper
½ teaspoon cayenne pepper, OPTIONAL (if you want a little more heat!)
1½ cups good quality mayonnaise (I like Duke's Mayo for this, it's a Southern thing!)
3 tablespoons Creole mustard (can use any whole grain mustard, or yellow mustard)
3 tablespoons red wine vinegar
½ lemon, juiced
1 teaspoon hot sauce (preferably Louisiana-style like Crystal or Tabasco)
Kosher salt and freshly, cracked black pepper
Chopped fresh parsley, sliced hard boiled egg, for garnish. (Totally optional but it looks pretty!)

Steps:

  • Bring a pot of water to boil and season generously with salt. Cook macaroni according to package instructions. Drain, rinse with cold water, repeat and transfer to large bowl. Toss with olive oil and set aside.
  • Meanwhile, combine remaining ingredients in another bowl. Use a whisk to combine all remaining ingredients except celery, onion and egg. Add 2 teaspoons salt and 2 tablespoons of water to start, up to ¼ cup water. When combined, stir in celery, onion and egg. The sauce should be on the thinner side, not too thick.
  • Taste sauce for seasoning and adjust salt, pepper and hot sauce to taste. Add to cooked elbows and toss to combine. Serve immediately with fresh parsley and/or hard boiled egg slices, or refrigerate until serving, adding a little water to loosen up and make shiny again if needed.

Steps:

  • Preheat oven to 375 degrees.
  • Toss buns with canola oil and sprinkle with garlic salt.
