Steps:
- Sweat the onions and corn in butter over low heat with lid on. After onions are translucent, add chicken stock. Bring to a boil and simmer for 20 minutes. Season with salt and pepper. Puree in a blender and put through a fine sieve. Heat and add 1 cup of cream at the last minute before serving.

- Place broth in a large pot and bring to a boil. Add shrimp, ham, water, chestnuts, and corn. Reduce heat to medium and simmer, stirring frequently. Add cornstarch solution and cook, stirring, until soup boils and thickens slightly. Turn off heat. Add egg whites, stirring until they form long threads.
- Stir in green onion, sesame oil, pepper and salt, to taste.
SOPA DE AJO (GARLIC SOUP)

- Cut the white bread into cubes. Heat the olive oil in a saucepan and fry the bread cubes in it until golden brown. Add the garlic and let it color a little. Season with the paprika powders and salt and pour on the meat stock. Cover and leave to simmer for about 15 minutes. Fill 4 earthenware bowls with soup. Carefully slip 1 egg into each bowl and leave to cook in a preheated oven at about 390 degree F for around 10 minutes. Serve the soup very hot.
SPICY CORN SOUP
Steps:
- Prepare the corn by cutting the kernels from the cob. You should have approximately 3 cups of corn kernels from 4 cobs of corn. Save the corn cobs and set aside. The cobs will add additional corn flavor to the soup. In a medium-sized saucepan over medium-high heat, add the olive oil, then the onions. Saute for 3 to 4 minutes until they are translucent, stirring occasionally. Add the garlic and chipotle chili powder and saute for 1 more minute. Add the corn kernels and saute for another 3 minutes, stirring constantly. Add the salt, black pepper, and chicken stock and bring to a boil. (If you have cut your corn fresh from the cob, place the reserved cobs into the saucepan at this time). Once the mixture has boiled, reduce the heat and simmer for 30 minutes. Stir occasionally to prevent the corn kernels from burning or sticking to the bottom of the pan. While the corn soup is simmering, roast the red bell pepper. Char the skin of the pepper until it is black over an open flame or on a grill. When the skin is blistered and blackened, remove the pepper from the flame and place in a paper or plastic bag and seal. Let steam for 15 minutes. When the pepper is cool enough to handle, peel, seed, and dice it.
- Place the diced bell pepper into a blender with 1/2 cup of the heavy cream and blend thoroughly for 1 minute. Pour through a fine sieve and discard the contents of the sieve. Pour the red bell pepper sauce into a plastic squirt bottle and set aside. Remove the corn soup mixture from the heat, discard the corn cobs and set aside. Place the corn soup mixture in a blender and puree for 3 minutes. Pour the mixture through a sieve and discard the contents of the sieve. Return the mixture to a saucepan, add the remaining 1 cup of heavy cream, and heat, over medium heat for 15 minutes, stirring occasionally to prevent burning. Pour into bowls, garnish with some of the red pepper sauce and serve immediately.

Steps:
- Combine the corn kernals and the onion in a food processor and process to a puree. Heat the butter in a saucepan, add the puree and cook over moderate heat, stirring, for 5 minutes.
- Stir in the chicken stock and season with salt if necessary.
- Simmer, over low heat, for 10 minutes longer.
- Stir in the sour cream and simmer for a few minutes longer.
- When ready to serve, strain the soup. Have ready 4 soup bowls, each with a tablespoon of cheese and about 2 teaspoons chili, and pour the soup which should be the consistency of heavy cream.

- Combine the corn, onion, garlic, and 1 cup of the stock; process in batches in a food processor until smooth.
- In a big soup pot over med heat; melt the butter.
- Add in corn mixture, cumin, salt, and white pepper.
- Simmer, covered, for 5 minutes.
- Add in buttermilk and 1 1/2 cups more stock; bring to a boil.
- Add in chiles, Tabasco, chicken, tomato, and cilantro.
- Lower heat to med-low; simmer, uncovered, for 30 minutes.
- Add in remaining 1/2 cup stock if soup is too thick.
- Serve in individual bowls topped with a few broken tortilla pieces; pass around the additional toppings.
- Note: to crisp corn tortillas: preheat oven to 400°; brush or lightly spray both sides of tortillas with vegetable oil; stack 4 tortillas together; with a sharp knife, cut into 1/2-inch strips; place strips in a single layer on a baking sheet and bake for 3-4 minutes; sprinkle with salt or other seasonings; tortillas can also be fried in oil or grilled on a grill or griddle until crisp.

Steps:
- Combine corn and chicken stock in blender or food processor and puree.
- In a 3 quart saucepan combine butter and corn mixture and simmer slowly 5 minutes, stirring to keep corn from sticking to bottom of pan.
- Add milk, garlic, oregano,salt and pepper and bring to a boil.
- Reduce heat, add chilies and simmer 5 minutes.
- *May be frozen or refrigerated at this point.
- To serve:.
- If refrigerated, reheat soup slowly.
- Divide chicken and tomatoes among 6 bowls.
- Remove soup from heat, add cheese and stir until cheese is melted.
- Ladle into bowls,top with tortilla squares, and serve.
- Tortilla Squares:.
- Preheat oil to 375 degrees in electric skillet, deep fryer or large pan.
- Stack tortillas on cutting board and slice into 1/2 inch squares.
- Drop a handful at a time into oil and stir with wooden spoon until crisp and golden, about 3 minutes.
- Drain well on paper towels.
- These are good with soups and salads and may be stored in a covered container in a dry place for up to 6 weeks.

- In a medium pot, heat the oil over medium heat and sweat the onion for about 4 minutes, stirring occasionally. Add the garlic and cook for about 1 minute, stirring occasionally.
- Stir in the broth and increase the heat to medium-high. Add the potato chunks, 2 1/4 cups of the corn kernels, salt and pepper; stir.
- Let cook for about 12 minutes or until potato is fork tender. Blend soup with the yogurt or heavy cream in a blender until creamy. Adjust the seasonings if necessary.
- Add the remaining 1 cup of corn kernels and serve while soup is warm. It can be garnished on top with chunks of cooked sausage and chopped fresh chives.
